    Hi and welcome back to The Kneady Homesteader channel. There is no "right" or "wrong" way to meal plan IF it works for you! If it works, success! If it isn't working, then it's time to revamp it. Today, I am sharing how I meal plan, what has worked for me, my family and my budget for years! As a busy Mom of 6 kiddos, who at one time was on food assistance and WIC, food waste is a big deal for me. My Dad taught me long ago how to stretch ingredients to feed many on very little. If you have any questions about how I meal plan, leave them down below for me and I will try my very best to answer them for you.

    I had a stroke but it happened in the back of my head..so I have affacia..my knees are going..and my teeth issues are similar. I understand people are not seeing the whole issues with how things are really progressing. Heather your a breath of fresh air and that's what we love about you. You don't have to apologize and us moms totally understand what you are talking about meals also. Hugs 🫂 to you sweet lady.

      I appreciate that! I can't imagine watching someone I dont enjoy. haha what a waste of precious time...... time you could be spending with people you love. Life is short.

    Heather, I am so glad you are uniquely you & not ashamed to be you. Your children are a testament of you love, care & character that is uniquely you. You have transfused them with such joy & happiness in spite of all the healing & injuries you have all suffered.
    PLEASE, continue to be true to you.
    When you spoke of not remembering where the cut off valve was it peaked me that I should make a simple diagram of these things. I'm soon to be 73 & in an emergency it will help me to quickly remember where to get emergency supplies & tools. I'll keep it posted on my frig. Maybe someone can help you do the same.

      @@TheKneadyHomesteader you had reminded me when I was the fire safety officer at the prison. I had to design emergency exit routes, know where all the fire extinguishers were located, where all the dangerous chemicals were in each department & lists of emergency phone numbers. I'm thinking a lot of this could be useful for my frig list.

    Real life hits! Still praying for your recovery. I could use some prayers..... I have blood clots in my lungs following my knee surgery. I would love prayers that this resolves without detrimental effects long standing. Still alive and I TRUTHFULLY have never been so THANKFUL to wake up every morning as this could have been devastating. Please and thank you.

    Heather, I would love to see "Meal Planning Monday" come back. I remember watching you meal plan way back and you would write down what you had on hand and what needed to be used up and make your meal plan, back when you would grab an envelope or whatever you had to write on and just start writing stuff down and putting them in place and carrying over and using leftovers. You were awesome. Thanks so much for sharing!! Take care.

    Oh heather, what VALUABLE video!! You meal plan like I do, stretching food and reinventing leftovers! With the high cost of groceries and the expected increase over this summer, everyone should be stretching those dollars and the food itself. I a casserole calls for a pound of hamburger and I use a half, no one even notices that there's less meat in the casserole. This video has some of the most important takeaways that you've ever done and I thank you for that. So many people don't know how to budget, stretch the food and adapt recipes to make what you have work. Thank you, thank you!!! God bless you all!

    Good morning Heather 🌻 I'm going through chemo and live alone. So I could eat what I want, but like you I don't like wasting. I do look for the sales and try to have easy foods to cook. I was gifted an air fryer and it's been a blessing for me. I think I can work a little harder on my budget though. I have an All American canner and love it, but it's the large one and it's heavy and so big. I probably would can more with a smaller canner, as my energy and strength are limited..     Heather thank you so much for having the courage to share your planning again! I can tell you, I believe it is more necessary today than ever to talk about what and how to do things when there is an illness, injury etc. With you as the head of your kitchen, there is a need to have some back up plans and ideas and to work when you have energy and what do do when you can not move ahead. Never have I seen such a time when these kinds of details need to be shared. So, thank you for sharing your gold nuggets with all of us!
    Additionally because working in the kitchen can be tedious and labor intensive, it is helpful to find ways of coping with just getting things done. I have picked up a few tips that I continue to go back to that are stress busters and I am so grateful for that will bring me back to a clean kitchen so that when I need to start again, I don't feel overwhelmed.

