Turkish Manti from scratch! 🇹🇷😍

- Now this one’s really interesting! Think of it as Turkey’s answer to ravioli. The dough comes together really quickly with just 3 ingredients. The filling is incredible and the sauces are equally as delicious. The spiced butter and creamy yogurt work beautifully together

1. Add 300g minced lamb to a bowl and season with sea salt, black pepp, 1tsp sumac, 1tsp cayenne, 1tsp ground cumin, 1tbsp roasted red pepper paste, 1 grated white onion, 2 cloves grated garlic + a bunch of chopped parsley, chives and touch of mint
2. Mix to combine and leave to marinate in fridge whilst you prep the dough
3. For the dough: combine 300g AP flour, sea salt, 1 large egg, 120ml cold water - mix to combine, then knead with your hands on floured surface
4. Keep kneading till it forms a smooth ball, then cut into two and rest in a bowl under a damp cloth for 30 mins
5. Once rested, roll out till super thin, then cut into evenly sized little squares
6. The filling for these is tiny - just take 0.5-1tsp of lamb and place into the centre of the squares. Dab each corner with water, then press the corners in to each other to form the manti - small gaps between the seams is totally fine
7. Set aside on a floured tray, then prep the garlic yogurt and spiced butter
8. Combine 200g Greek yogurt with 2 cloves grated garlic, sea salt, black pepper, chopped dill and splash of olive oil - mix to combine and season to taste
9. Throw manti into salted boiling water - simmer 3-4 mins, then strain and plate before starting the butter
10. Add yogurt to a plate along with the cooked manti and a little more yogurt
11. Grab 250g of @allthingsbutter__ and cut into cubes. Add to a pan and bring to med-high, then add 1tbsp tomato paste, 1tsp Calabrian chilli, 1tsp roasted pepper paste, thyme, 1tbsp Aleppo pepper - mix till foaming
12. Spoon over the sizzling butter and garnish with parsley and lemon zest

Word to the wise - if you choose to make this, kneed that dough by hand. DO NOT use you food processor that has a dough setting it doesn't work... I tried 😕

I am Turkish guy. We dont put garlick and mint and parsley in the minced meat. We put garlicj in the yoghurt sauce. We dont put yoghurt under the manti . We put it top of the manti. We do not put egg in the doug.
