  • Hello 大家好!來到今集,我就繼續做家庭菜。不過,今次係做印度人嘅家庭菜。同我三年前做嘅「MASALA 咖喱雞」唔同,今次我係直接去餐廳,由我位巴基斯坦朋友,親自教我煮依味餸嘅正統做法。所以有部份好地道嘅食材,可以話聽都未聽過。而今次成個煮嘅方式,同所做出來嘅味道,同三年前嘅食譜比較,可以話係好唔同架。

    雞肉調味 CHICKEN MARINADE
    雞下髀750克 750g CHICKEN DRUMSTICK
    黃薑粉1茶匙 1 tsp TURMERIC POWDER
    紅椒粉1茶匙 1 tsp Paprika
    瑪莎拉綜合調味料1茶匙 1 tsp Garam Masala
    鹽1茶匙 1 tsp Salt
    純乳酪5湯匙 5 tbsps Yoghurt

    瑪莎拉醬 MASALA SAUCE
    蒜頭8辮 8 cloves of garlic
    薑片10克 10g of ginger slices
    蕃茄2個 2 Tomatoes
    青椒10克 10g Green Peppers
    紫洋蔥1個 1 Purple Onion
    印度酥油140克 140g Ghee
    香葉兩片 2 Bay leaves
    鹽1茶匙 1 tsp salt
    黃薑粉2湯匙 2 tbsps Turmeric Powder
    紅椒粉2湯匙 2 tbsps Paprika
    芫茜粉1茶匙 1 tsp Coriander Powder
    孜然粉2茶匙 2 tsps Cumin Powder
    瑪莎拉綜合香料1茶匙 1 tsp Garam Masala
    胡蘆巴葉半茶匙 1/2 tsp Fenugreek Leaves
    黑椒粉半茶匙 1/2 tsp Black Pepper
    芫茜碎適量 Dash of Chopped Coriander

    Very traditional, I am sure that tastes amazing, next time you can try adding some cashew paste / double cream / coconut milk, it will complete transform the dish

    I never thought I would see Chicken Masala here. What a pleasant surprise. Looks authentic to me. I will try this some time. I think the best time to do it is when the temperature is -25C outside. 👍

    You said to not use butter because it burns, but if you have butter you can make your own ghee. You just need to melt the butter on low heat and remove the milk solids, then you're left with ghee.
