I graduated from culinary school in 2001 and although I have long ago transitioned my career into a completely different field I still have a passion for cooking. My kitchen is my happy place and I enjoy cooking for my loved ones. This channel is still in its infancy and it will continue to develop.
I started this channel because I wanted to encourage those intimidated by the slight idea of cooking. But then, I went through a vegan phase. It only lasted 3 months but I LOVED how creative I became. The fun thing about being vegan is that you just don't have that pre-set notion of what the dish should taste like when you care creating something totally new in your menu. After that I took a little break and then I decided what this channel would be all about, at least for now. This is a place for me to post my favorite recipes, so I can refer back to them rather than looking at my cook book. I caught myself replaying some of my videos for certain recipes. I hope you enjoy it!

Hi Bella. Can you use "canned" lentils for your smoothie?
I’ve never had canned lentils, I’d imagine it is high in sodium, like many canned goods.

Is this how the português do it?? I gotta ask my fishermen family. I recall pure coarse and fine sea salt in a tub with the fresh caught cods all in between the salts. No water. And it stayed there months. Yea I’m gonna ask my uncle.
The dried cod is made with a salt cure only. This is my practical version, when I can’t find the dry salted cod. The salt is always spot on

Hi Bella, this looks very good! What's the benefit of soaking the lentils before cooking them?
Besides the fact that they will cook in less time, from what I’ve read it helps break down something in their composition which helps with the digestion and nutrients absorption which should help with the gases during digestion. Not sure if it’s really true but I also soak up mine and I don’t use that water.

How does this effect you digestion? Ive used tofu and its been fine but im curious how lentils will?
Do you mean bloating? I find that some people are more tolerant to legumes than others. You’ve blended tofu in a shake? I guess tofu is pretty neutral in flavor and it adds a nice silky texture to it. Good tip 😉
Hi, I just found your channel and have a couple questions for you: 1 Can this be dehydrated to have on hand as with store bought. 2 Would it work if I only used all lentils. Thanks.
Hi, glad you found me. To answer your questions. 1 - Yes you can dehydrate like you would any fresh pasta. Make sure it’s completely dry before storing. Keep in mind that there are no preservatives and you are air drying so it won’t last as long as store bought. You can also freeze the little pasta nest. Be sure to dust with a good amount of flour before you bundle them in a nest. 2 - I can’t say I’ve tried using only the lentil flour. The chickpea flour is more “sturdy” but if you are up for it try and let me know if it worked And before you ask….you can dust with any flour. I used white flour because it is more accessible and not intolerant to gluten, although I stated that this is a gluten free recipe. The things we learn AFTER we post

Duck broth is very healthy, as its fat is super healthy if you render it while roasting. I wouldnt put so much stuff in it to turn it to a green color. Its suppose to have a deep amber/golden color.
I eat whole food plant based for health issues and skip adding any fat to the batter, it comes out fine.

It will have that healthy taste. I think the red lentil has a stronger taste than the garbanzo.

Yes, but the mascarpone will yield a thicker texture.
Is this actually gluten free if you use white flour on the counter?
If you have gluten intolerance you can use the garbanzo flour for dusting instead of white flour.
Can i store the pasta in the freezer?
Yes you can. Just make sure it is pretty dusted. I would place the dusted “pasta best” in a cookie sheet and place in the freezer like that for like 1-2 hours, then remove and place in a air tied bag or container. Again, if avoiding gluten dust with garbanzo flour, if gluten is not a concern you can use white flour like I did, it’s more economical

Can these noodles be dried for longer storage?
Certainly. Or you can freeze them as well. Just make sure you dust with enough flour (white, garbanzo…whichever)

What is grabanzo flour?
Flour made from garbanzo beans or you may have a different name for them. Chickpea? Here I find it readily available at the store. If you don’t have them you can grind the beans until they turn into a powdery flour.
I did it earlier but I was not adding butter, next time I'll add butter and see the difference, thank you for sharing, the sound volume is a bit low
If you are avoiding dairy you can add a vegan butter. Thanks for the feedback regarding the sound.

I've experienced the same with all the egg replacements: They don't work in long/thin noodles. But they do in almost all other forms! Have a look at spirelli, cavatelli, trofie, orichiette and so many more. Some of them are quickly made and they're absolutely delicious!
Thanks for the tip. I actually tried something else a couple weeks ago. I was convinced that was it! But nope 👎 It didn’t hold.
@@simplybella_3619 I've also tried mungbean because it's a great egg replacement in so many ways but didn't work either. Also several legumes mixed with half rice, millet or buckwheat. All combinations work great especially with psyllium but not in long and thin shapes.
