    Thank you for all your comments and thanks to those who pointed out the difference between Rapeseed and Canola. I have been using the Sunflower oil for years and have just recently bought the Rapeseed oil. I absolutely love them. I have been contacted by The Good Oil Company and they have given me some useful information. (it reads as below)
    A common query we get is about the differences between our rapeseed oil and canola oil. Although both come from the same plant (sort of), the resulting oils are quite different. Canola oil is typically genetically modified and heavily processed with heat and chemicals to maximise the amount of oil they extract and then remove natural colour, flavour, and aroma. In contrast, our rapeseed that we grow is naturally bred (GE free), high in oleic acid, and cold-pressed in Canterbury without using heat or chemicals. This method extracts less oil but ensures a more natural and higher quality product, rich in monounsaturated fats and low in saturated fat. Our extra virgin rapeseed oil is similar to those popular in Europe and the UK, which is why we use that name.

    Notice your onion powder and garlic powder were hard. Over here in northern Ontario Canada, when my brown sugar gets hard. I put in a piece of bread and it takes the moisture out of the powder and makes it loose again. Love your video's, it's just the way I cook also. I am 72 years old, health wise not good, but I am this side of the grass, so all is good. Don't let the haters get to you. You are a wonderful, beautiful, giving person. Love, love you.       Thanks for the tip and the laugh. Hadn't heard the expression "this side of the grass" before but, it's self explanatory and at 65 I'm also glad to be this side of the grass. 😊 I put uncooked rice in the salt shaker for the same reason as you put bread in the sugar but, l hadn't heard of it before. Am I right in assuming you mean stale bread?

    For the garlic lovers, there is toum from the Middle East. It has garlic, salt, lemon juice and oil. The bonus of toum is it also makes it so easy to also add garlic flavor to any dish, it is an addictive spread. Thanks for the video, we need to be making more condiments at home to save some money and keep the chemicals out of our food.

    I've made both egg and eggless mayo. I've successfully made mayonnaise with bean water instead of milk. I've used both canned (from chickpeas) or home made using white bean cooking water. Works like a charm.

    Stacey, thank you for giving us so much inspiration to make more from scratch meals using less processed ingredients. I live in Northern Ireland and it’s fun to see how a fabulous home cook does things on a different continent. I love all types of cooking, baking. Since finding your hot cross bun recipe I’ve made many batches and sometimes for a change I’ll use chopped semi dried apple rings and sultanas.

    I made mayo once decades ago 😅 i did something wrong, i think i made with all olive oil and didn't like it at all. I will try again! My grandkids love ranch dressing too so I will try your dry mix! AND wow, you hit it all with me with the egg salad! I have many childhood memories of my dad making egg salad sandwiches for lunch 😊 He worked nights and stayed home with us younger kids while mom worked and the other kids were in school.     I had no idea you could make eggless mayo with milk. I knew it could be made with chickpea water, but meant using a tin of chickpeas for something else. I'll be trying your milk version the next time I need mayo :) I've missed being able to eat it since I became intolerant for eggs. Also will try the ranch mixture. Thank you so much.

