- Cauliflower mashed potatoes are a low-carb, healthy alternative to traditional mashed potatoes. My mashed cauliflower with garlic and herbs is easy to make (only 20 minutes!) and perfect if you're following a dairy-free, vegan, paleo or keto diet. Hi! I don’t have a hand held blender, would I get the same results if I use a regular blender?
We add a little homemade chicken stock and parmesan cheese. YUM!
I recommend chopping garlic, frying it to a crisp and sprinkling it in top vs mixing it in to give some crunch. Soooo good!!!

Pro tip. Don't steam the cauliflower you lose flavor that way. Instead. Put them in a sauce pan with alittle oil and heat them up very slowly as not to brown them. Much more creamy. Much more flavorful
I agree although getting a bit of color on the cauliflower enhances the flavor.

Great! I've been making mashed cauliflower for months. This method makes all the difference in the world. I've been simmering the cauliflower along with a few slivers of garlic; it gets waterlogged. I just tried your method, using my food processor, it came out fluffy, not soggy. And the sautéed garlic was so much nicer than the cauliflower/garlic/simmer method. Salt, pepper, lots of parsley, awesome. Thank you. Upgrade!

Great recipe. If someone is whole food plant based they can saute garlic in vegetable broth and add that. Gives and even yummier flavor. Also love a dash of nutmeg sprinkled on top. Adds that extra fall flavor and yummy smell to the dish. Thanks. Love your videos.

Hi Lisa! The easiest way to steam cauliflower is to use the zero minute setting on high pressure of an Instant Pot. Perfect every time. Use 1/2 cup water in the inner pot, add steamer basket and the cauliflower florets. Close lid and make sure the lid is in sealed position. Set to high pressure for zero minutes. When Instant Pot reaches pressure, it will read zero. Using QPR, quick pressure release, release all remaining pressure. Cauliflower is perfectly steamed and ready to eat or use in recipe. Thanks for a great recipe!
Too much work, it easier to wash a steamer.

I followed your method and it came out perfectly. I have been trying to get it right and always ended up with a watery purée and actually gave up on it but gave it one more try with your direction and it turned out great! Cook with Avocado oil instead of Olive oil. Olive oil has a much lower smoke point which makes it very bad to digest after cooking with it. Just throwing that out there. Use your olive oil as a dressing for your veggies after they've been cooked, or add it to whatever you've made AFTER it's been cooked.

since I got an eating disability cooking for me is a bit tricky but I got a best friend who is very exited to experiment and she loved this when we tred it, so mashed cauliflower with dry rubbed zaatar chicken wings are now our staple dish whenever I visit her ^^.
She also makes it herself despite being able to have mashed potatos just fine

Looks delicious. I keep forgetting about my steamer gizmo - thanks for reminding me. I am a low carb guy, and I make cauliflower mash often. Only recently, I've added butter beans to the mix. Not only does that add protein, but gives the mash added texture and flavour. 😋

You can find frozen versions of this. Along with bean pasta, you can cut back on carbs without going insane. There's also whole grain pan cake batter with whey protein. Brown rice sushi and pizza. I mean, if you try really hard you could do a strict diet for a long time.
Although taste-wise, mashed cauliflower is the only thing that's almost indistinguishable from the real thing. I actually like this better than mashed potatoes.

Great recipe and very nice video but if you want to make this recipe even more deliriously delicious... Just before you mash your cauliflower,.. Add 2 tablespoons of philly cream cheese. It takes this dish to another level.

Can't wait to try this. Ugh you genius! Lol also can I make a sweets related request? Can you please film a gluten free, vegan traditional *Vanilla* cake? I have been craving it for over 6 months with no success. I am highly intolerant to eggs, dairy and gluten. Everything else is fine. I've spent hours researching but still nothing that taste remotely like real cake. Even with pre made flour(bobs, King A) my cakes come out like dense gummy bricks. Anyway id love to be able to enjoy sweets again. Especially for my upcoming bday Thankyou so much!!

Actually, I often make dishes like that to use up the stems (along with some florets, of course) because I don't want to toss them.
I'm kinda surprised you used the florets only.
May I ask why, and do you have other options, like broth, soups or so, to use up the stems of broccoli, cauliflower and the likes? (Same for the leaves, they are actually very tasty in soups, stir fries and so on.)
I'm always happy to discover new ways to do that, as I don't want to waste them. 😉
Thanks! And yes, you can absolutely use the stems in this (I probably should have showed that). But I do use the stems for bone broth or grate it for cauliflower rice (to use on salads). Maybe I'll have to do another video in the future about how to use leaves and stems that most throw away. Thanks for the idea!! :) x

I only have a hand held potato smasher, and there is no way you would confuse this with mashed potatoes. It was good, but even flavor wise, unless you made it loaded mashed potatoes that had a bunch of other stuff in it to disguise the taste, I'm not buying it. ...but, with the hand smasher, I can see some other possibilities, like making a parmesan or mushroom style risotto. My texture was very similar to rice, so I could see that working very well. I guess I need to get an immersion blender, but still think Cauliflower would work better as a risotto than mashed potatoes.

That's great but that defeats of purpose of making mashed cauliflower instead of mashed potatoes. Potatoes are high in starch.

I will have to try this recipe as I do try to stick to my low carb diet and it will be hard with the holidays coming up. Also I was wondering if you knew of any noodles that aren't so high in carbs that can be used in pasta's and asian dishes. Sometimes I can only eat so much zoodles or egg and cheese pasta.

Mine turned out a little grainy is that normal? I had to steam it twice as long and the unmashed cauliflower looked softer than the video... not sure what went wrong there