    Ooooo.... that meal looks spectacular!!!! As for the 'WHAT did I forget this time??', I have to keep a notebook of important things like that. I carry a small pocket sized notebook with me, and things are jotted down in it as they pop into my tissue paper memory. That keeps the notes written down in no particular order. All of that goes into a central book that stays at home and the book is in the same place with a pen hooked to the cover . (It's kept close to my coffee maker, where important things are kept....) So far, so good. It's so good to see that happy face back where it belongs. Thank you for being a blessing and a source of joy. You are a treasure!

    I was struck by lightning in 2001. The shock to my brain was life altering. So, I understand what Heather is saying about people not seeing a brain injury, and/or the impact it has on one’s daily life.

    Oh no I hate your bathroom flooded. Praying for a speedy recovery. I remember your meal planning Mondays. IToday people are so critical. It shouldn't be like there. Stretching food is a great thing to learn. I remember too when you had Friday pizza and you used what leftovers you had as toppings. I thought that was brilliant. Yes hotdogs are ridiculous in price.     You are so sweet. I think of you so often because I lost my darling hubby in May (unexpectedly). I’m so lonesome and at odds on whether the Lord wants me to sell my little house or anything to do with His will. Love you dearly and pray for you and your children. You can teach me so much as far as saving money.

      I want to hug you. You will notice I misspeak a LOT! I use the wrong words..... my brain misfires.... I just give it to God to carry for me..... learning to love the new me with all my new normals. I am alive and with my babies, thats what matters!

    Literally just did the same with chicken breast last night. 2 breast 6 ppl. Mostly young kids. Added tortellini and homemade Alfredo sauce. Wah-la. And there was a bunch left over 😃

    I completely understand about the TBI's. I have a close friend who is in her 80's that suffers from one. She got it many many years ago when her horse kicked her in the head nearly killing her. And my cousin who lives up north in Whittemore was on her way to school when she was a teenager, it was snowing and her side of the road was the only side plowed, The oncoming car in the wrong lane hit her head on, combined speed was over 100 MPH. She was not expected to survive. She is now 46 and doing the best she can.
    As far as meal planning, one thing that has really truly saved me is preparing my ground beef and ground turkey ahead and freezing it. We are all on different schedules and everyone has to eat different foods due to dietary issues. My 16 year uses it almost everyday combined with spinach and whatever else he feels like eating that day. I do not season the meat this way we can season it however when we reheat it.     My meal plan is monthly. I have been doing that since 2013. Monday’s are Italian, Tuesday’s leftovers, Wednesday’s seafood, Thursday’s beef, Friday’s pizza, Saturday’s pork and Sunday’s chicken. Sundays are family night with my grown children and grandchildren. I use to go to the grocery store once a month but now that the kids are gone I go twice a month. I have dairy and beef all the time as we are dairy farmers. I have four freezers and buy when things are on sale such as chicken, bratz and such. I can and freeze dry also. My menu does change with the seasons. More grilling in the summer and more crockpot in the winter.

    I love your smiling and joking around personality in light of everything that goes on. It's great to see you again. I reverse meal plan. i make a list of what we have Had, vs what we have coming up next. I find that helps to not get bored with same old same old dinners. I shop from my pantry and only restock on deep discounts or sales. Stretch it as far as you can until it's gone,...lol. Use it up, don't waste it. Find new dinners and incorporate the left-overs, like the chili on baked potatoes. great tip. Love you much and sending love and prayers your way.

    Heather if your interested I'd love to see how you make other dishes in your casserole crock pot. Love mine, so handy when working in the garden etc. I made your lasagna, tasty! You have the freedom to live your life and meal plan any way you choose. The mean spirited critical people need to focus on improving themselves.

