I tried your breads a few times, and followed exactly but every time the dough turned out soft despite adding few tablespoons of bread flour during mixing. Thus making folding a bit difficult. Resulting a soft log in the pan :( How long do you knead in the mixer at speed 2, and after adding butter how long again you knead ?
In my experience with this type of dough, they are usually quite soft and slightly sticky. You can increase the mixer speed to like 4 once there’s no more loose flour, and keep going until your dough can pass the window pane test that is shown in the video. It takes a while, 5 - 10 min sometimes. After adding butter, you can stop shortly after you feel that all the butter is kneaded in evenly. If you feel the dough is too soft, it could be that your flour is inherently more moist than the one used in the video, or your environment is more humid. Sometimes that can affect the dough texture. Next time you try, You could try decreasing the milk amount by a tablespoon or so and add in a little extra sprinkling of flour.

因为我用的是低糖土司盒,你如果用平常的那种土司盒的话适当减少一些温度,因为这个是开盖烤的,上色之后加盖锡纸就可以了,这个是一次发酵的面团,所以发酵时间比较长,还跟发酵的温度有关系,我因为在冰箱冻了30分钟也会影响发酵的时间的哈,这个尽量不要超过盒子7分满,不然出来内部会有很多空隙,具体的我写在视频下方了,你可以查看

今天试做了一下,出现个小问题。正常情况下蛋黄都需要提前喷酒烤制后再做馅料,大琼这个配方直接将蛋黄碾碎就做馅儿了,我做的成品出来后蛋黄的腥味影响了整体效果。想问一下大琼,您的蛋黄处理过吗?注:我的也是市售现成的咸蛋黄,但跟您的品牌不同。
我用的咸蛋黄是熟的,你看一下你的咸蛋黄是不是熟的,我做的没有腥味,你如果嫌有腥味的话可以先在微波炉叮1分钟,然后过滤
