How to make Ghana chicken Peanut butter / groundnut Soup with a twist

INGREDIENTS:
* 1 whole hen 3 Lbs (butchered and cleaned)
* Marinate chicken with tbsp salt or to taste, 1 tbsp vegetable bouillon, 1/2 tsp white pepper, 1/4 tsp aniseed, 1 tbsp Ginger garlic paste, 1 scotch bonnet chili, 1 large onion chopped, 4 basil leaves bruised.
* Boil the following vegetables: 2 Roma tomatoes, 1/2 large onion, thumb size ginger, half medium size aubergine, 1 red, and green bell pepper, 1 habanero chili, 4 more Basil leaves, 1/2 L water.
* 1 cup peanut butter dissolved into 1/2 L water
* Caramelize in some cooking oil, other 1/2 of onion, thumb size ginger, 3 cloves garlic, all sliced. Then grind all with 1/2 thumb size fresh ginger, and add to soup when oil resurfaces, or toward end of cooking.
* Give or take 1 cup water for rinsing strainer, and/or for attaining desired soup consistency.

Thank you for this! I haven’t made it since last winter. I love the introduction of some caramelized veggies! I’m sure they at a huge flavor boost. I also like your technique for blending it into the large pot, right on the spoon! No more worrying if it’s all blended throughout. Can’t wait to make this.

Hello! You can find “hard chicken “ from Walmart. It’s a whole chicken packaged in a white and yellow plastic wrap, and labeled “hen”. I googled African grocery store in Mobile Alabama and found one at this address 👉🏽3450 Springhill Ave. in Mobile, Alabama. It looks very well stocked., and you should be able to find dry, smoked fish in an assortment of carriers. Hope that helps.

I don't like the taste or smell of hen or fowl. Can I use regular or baking chicken for this recipe?
Sure, you may even fry the chicken before incorporating if you wish. That tastes great too
This is similar to Filipino dish called "Kari-kari", we use oxtail and any beef cut, some add well cooked beef trife. The only difference is our vegies: eggplant, chinese long green beans or regular green beans and bokchoy, and are not blended. I do not add beef trife, not a fan of it. We eat it with rice and a side of (option according to taste) shrimp paste for saltiness. Good tip from you, to strain the peanut butter slurry. Thank you!

Yes you can by increasing the amount of peanut paste and reducing the water

Yep! You sure can reduce the water from the onset. Or just let the soup simmer longer on stove to get the thickness you want. Ghanaians do eat it with plain boiled rice. Your family will love it for sure