    Thanks for this! I tend to cook by feelings, lol. This explains all my wasted food by the end of the week or two. What I feel like eating is fleeting and a few days later I don't feel like it anymore and I forget and move on to something else. Didn't realize I was doing that!!! LOL, time for a change!     Some people have got a lot of nerve judging you on your meal planning and the menu that you create for your family. Let me tell you, I had an elementary school teacher who taught us a valuable life lesson many, many years ago, and it has stuck with me all these years later. If you can't say anything nice, don't say anything at all! For all those people out there, they should mind their own beeswax. I, for one, love your channel. You are so inspirational to me, and I thank you for sharing your time and wisdom with us all.

    Heather pay no attention to the whiners. I plan the way you do. If I want carbs or whatever in my meal and they're on sale it makes no difference to me who approves or does not approve. I also shop the way you do - If it's not on sale it doesn't go in my buggy. With rampant inflation I have to stretch every penny. You are a joy to watch and learn from.

    I absolutely loved this video, and had a total light bulb moment. I've been looking for ways to cut down our grocery bill, and I have always been one of those meal planners who picks the meal, then buys the ingredients. Next week, I am adopting your approach. Buy what's on sale, then build off that. Would love to see more of these videos. Heather you are such a blessing! Hopefully people can keep their food judgement to themselves..

    I made beef stew the way you did yours but with my spin . It came out delicious and I understand the process. Chopping the meat in smaller cubes is the way to go for me . Thank you so much. Truly you are wonderful loving teacher. Gracias ❤

      sometimes just those little efforts end up being such huge blessings! For a long time when I was unable to cook a lot, everything was an easy, frozen or packaged meal.... it was so stressful to me. veggies that should have been tossed into stock, got tossed into compost. ugh. that was one of the hardest parts of my recovery, was surrendering control in all of that!

    I love how you meal plan, Heather, it's very practical and economical. So I guess everyone meal plans a little bit differently; as a single 60+ woman with mobility issues on these rainy days, this is how I meal plan:
    I cook 2-4 servings because if I'm going to be taking advantage of a good day on my feet and dirtying pots and pans, I might as well allow some days off in the following or future days.
    In anticipation of a rainy rest of the week, I semi-fried baby back ribs and sausage crumbles. I froze half of all that meat for future use and simmered the rest of the meat today in some spaghetti sauce and I made a quick delicious meal with leftovers. I too, shop the sales or not at all. Just keep being you, Heather, and never mind the naysayers. ❤ Stay blessed 🙏🏻

      I love how you preplan.... you know your body so well! I am still learning and adjusting, my brain still remembers my body prior to my injuries, so some days it's more hard emotionally than even physically. I am learning how to surrender..... but it's so hard. God bless you. Thank you for sharing that with me.

    Thank you for this video!!! I shop the same!!!! I have the store apps and check sales of stuff i use sometimes buy several. I buy my chicken, stew meat, hamburger, sausage on sale and can it. Most people that are around here dont. Its GREAT to know im not the only one. I love how you streach the leftovers. Make a new recipe or as i call it through together or dump cook.

    Shopping the sales and stretching the meat is the name of the game! I meal plan just like you. I do NOT like to waste. I have gotten pretty good at using any leftovers we have in another meal.

    Love how you shared that it is not so much the want but what do I have in the pantry and freezer to bring together a meal. And how do I stretch and make another meal from it, recreate, love it. And being thankful to have that food, so appreciate the no waste. Sometimes it is not the food groups on the plate but thankful to have food on that plate.

      thank GOD for Danny, he rushed home from the auto shop to find me ugly crying.... I felt so bad that I couldn't remember where the main shut off was..... I called my son and he told me so I was able to get it shut off but I thought for sure I caused huge damages..... he hugged me and rubbed my back and told me how good I did and I did all the right things. and he ate my mushy dinner noodles with zero complaints. and took some for his lunch today. hahahaha he is such an amazing man! there is a reason he was my bestie all those years ago. hahaha and he foxed it for $10! Erik helped him clean everything up, got fans and a dehumidifier going and they both told me I did great. I love my family so much. I am so blessed.