    Great timing Stacey. Thank you. Have recently started using Good oil as well and bought a stick blender last week. 😄 Had one years ago and didn’t like it so gave it away but, they were heavily reduced at a local store so thought I'd try again. Had stopped making my own mayo as l'm always worried about how long it will last so, l'm keen to try the egg free one, made with plant based milk it would be a great vegan mayo too. Would never have occurred to me that you could put all the ingredients in at once though! 😊
    Not sure if you know but, Canola oil is a type of Rapeseed oil too. This article written by Cara Rosenbloom, RD and reviewed by Patricia Pinto-Garcia, MD, MPH from April 10, 2023
    is quite long but, l thought it was interesting. Please note, I'm not in any way criticising your use of Rapeseed or Canola oil and l'm not criticising Good Oil - l use them too, nor implying their oil has some of the issues of other oils mentioned in the article either, as l know their oil is cold pressed but, l thought it was good to share some of the things to be aware of with other brands.
    Rapeseed oil vs. canola oil
    Food-grade rapeseed oil is more commonly known as canola oil. It was developed in Canada in the 1970s. And compared to the industrial-grade version, it contains less erucic acid - a toxic compound found in the rapeseed plant.
    Rapeseed oil - commonly known as canola oil - is an ingredient found in many packaged foods. Although it’s generally considered safe and even heart-healthy, some people argue that you should avoid it.
    What exactly is rapeseed oil?
    Rapeseed oil is made from the seeds that develop from the yellow flowers of the rapeseed plant. There are two types of rapeseed oil:
    • Industrial rapeseed oil: This type is high in erucic acid - a natural toxin - and is not edible. It’s used as a lubricant and is often found in cosmetics and detergents.
    • Culinary or food-grade rapeseed oil: In the 1970s, Canadian scientists found a way to lower the amount of erucic acid content in industrial rapeseed oil to create low erucic acid rapeseed (LEAR) oil, also known as canola oil. The name “canola” is an abbreviation of “Canadian oil low acid. ”It is often used in cooking, baking, and food manufacturing.
    The specific differences between industrial-grade rapeseed oil and canola oil come down to how much erucic acid is found in each. Industrial rapeseed oil has more than 40% erucic acid. By definition, canola oil must have less than 2% erucic acid.
    In the U.S., if you see a bottle of rapeseed oil in the grocery store, it’s actually canola or LEAR oil - not industrial rapeseed oil. In this article, when we refer to rapeseed oil, we’re talking about canola or LEAR oil.
    Is rapeseed oil bad for your health?
    According to the FDA, rapeseed (canola) oil is safe to consume in moderation. It may possibly even help manage or reduce levels of LDL cholesterol levels, which is sometimes called “bad” cholesterol.
    But as with any food, the health benefits of rapeseed oil depend on how much and how often you eat it, along with the quality of the oil you’re consuming.
    Enjoying a tablespoon of cold-pressed rapeseed oil on a salad will have different health effects than eating french fries that have been deep fried in rapeseed oil. Plus, it’s important to take a person’s whole diet into account - not just one food.
    Why rapeseed oil is thought to be bad for you
    Despite containing safe levels of erucic acid, edible rapeseed oil varieties get a bad rap. Common concerns include:
    • Trans fat content: The FDA allows products to be labeled as trans-fat-free as long as they contain less than 0.5 g of trans fat per serving. One tablespoon of canola oil has around 0.2 g of trans fat. While this is a small amount, it can add up if you eat a lot of the oil. And a diet high in trans fat can pose serious health risks, including heart disease, stroke, and Type 2 diabetes.
    • Sourcing from genetically modified (GMO) crops: Some people have raised concerns that GMO foods are low in nutrients and potentially even have toxic effects on the body. There isn’t conclusive evidence behind these claims. But since 95% of rapeseed plants in the U.S. are genetically modified, some people say you should avoid the oil for this reason.
    • Potential toxins from processing: Oils are extracted from seeds and vegetables using a chemical called hexane. Although animal studies have found hexane to be toxic, it’s currently not considered cancer-causing in humans.
    When does rapeseed oil become harmful?
    Eating too much erucic acid has been linked to heart disease. European experts recommend that people limit their erucic acid intake to 7 mg per kilogram of body weight. For a person who weighs 80 kg (about 175 lbs), the upper limit would be 560 mg.
    For reference, 1 tablespoon of canola oil can contain a maximum of 280 mg of erucic acid. This means a person who weighs 80 kg can have around 2 tbsp of canola oil per day.
    According to a recent report from the Canadian Grain Commission, however, the erucic acid content in canola oil is barely detectable (around .01%). But it’s unclear what the precise percentage of erucic acid is in canola oil brands used in the U.S.
    Keep in mind, many ultra-processed foods contain canola oil or LEAR - this includes foods and drinks that are considered healthy. So it can be easy to exceed the recommended limit, which can be concerning. Foods that commonly contain rapeseed oil include:
    • Margarine
    • Shortening
    • Salad dressings
    • Plant-based milks
    • Baked goods
    • Mayonnaise
    Another health risk linked to rapeseed oil is its use in fried foods. Reheating these types of oils can release fumes that are toxic to the body when inhaled or eaten. Regular consumption of fried foods has been linked to many types of cancer.
    Are there any health benefits of rapeseed oil?
    Rapeseed oil is considered to be heart healthy because it is high in unsaturated fat and low in saturated fat. There are 14 gr of fat in 1 tablespoon of rapeseed oil, which includes:
    • 1 g saturated fat
    • 9 g monounsaturated fat
    • 4 g polyunsaturated fat (both omega-3 and omega-6 fatty acids)
    Rapeseed oil and omega fats
    Many Americans eat too many omega-6 fatty acids. A high intake of omega-6 fat has been linked to obesity. On the other hand, omega-3 fat is linked to lower levels of inflammation and better heart health.
    The recommended ratio of omega-6 fats to omega-3 fats is 1:1 or 2:1 - and rapeseed oil has a ratio of about 2:1. The lower the ratio, the higher the percentage of beneficial fatty acids (omega-3s) you’re getting. In this way, rapeseed oil is relatively healthy compared to some other oils. For example, corn oil has a 46:1 ratio.
    Other nutrients in rapeseed oil and their potential benefits
    Rapeseed oil naturally contains phytosterols, plant compounds that are linked to lower cholesterol levels. It also contains some vitamin E and beta-carotene, which are considered antioxidants.
    However rapeseed oil is highly processed, which reduces the presence of these nutrients. Some examples of methods used in the refining process include:
    • Heat
    • Hexane solvents
    • Filtering
    • Deodorizing
    • Bleaching
    One potential way to ensure that you’re getting the maximum benefit out of canola oil is to look for a cold-pressed option. Because cold-pressed oils aren’t produced with heat, they are more likely to retain vitamins and antioxidants.
    One small study has suggested that cold-pressed rapeseed oil may be effective at lowering cholesterol, including LDL cholesterol. But this study compared the cold-pressed variety to butter. There aren’t any studies comparing cold-pressed rapeseed oil to the standard type. Cold-pressed rapeseed oil is also not as easily available and may be more expensive.
    How much rapeseed oil is safe to use?
    In general, federal dietary guidelines recommend no more than about 27 g of oil per day for someone eating a 2000-calorie daily diet. That’s about 2 tablespoons of oil in total.
    What are some healthier alternatives to rapeseed oil?
    If you are concerned about rapeseed oil, you might consider using olive oil or avocado oil, which are high in monounsaturated fats. These unsaturated fats are linked to better heart health as well as improved blood sugar and blood pressure.
    To increase your omega-3 intake, you can also try flaxseed oil or hemp seed oil. But cooking with these oils is not recommended, because they break down at high temperatures. Instead, use them as a salad dressing or to drizzle on vegetables.
    The bottom line
    While rapeseed oil has some heart-protective benefits, it’s highly refined to remove erucic acid, a naturally occurring toxin. Rapeseed oil, also known as canola oil, is found in many ultra-processed foods, so it’s easy to eat more than recommended. Limiting your intake can help lower any risks associated with consuming too much canola oil. And for less processed and similarly beneficial healthy fats, you can try olive, avocado, or hemp oil.

