How to Make Egg Drop Soup - Chinese Restaurant Style!

- Learn how to make homemade egg drop soup just like you'd order at the Chinese restaurant or buffet! This recipe is so simple, so delicious and uses ingredients you probably already have in your pantry. Next time you order out Chinese, give this a try while you're waiting for delivery!
What you'll need:
32 ounces low sodium chicken stock or broth
1/2 tsp salt
1/2 tsp sugar
dash white pepper (or black)
1 Tbsp white wine
2 Tbsp cornstarch
3 large eggs
scallions or green onions
In a pot or pan, pour in chicken stock or broth. Add in salt, sugar, white pepper and white wine. In a separate bowl, combine cornstarch with 3-4 Tbsp water to make a slurry and add to chicken stock mixture. Bring to a boil over medium-high heat. Next, whisk together the eggs and 1 Tbsp water in a measuring cup. Once chicken broth has come to a boil, remove from heat and slowly pour in eggs in a steady and small stream. Let sit 1 minute and return to heat and bring just to a bubble. Stir once or twice and then ladle into bowls. Top with sliced scallion and enjoy! Makes 1 quart (4 servings) of egg drop soup. Enjoy!!

I also add 1tbsp sesame seed oil and a full 1/4 tsp white pepper instead of a dash.... Spices it up perfectly.
Chef if you want to add to the flavor add a tablespoon of sesame oil to this recipe, I love your channel and the way you explain all your recipes!

Great & easy recipe. Thank you. Tasted great! I took out some of the egg yolks for cholesterol -reducing purposes, and the recipe still worked.
The only egg drop soup I had from take out seemed to use egg whites and not whole egg...
My eggs have always ended up floating down to the bottom and recombining into a mass on the bottom of the pan. If you have the ability, a little extra liquid really helps so the eggs don't lower the water temp too much as you want it hot enough that the egg doesn't recombine. That said, you also don't want it so hot that it simmers and the bubbles blow out the eggs into particles either lol.
Not sure how traditional this is, but I take the tiniest bit of the stock and add it to the egg mixture almost like tempering a custard but far less liquid as you want the eggs to coagulate instead of just mixing into the soup. I usually let my eggs come to room temp before I start and adding this little bit of warm liquid brings them up to temp so they don't cool down the soup too much and stop cooking when they hit the less hot water. This little bit of liquid also helps beat the eggs into a runnier state so the pour is super easy. I imagine you could just stick blend the eggs if you are doing a lot to get really well blended eggs, but I'm not pulling out a stick blender for a single bowl of soup. But again, I feel like if you add too much liquid you might end up with something like custard

We have quite a few Chinese restaurants in my area, but there's one that opened recently that stands out head and shoulders above the rest, with the best take-out New York style Chinese I've ever eaten. Their egg drop soup is divine. I'm pretty sure that they add some extra yolk to it because it's really rich. This was a cool watch, because although I've loved the soup my entire life, I actually had no idea what was in it! Thanks for the video.
