Aaron, I tried and LOVED this recipe. In the spirit of “Don’t worry about it, just use what you have” I replaced the soybean paste with peanut butter and left out the sugar. I also replaced the ground beef with diced leftover steak from a previous meal. So delicious!!!

I do not have soybean paste but I do have golden miso. So I will cautiously substitute. Hope it works! And I will add ginger to the beef, I love a touch of ginger in most beef recipes, including roast beef.
I made this vegetarian by using crumbled tofu and chopped mushrooms in replacement of the beef! Topped it with cucumber and it was incredible!! Thank you Aaron and Claire 🥰

Luckily, there is a small Asian grocery where I can get some basics. I can't say thank you enough for your channel. Clear instructions, wonderful dishes, it isn't intimidating. Korean American here. I only had leftover seared chicken thighs so thats what I used. Yangyum chicken vibes for those who have been craving it. I definitely can say I never tasted these flavors at a Korean restaurant or home, especially after using jajamyeon frozen noodles :) Claire is spot on with the dan-dan noodles comparison...thinking about adding peanut sauce!
Good that u teached me because sometimes the paste tasted too plastic like and just spicy with plastic. As soon as I used honey one time it changed my life. So using the paste like this will be an experience for sure.

this is amazing 😊 i rarely modify your recipes but skipped the beef in favor of having grilled pork belly on the side because that's what i had. i can only imagine how delicious this recipe is with the ground meat....for now.

Thank you, from the bottom of my heart. Homemade gochugang is so much better than pre-made. I also soaked some dried Shiitake mushrooms in water witn a tbsp of good soy sauce and shaoxing cooking wine to add to the aromatics. This is beyond your average gochugang noodles recipe. It's outstanding! Better yet, we have a local Korean International Market in my hometown that sells eomuk bokkeum and house kimchi. 💯

I make this so much for me and my partner. I sub out the meat for quorn for my partner as she’s veggie and use miso instead of doenjang as it’s easier to acquire. The sauce is so good I’ve made it plenty of times without the mince. Just fried it off with garlic for a quick lunch 😋
I made this for my family today and we love it so much! The only change I made was to use 1 tb gochugaru instead of two, I didn't want it too spicy for my kids. SO GOOD !

I manage to do this on my 15 minutes break ! This was so good ! I didn't have pepper powder so i added some Buldak sauce. The only note from me, i would skip the soy sauce since this is pretty salty on its own. ❤
I followed this recipe (approximately) for my dinner; turned out very tasty! I didn't have most of the ingredients for the sauce/paste, so mine was a lot simpler, but your advice of "just use what you have" didn't lead me astray. I ended up just mixing regular crushed red pepper flakes with soy sauce - reducing the volume of red pepper flakes to account for spiciness. I don't know how spicy this dish is meant to be, since I've never used Korean chili pepper flakes, but I ended up making it right on the limit of my spice tolerance (on purpose; I was in the mood for some intense spiciness). It was delicious! And I just realized, I completely forgot the toasted sesame seeds! Oh well; I have an extra serving left over. I'll remember to add the sesame seeds when I reheat it for my lunch tomorrow.
2 green onions
7-10 cloves garlic
2 baby bok choy
2 tbsp neutral-tasting oil
8.8 oz (250g) ground beef (or ground pork, chicken, etc.)
1 lb (470g) frozen wheat noodles (or udon noodles, knife-cut noodles, pasta, etc.)
Generous pinch of toasted sesame seeds, to garnish
2 Soft-Boiled Eggs (optional), to serve
Seasoning Paste:
2 tbsp Korean chili pepper flakes (gochugaru)
1 tbsp sugar
1 tbsp soy sauce
1/2 tbsp oyster sauce
1 tbsp mirin
1 tbsp Korean soybean paste (doenjang)
2 tbsp Korean chili paste (gochujang)
