★ INGREDIENTS AND RECIPE:
1 lb (500 g) beef round
FOR THE BROTH:
Celery
Carrots
Onions
Salt to taste
FOR THE MAYONNAISE:
7 oz (200 g) sunflower oil
1 egg
Salt to taste
1/2 lemons
FOR THE SAUCE:
3 and ½ oz (100 g) tuna
Celery to taste
Carrot to taste
½ pz (10/15 g) capers
3/4 anchovy fillets
1 hard-boiled egg
Prepare the vegetable stock. Add celery, carrots, onions, and a little salt, and bring to a boil. While the broth is cooking, clean the meat, removing the sinews and excess fat.
Once the broth is ready, add the meat to the boiling water and not vice versa. You can also use a probe to measure the temperature of the beef. Cook for 35 to 40 minutes per 500g of meat. Once cooked, let the meat cool down. Set aside a stalk of celery and carrot that will be used for the sauce. In the meantime, boil an egg for 10 minutes. To make the mayonnaise, use a tall, narrow bowl and add the sunflower oil, a whole egg, a little salt, and a little lemon juice. Blend to get mayonnaise ready in less than a minute. Prepare the sauce: add tuna, celery, carrot, capers, anchovies, and the hard-boiled egg. Blend everything together and finally add the mayonnaise to the mixture. Add salt if needed. Once the meat has cooled, cut it into slices and lay it on the plate. Cover it with the tuna sauce and decorate with a caper bloom.
