  • Iced Chocolate Tray Bake
    Ingredients - for the cake
    4 level TBSP cocoa powder
    4 TBSP hot water
    225g softened butter
    225g caster sugar
    275g self-raising flour
    2 level tsp baking powder
    4 large eggs
    1 TBSP milk
    For the icing
    4 TBSP apricot jam (I used 2 and it was enough)
    150g plain chocolate (39% cocoa solids)
    6 TBSP water
    350g sifted icing sugar
    1 tsp sunflower oil
    Chocolate chips (optional)
    Method
    1. Preheat oven to 180deg/Gas Mark 4. Grease a large tray bake and line the bottom with baking parchment
    2. Mix together the cocoa and hot water, and leave to cool. Put the remaining cake ingredients into the bowl and mix well. Pour in the chocolate mixture, and beat until well blended. Turn the mixture into the tray and level the top.
    3. Bake in the pre-heated oven for 35-40 mins (I actually took it out earlier because it was done after 30 mins) or when the cake springs back when touched and has started to shrink away from the sides. Leave to cool in the tin for 10 minutes and then transfer to a wire rack to cool down completely.
    4. To make the icing, warm the jam in a tiny saucepan or a bowl in the microwave, and brush over the cake
    5. Break the chocolate into pieces and melt gently in a saucepan (or microwave) with the water. When smooth and melted, mix in the oil and then leave to cool slightly before mixing into the icing sugar.
    6. Pour over the cake and smooth gently with a spatula or palette knife dipped in hot water. Decorate with chocolate shavings and chocolate chips.

    I love Mary Berrys' recipes, she is a legend, I made her lemon drizzle traybake a few weeks ago to take into work, always go down really well and I had sooo many comments from people on how good it was. I was looking for a chocolate traybake that I could decorate for Easter and take in.

    this looks so good but my hatred for marry berry is too strong
