Thank you! I've been using yarn from my collection, some of which goes back 25+ years. For stitch videos like this, I think the blue one was from the late 90s. It's 100% acrylic, worsted weight, but it seems to have been made thicker back then.
I can do the same with knitting I’m making square blocks first time doing this way, the other way was just add new balls to the yarn and keep knitting until I got to the size I wanted

That's up to you. I generally do use the same hook, unless I want the edging to be slightly larger (then I use a larger hook).

You could do granny squares all in one color, or, get one of those yarns that changes colors slowly. Then use this method to connect them all.
