Beautiful!! Persian and Turkish have so much in common! When the Gokturk moved down across the Iranian plateau and the Seljuk ( from whence the Kayi Osmanlii come) set their capital at Isfahan, a great culture of food came about. Iran today still retains many of these foods. I loved your story!

Dear Refika, during my childhood in Central Anatolia (not far from the region your father came from), women used to make flat bread (yufka ekmek) in tandoors from sunrise to sunset for two/three days in a row. It was a custom to make gozlemes (we call it tandir boregi) for neighbors in the morning. Neighbors used to send their fillings, enough for 5-10 boreks, to the ladies at the tandoor. Three of the most popular ones for breakfasts were "salatali borek" (simply tomatoes, green peppers, onions, parsley, salt and black pepper), "yumurtali-peynirli borek" (just eggs and tulum cheese), and "sekerli borek" (sugar and butter).

Me and my husband absolutely LOVE gözleme. It is one of our favorites. Ever since we ate it in Turkey I've been making some at home like three times a year, with spinach & beyaz peynir filling (thankfully we have a store which sells Turkish ingredients close to where we live). I ate Gozleme in Turkish airlines for the first time when i flied from Istanbul to Seoul. It was really simple but delicious snack. I would like to eat this also in my country, Korea.

We have almost same thing in my state of Bengal, in India. It's called Moghlai Parotha. Except that it has an egg and mince meat filling, and is deep fried. Served with a potato curry. Most definitely a middle Eastern influence, because, the Delhi Sultanat had Turkish origins.

I loved the gozleme when in Turkey. Great back pack food. I would buy a few of them without meat so they would last for whenever I wanted a snack on a walk. So tasty. My favorite is the white cheese with spinach.

Hi from Finland. I were so lazy woman, I did few times gözlemes, lahmachuns and pides with ready yapma and filo dough, sorry. But they were anyway quite good, even wrong doughs. I'm really crazy for Turkish food, truly. I had those times many bough frozen filo and yapma doughs on my freezer, so that because I make them. I'm unfortunately so lazy to bake. But not to make wonderful Turkish food, I love it. In 18 years I visited in Turkey several times, and luckily I got always the real Turkish homefood, only two times I ate at restaurant, homefood is always the best. Thank you for your channel. The pepper paste is made with banana peppers. They should be sold on Amazon (not quite sure tho) and the pictures might be green or yellow but don't worry the peppers turn red when they are ripened
Check a Mediterranean or Middle Eastern market in your area, or on Amazon -- I found pepper paste at a Middle Eastern market near me. Looks like tomato paste, but is made w/peppers -- really delish!

My all time favourite is gözleme with poppyseed paste. You basically spread plenty amount of poppyseed paste into layers. It's not the filling, it's the flavour of the dough itself. Perfect with feta like white cheese, fresh chillies and of course Turkish tea. 🤤

loved the recipe! In Bangladeshi cuisine, there is a similar kind of food called "Mughlai Porota (Paratha)". That one is mostly made with eggs and sometimes keema too. The bread/sheet is rolled a little thicker than this, folded the same way and fried with more oil (Some even prefer deep frying). btw about rolling pin: I've never realized before watching this video that, people may not have a rolling pin lol.. I have one bought from dollartree. Yes, it was only $1!!! And my mother in law has one that has striped grooves and handles which is a bangladeshi traditional rolling pin

I loved gozleme when we visited Turkey around 12 years ago. We had up in Cappadocia (?) . Potato type. We watched the lady make it on a grill outside.
You guys remain me about my grandma's recipes, next time if you like try two more recipes. First is lightly fried green pepper, parsley, and feta cheese. The second one is feta cheese and eggs. Hello from Las Vegas.

I loved the gozleme when in Turkey. Great back pack food. I would buy a few of them without meat so they would last for whenever I wanted a snack on a walk. So tasty. My favorite is the white cheese with spinach.

Happy new year, Refika and the whole team! We make a variation of gozleme in Sri Lanka as well and use fillings like egg (most common), chicken mayo and also one with bananas + chocolate! Some places make this with spicy minced meat and those tend to be huge ones - they’re called murthabak. The dough used here is quite oily though; similar to the one used for katmer

Hi from Finland. I were so lazy woman, I did few times gözlemes, lahmachuns and pides with ready yapma and filo dough, sorry. But they were anyway quite good, even wrong doughs. I'm really crazy for Turkish food, truly. I had those times many bough frozen filo and yapma doughs on my freezer, so that because I make them. I'm unfortunately so lazy to bake. But not to make wonderful Turkish food, I love it. In 18 years I visited in Turkey several times, and luckily I got always the real Turkish homefood, only two times I ate at restaurant, homefood is always the best. Thank you for your channel. So now I'm trying to find the seeds to grow them here in Massachusetts. Do you have advice, or a source of seeds? The pepper paste is made with banana peppers. They should be sold on Amazon (not quite sure tho) and the pictures might be green or yellow but don't worry the peppers turn red when they are ripened
There are many Turkish stores that carry pepper paste, you may have some in your area.
Check a Mediterranean or Middle Eastern market in your area, or on Amazon -- I found pepper paste at a Middle Eastern market near me. Looks like tomato paste, but is made w/peppers -- really delish!
@@ozgurkara3294 Thank you for your reply :) The one we call "banana pepper" in my area is a VERY hot pepper! I think there is confusion about peppers because there are so many varieties and they are called different names in different places.

My all time favourite is gözleme with poppyseed paste. You basically spread plenty amount of poppyseed paste into layers. It's not the filling, it's the flavour of the dough itself. Perfect with feta like white cheese, fresh chillies and of course Turkish tea. 🤤
I used to eat roasted poppyseeds as snacks but became a little dizzy afterwards. I wonder if poppyseeds gözleme has same effects.

It was only roasted poppyseeds with salt.

Well poppyseeds comes from opium. Maybe that’s why it gives a little dizziness when consumed a lot of it.

loved the recipe! In Bangladeshi cuisine, there is a similar kind of food called "Mughlai Porota (Paratha)". That one is mostly made with eggs and sometimes keema too. The bread/sheet is rolled a little thicker than this, folded the same way and fried with more oil (Some even prefer deep frying).
btw about rolling pin: I've never realized before watching this video that, people may not have a rolling pin lol.. I have one bought from dollartree. Yes, it was only $1!!! And my mother in law has one that has striped grooves and handles which is a bangladeshi traditional rolling pin

When I lived in Athens I used to visit Turkish restaurants all the time and fell in love with the cuisine (we have many many common things too ) now I moved and there are no Turkish places here so I’m so happy I found your videos and I’m able to make those dishes my own