    You know, when you see someone make something that seems like it would be "complicated" so we just buy it at the store, and then see just how quick AND simple it is to make, you gotta wonder why we buy the garbage in the store. Especially when this comes together so quickly and is a far healthier choice! I LOVE an egg salad sandwich, on a really lovely seeded wheat bread (google Dave's 21 grain killer bread - maybe you should make that - hint hint LOL!) and a healthy spray of alfalfa sprouts, and a big glass of milk on the side. PS...you look especially beautiful in this video! Love & HUGS to you and Husband!

I have never liked homemade mayo because of the raw egg, but I will be trying the eggless version when summer rolls around again. How long does the eggless mayo last in the fridge?     my mouth was watering & I could taste & smell the eggs as that is how I have always made them over the past 50 plus years. I love egg mayo, so I will be having a go at making it in the coming months. My mother always made her own mayo which was tasty but not really healthy to be honest. She used half a can of condensed milk, mixed it with malt vinegar & whipped it with a fork until the consistency was right. So nice but with the sugar content, not good! I stopped making it years ago & just bought my mayo as I couldn't afford the condensed milk, also because of the sugar content & everyone's wanting to just eat the milk. I used to buy a tube of it for husband as he used it at work in his cup of tea.
    Thank you for explaining why the different ingredients, so now I understand the science behind the ingredients. The eggs always need a tad of curry powder when being processed, my mother used to add butter(marg) or milk to bind the egg mixture but I used MAYO of course, & the BUTTER went on the bread, nice & thick. Thanks also for the way to cook eggs, so I will also be trying that method. I worked in a nursing home kitchen & they never cooked their eggs this way either!!! It was boil, turn down the heat, & cook for 10 minutes, take pot off stove & dump the eggs in very cold water. I was always told that the older the egg the better it pealed but that didn't always happen either....🤣🤣🤣

      A food processor works but you add everything EXCEPT the oil. Turn on your food processor and drizzle the oil in slowly while the food processor is running.

    TIP ON HOW TO PEEL BOILED EGGS. Crack eggs all round under running water. take a teaspoon put just under the egg skin and slide. You will be surprised how quickly you can peel the egg.

    I feel like I'm flooding the comments on this video but had to come and say THANKS for the egg cooking tips. Mine came out perfect!!! Also I was thinking of you when I made some golden syrup dumplings today. My aunt used to make them and they were amazing, these were "ok". I was wondering if it's something you make?

    I gave the eggless mayo a go even though the only second oil I had was olive. You're right about it not being the best choice, it's a bit overpowering. I think I needed more lemon juice too but it's going to be fine to add to some egg sandwiches with some curry.added in. I'll give it another go another time. Did you hear treat your eggs first?

    That is exactly how I make my boiled eggs…I’ve never made homemade mayo though….I’m kinda fussy about the mayo I like but I’ll give this a shot and see if it passes the Lady Thyme taste test 😏😉….I’m always open to new things 😊….it looks yummy
