I am amazed at how much egg is actually in Egg Drop Soup! At every Chinese restaurant I've been to here in the States, it's always been tiny little threads of egg - nothing substantial at all. This is very refreshing to see not only the correct method, but the actual appropriate amount of egg that is in the soup, too! A big thank you!

I use baked tofu squares -- they are well cooked so they have a tougher texture like that of meat. Bean curd is great in soups and recipes that call for meat.