    Oh no! Our bathroom did the same thing a few months ago. What a mess! I'm so sorry you had to deal with it too.
    I understand when people can't see your injuries. I have fibromyalgia after a traumatic car accident. I have good days and bad days. On the outside I look just fine. Inside, some days are a real struggle.
    Thank you so much for sharing with us. Continued prayers for your healing. I pray for your family.
    I love meal planning and need to get back into it as it really saves me time and money.
    I too try to stretch meat with beans, or rice depending on what we are having. We also shredded chicken and it goes further. Thankful for my kitchen aid mixer that shreds chicken in seconds.

    Im so horrible at planning meals lol i have my 5 year old grandson now so I'm trying to get better, He isn't a real picky eater because i let him help in the garden so vegies are ok with him . He is like me and picks from the garden and eats. Lol of course for awhile it was a challenge because he was eating everything, even leaves from trees 😂 its cute so im so excited that he lives here with me and its time to start gardening again. I got all my canning things so in so excited to do this with him. I even have him his own space for whatever he wants to grow. Your channel has just been a blessing. Im not scared anymore. Sorry this is so long. Lol i could go on forever 😂

    I’ve been learning to only use little bits of the meats and fill in with the less expensive sides and things. . Finally got my husband on board since he’s been wanting to spend less on groceries lol

    No problem hun.I have had 2 bleeds on the brain,I feel you.
    So glad it was an easy fix,just be sure to use fans for drying up,so no mold.
    When I was a young woman, I made out a complete month of meal plans. I had four pages one for each week and breakfast, lunch, and dinner for every day. It made it so much easier to grocery shop because I could just check out my menus for the week and see oh yes I need 4 pounds of hamburger chicken, etc. etc. it made it so simple I involved my husband and my daughter in the meal planning asking them if they had anything that they just wanted on a particular time. They found it fun too to figure out what they might want on Tuesday afternoon. Lol, I should still do that, because I am totally at a loss of what to do for myself by myself.

How are you doing...... how long ago were your bleeds?     I meal plan by what I have on hand, what's on sale at Aldi, WalMart, Daily Deals and GFS. and THEN I plan by ingredients for a recipe. No more "one off" ingredients for a recipe I may or may not like.

      @@TheKneadyHomesteader Hooray for clean water! Believe it or not, this past Sunday we had two toilets plug up (didn't overflow - Thank You Jesus!) That hasn't happened in awhile!
      We've had the cold that everyone is getting go through our house (They've closed down Jenison school(s) and Coopersville HS was only half full last Friday.) Bleh! So we are still laying low. My poor house and refrigerator need some lovin' and cleanin'!!! lol!

    I just love watching your videos and am so Thankful to God you are able to be doing them again. I'm with you on the, "no leftovers " in the refrigerator thing. I'm raising grandchildren so I have to make things stretch too. Hotdogs in chili is very good also

    I’m interested in how you meal-plan and how it works for you and yours! I typically have meals in my head by what protein, vegetables and starch I feel like using. We may feel like having something else, I put my meats for the week, from the freezer to the the extra refrigerator that stays colder. That way we’re not bogged down and tied down to any specific day and the what or why. I won’t feel trapped or locked into a “list” of my own making in my kitchen for a specific meaI. And since it’s just the two of us now, it’s even easier on both of us. I,also, never buy anything not on sale! The only meals that are somewhat consistent every week is tacos or enchiladas (I use different meats and sometimes use the leftover roasted chicken), and roasted chicken. We hardly ever go out to eat and we never eat fast food. Thank you, Heather!

    I am so happy to hear that you are healing. Well! Don’t worry about not recording, or that it got burnt or anything of that nature my daughter was born with a TBI I understand the struggles of the short term, memory, loss and things of that nature as well!     I wish I had realized that method of meal planning when my kids were little and I was a homemaker. My food budget was under the USDA thrifty plan, but I could have saved even more. But better late than never.
