I have successfully nailed this recipe with my husband and we're very happy with the results. I've even experimented with batches containing yeast in the dough, some steamed, some baked. They're all very tasty, but deep-fried is sadly the best. I was hoping very much that a slightly healthy alternative would be the favorite, but you very clearly know what you're doing.
This was the best time for youtube, we finally had a great representative of the eastern european community. With info and the best humor to boot. Thank you Boris, without you my life would've been much sadder
Every year I come back to this video, maybe even a few times a year, the music, the narration, the slight ASMR cooking noises, the loud mixing (but not so loud that you wake up cousin), it just always makes me happy
Anter Dogan I mean I had at least 5 shots on the side. the one shot divided by the 5 I made with it shouldn't get people too buzzed less you're using superly overproofed alcohol
The reciepe is good, just a few issues with the proportions: - Put less water in the dough, maybe 20 to 30% less, will yield better results - Put less salt in the stuffing, maybe 2 tsp instead of 3, or even less. You can make the dough with different flours, experiment with it, just be careful with the water (check bread reciepes with your flour and adjust accordingly vs normal flour) and the cooking (the colour won't be the same at the same cooking state). You can also try a MOAB (Mother Of All Burek) with two circular dough to make the monstrosity approximately the size of the pan. Less oil used, less dough, more meat. It becomes a meat and onion pie. You can make it in the oven also and serve it at a normal dinner with family and friends who dislike fast greasy food. I tried making more chiburek and freezing them once cooked (to make my kitchen smell like mcdonalds less often), I'll report on the success of this process once I unfreeze the first ones.
@@krisdenger8339 Sorry, completely forgot to tell you all. I tried: - microwave - oven - microwave then oven The results were: - good but crust was soft - crust was burned before unfreezing - crust was harder than with microwave only It works, it's good. It's not as good as fresh from the fryer but perfectly serviceable. I had best of luck unfreezing in the microwave then drying/cooking in the oven for 5 minutes at 200°C I think if you want to have them for lunch at work you can just put the freezed ones in your bag in the morning and eat them cold, no worries, microwave would be a plus, oven (once unfreezed) is the best but we rarely have that at work. All in all it's a success. Next step is freezing uncooked ones and deep fry them in case of emergencies (like 4 friends showing up uninvited), i'll report on that if I remember to do it.
I made these for myself following Boris’s instructions perfectly, eating the Cheburek was an amazing experience but as i finished consuming them i became very sad... because i realized there are no slavs within 100km distance :(
Idk why but the sound of a pot boiling and knife cutting in the middle of the night is so relaxing, no music, no one talking, just silence and you making something delicious
I actually ended up making these and had a few comments: - The ingredient list in the description missed garlic. - The dough is stickier than it looked in the video. If you're not used to working with dough, this can be confusing. Mine was too wet so I added perhaps too much flour after mixing everything... - The dough should be at least 3-5mm thick. If it's thicker it's kinda unpleasant to eat. If it's thinner, it breaks easily in the pan, which is bad. - Try to pack the stuffing firmly I only ended up using around half of mine. - Be careful not to leave the cheburek on one side too long. The insides puffed up a lot for me and combined with a slightly too thin dough, the top side of one of them popped. - These things are delicious. I'm thinking of adding cheese next time though...
bay leaf is not needed in chebureki trust me I eat these every 2 months, they are really tasty you should try it out sometimes, especially the inside of the dough which absorbed all the fat from the meat (and other stuff) mmm now I'm hungry XD
Recently, I made a batch of these following this exact recipe. Been 3 years since I last ate a cheburek and felt nostalgic. So I made a batch and, man, it tasted just like home. Thank you, Boris. Thank you so much.
In my country(Indonesia) we have something similar but filled with fried fish and its more cake-ish,but the thing that i think makes it similar is the shape and the fact that its called "panada"
Here in Mexico there's a regional version called "paste". Same idea, but baked instead of fried. And they're made either sweet or salty, depending on the filling
They're all dumplings. All the names we put on are variatons of mix vegetables and maybe meat, wraped around a flour disc, that can be fried, boiled, steamed or cooked in oven. Its truly a diverse world but in the end is all the same
I just made these today. I told my mom about them and she didnt know what they were so I mentioned Perogi(?) and she recognized it and loved it when she tried them! Thank you Boris for making these videos, I want to make all of these and show off the true slav cooking skill :D

I don't know if anyone comes here for this recipe anymore, but if anyone else out there has a gluten intolerance or Celiacs, my friends and I played with this recipe last night to make a gluten free version so I could keep enjoying this amazing dish. Maybe it'll help someone else too. My apologies, these ingredients may be harder to get than what Boris has in his videos. Modification for Chebureki for a Gluten Free version: 3 cups of gf flour 2 tbsp ground chia seeds (neat egg or whatever equivalent) 3 tbsp tapioca starch Pinch of salt 1 tbsp of sugar Whisk together and make a well 3 eggs 1 tbsp sunflower oil 1 cup water 2 shots vodka Mix well until dough begins to clump, then hand mix. Coat the counter in tapioca starch, NOT flour, and be generous. Same goes for the rolling pin. When rolling the dough, be mindful it will break easier, so don't roll too thin. Wash the inside of the dough with an egg wash to help strengthen it when folding over the dough to form the chebureki. Cook over medium-high heat and flip after 1-2 minutes.

