Hi, glad you found me. To answer your questions. 1 - Yes you can dehydrate like you would any fresh pasta. Make sure it’s completely dry before storing. Keep in mind that there are no preservatives and you are air drying so it won’t last as long as store bought. You can also freeze the little pasta nest. Be sure to dust with a good amount of flour before you bundle them in a nest. 2 - I can’t say I’ve tried using only the lentil flour. The chickpea flour is more “sturdy” but if you are up for it try and let me know if it worked And before you ask….you can dust with any flour. I used white flour because it is more accessible and not intolerant to gluten, although I stated that this is a gluten free recipe. The things we learn AFTER we post
I've experienced the same with all the egg replacements: They don't work in long/thin noodles. But they do in almost all other forms! Have a look at spirelli, cavatelli, trofie, orichiette and so many more. Some of them are quickly made and they're absolutely delicious!
@@simplybella_3619 I've also tried mungbean because it's a great egg replacement in so many ways but didn't work either. Also several legumes mixed with half rice, millet or buckwheat. All combinations work great especially with psyllium but not in long and thin shapes.

I would place the dusted “pasta best” in a cookie sheet and place in the freezer like that for like 1-2 hours, then remove and place in a air tied bag or container. Again, if avoiding gluten dust with garbanzo flour, if gluten is not a concern you can use white flour like I did, it’s more economical

I have a kitchenaid and I purchased the pasta machine attachment from Amazon. It came with three attachments, pasta roller, and two pasta types to make. One is fettuccine and the other I think is spaghetti, not sure because I have not used that one yet.

You can are dry but if you want to store in a cool dry place you will have to make sure the pasta is REALLY dry. I would dusting well with flour, air drying for a couple hours and than freezing.

Since I don’t have i tolerance to gluten I didn’t even think about when I made the tutorial. I have a red lentil crepe tutorial and you could use the flour but the ratio would be different. Quite honestly, I find the soaking of lentil overnight easier than making the flour.

I basically soak the lentils overnight and then add to a high speed blender with water and spices, then pour the thick batter into a flat pan and bake. Very easy! I love using it for wraps or even topping and making pizza. I’ll take a look at your crepe, that sounds very good as well. For the pasta, Zi don’t have a machine so thought I would simply use a rolling pin the slice into strips for noodles. Thanks again🌟

Yes, that is a question I always get. At the time I made the video I wasn’t intentionally making it gluten free, so used white flour because it’s the least expensive flour there is. Other than the gluten free part, I don't have any special needs. From what I gather, it's not too complicated to get them fluffy, just increasing baking powder, or soda, lol, i forget. I say gingerbread, but even basic fluffy pancakes would be fine. Since pancakes should be fluffy, in general, perhaps fluffy lentil pancakes would be the first step, then they could be flavored however we want, by adding to the fluffy recipe. @@simplybella_3619 I've used it in the past as part of the liquid and also mixed a TBS of ground flax directly into the flour first to make spaetzle , a thick doughy batter,(extruded German noodles) and it held together fine, not sure how it would work with a firm dough.

I still haven't found a recipe, without egg, that I'm happy to share. Still working on it. You can dry this fresh pasta on the “ drying pasta rack” ( Amazon - EBay - kitchen store) , you can keep it fresh in the fridge for about couple of days or freeze it up in a long / square box ( art and crafts store like Michael’s , Hubby Lobby , AC Moore .....) for a long time .

If you want to cook them right away, do you just boil the water and add the noodles? Since they are soft and "wet" before cooking do they stick together? Or do you need to add oil to the water so that they don't stick? Thanks! I look forward to making these.
Hi Tari, add the pasta to boiling water. I don’t add oil to the water and they don’t stick together. There is a bit of oil already in the dough. Since it is fresh pasta it will cook in a matter of minutes (I never time it but I think 1-2 minutes depending on how much you dried the noodles).

Is this actually gluten free if you use white flour on the counter?
If you have gluten intolerance you can use the garbanzo flour for dusting instead of white flour.

It will have that healthy taste. I think the red lentil has a stronger taste than the garbanzo.

How long to cook this for??
Fresh pasta, specially if you are cooking right after making (not air drying) will cook very fast. I’m talking 1 to 2 minutes.

If you want to cook them right away, do you just boil the water and add the noodles? Since they are soft and "wet" before cooking do they stick together? Or do you need to add oil to the water so that they don't stick? Thanks! I look forward to making these.
Hi Tari, add the pasta to boiling water. I don’t add oil to the water and they don’t stick together. There is a bit of oil already in the dough. Since it is fresh pasta it will cook in a matter of minutes (I never time it but I think 1-2 minutes depending on how much you dried the noodles).
