    INGREDIENTS FOR CAMEROONIAN ROASTED FISH
    Roasted Fish Spices
    - 3 sprigs basil
    - 3 sprigs leafy (Chinese) celery. Sub with parsley
    - 3 green onions, sub with one leek
    - 1 medium onion
    - 1½ inches ginger root
    - 5 large garlic cloves
    - 2 Tablespoons Njangsa
    - 1 'pebe' (African nutmeg)
    - 1 teaspoon ground 'contri' onions (rondelles)
    - 1 teaspoon ground white pepper
    - 2 small Maggi cubes
    - 1 teaspoon salt
    - ½ cup of water
    Fish
    - 4 medium whole tilapia,
    Substitute with other kinds of whole fish like mackerel, bar, or red snapper.
    Garnish
    - Sliced onions
    - Shredded carrots
    - Minced fresh parsley, or chives
    Serving
    Bobolo or sweet fried plantains (dodo)

    No argument from me. I spent 7 years in Cameroon, ate tons of grilled fish, often at Monte Caveau in Yaounde. Sometimes I'd stop and grab a fish on the way home in Tchinga after 7pm when they start grilling them. I've been all over Africa and no one does it better with grilled fish and chicken.

    Out of all the fish recipes that I had in mind, I couldn't help but click on this video. It looks so delicious that I am definitely going to try making this on my own. Just need the fresh fish, though. 😅 (I live in North Dakota in the USA, so we tend to not have many fish unless we fish from our rivers and lakes directly 😅)

    She said, "don't argue with me," I won't but is it spicy? The Ghanaians makes delicious grilled fish but it is usually always very spicy so spicy but it is so good. I'm not a fan of spicy food but their fish is irresistable and I disregard that it is spicy. Is Cameroonian grilled fish spicy? If not, then it sounds good already. Your fish looks good.

    What temperature should the oven be set to?

      Low broil. Broil uses the upper heating element of the oven. Hope that helps.