I was having a lovely day, watched this video, and was in the mood to cook. Everything went fine until the frying stage... I poured a (un)healthy amount of oil, where it promptly caught on fire. Long story short, we now have five fire extinguishers spread around the house. I would like to say the Chebureki tasted good, but I was not in the mood for fresh charcoal. Great video though!
This is the first Boris video I watched, several years ago. I never could have known the immense rabbit hole it would lead me down, and I have only one thing to say: VADIM BLYAT
Hey, Boris! I just wanted to thank you for these amazing recipes. I’ve recently gone through a few of them, including simechki halva and your potato salad, but I have to say this chebureki has to be my favorite. Sadly, i didn’t have any onions, so I substituted them for red, yellow, and orange peppers with dried onion flakes and powdered garlic. Turned out awesome! Gave some to my mother and she won’t stop talking about my cooking now. LOL! Thanks for making cooking actually feel fun, Boris. Stay cheeki breeki my friend!
It may have sound pretty obvious, but it's okay to substitute something, at least while your'e not substituing kinda half of required engredients or some basic ones like flour :) Who knows, maybe you can even improve the original recipy.
Fun fact The dough recipe Boris uses can be used to make cheese pizza pastries cut them into 8 pieces roll each one into a circle add sauce and put in oven 250 degrees Celsius for 10 minute then add mozzarella and back in oven for 5 minutes then bam you got yourself pizza pastries, an average oven can make like 3-4 of these at one go It’s small and makes for a perfect breakfast That’s literally what I did after I had left over dough from the cheeburiks Was surprised by the results lol
I grew up in a polish house hold in America with a polish Grand mother(2 of them) life was good and filled with constant eating of varenyky (pierogi) slavic foods are the best because they all consist of butter (oils), onion, meat, and always bread

I too notice this. But since I already squat like western spy, there is no use trying to cover it up in my cooking. 2 teaspoon of salt is good enough, cyka.
ThomasDudes In the video Boris uses literal teaspoons for tea, which very in size and how much they can hold. I’ve seen big teaspoons, I’ve seen small teaspoons. But if you use exact measurements of tsp you will notice that it is much more then what you would get then by measuring salt from the small spoon in your drawer That or I’m Canadian and our measurements are just massive

ROFL!....oh how many times have i done that?! Lost Count!
The reciepe is good, just a few issues with the proportions:
- Put less water in the dough, maybe 20 to 30% less, will yield better results
- Put less salt in the stuffing, maybe 2 tsp instead of 3, or even less.
Comrade, we need answers! Blyat..
@@krisdenger8339 Sorry, completely forgot to tell you all.
I tried:
- microwave
- oven
- microwave then oven
The results were:
- good but crust was soft
- crust was burned before unfreezing
- crust was harder than with microwave only
It works, it's good. It's not as good as fresh from the fryer but perfectly serviceable.
I had best of luck unfreezing in the microwave then drying/cooking in the oven for 5 minutes at 200°C
I think if you want to have them for lunch at work you can just put the freezed ones in your bag in the morning and eat them cold, no worries, microwave would be a plus, oven (once unfreezed) is the best but we rarely have that at work.
All in all it's a success.
Next step is freezing uncooked ones and deep fry them in case of emergencies (like 4 friends showing up uninvited), i'll report on that if I remember to do it.

Idk why but the sound of a pot boiling and knife cutting in the middle of the night is so relaxing, no music, no one talking, just silence and you making something delicious
I actually ended up making these and had a few comments:
- The ingredient list in the description missed garlic.
Lucas Cooper if you listened in video it is one to two cloves

I don't know if anyone comes here for this recipe anymore, but if anyone else out there has a gluten intolerance or Celiacs, my friends and I played with this recipe last night to make a gluten free version so I could keep enjoying this amazing dish. Maybe it'll help someone else too. My apologies, these ingredients may be harder to get than what Boris has in his videos.
Modification for Chebureki for a Gluten Free version:
3 cups of gf flour
2 tbsp ground chia seeds (neat egg or whatever equivalent)
3 tbsp tapioca starch
Pinch of salt
1 tbsp of sugar
Whisk together and make a well
3 eggs
1 tbsp sunflower oil
1 cup water
2 shots vodka
Mix well until dough begins to clump, then hand mix.
