  • Nigerian Beef Stew is a mouthwatering West African stew made with blended tomatoes, red bell peppers, and habanero peppers and spiced to perfection. Learn how to make super delicious Nigerian beef stew!

    ✅ INGREDIENTS
    *To boil the beef*
    - 1 lb beef
    - 1.5 cups, water
    - 1 tsp black pepper
    - 1/2 tsp salt
    *To make the stew*
    - 3 plum tomatoes
    - 1 red bell pepper
    - 1 habanero pepper
    - 1 onion
    - 1/2 cup olive oil
    - 1/2 cup beef stock/broth
    - 1 tbsp bouillon powder
    - 1/2 tsp thyme
    - 1/2 tsp black pepper
    - 1/2 tsp curry
    - salt to taste
    ✅ INSTRUCTIONS
    - Boil beef with salt and black pepper, for 20-25 minutes.
    - Blend the tomatoes, bell pepper, habanero pepper, and half an onion together.
    - Chop the other half of the onion.
    - Pour olive oil into a pan and when heated, add the chopped onions and stir till it’s wilted.
    - Add the blended tomato and pepper mixture and black pepper and stir.
    - Boil for 5 minutes on medium heat.
    - Add the beef and 1/2 cup of stock and mix together.
    - Add a little more broth if needed, till it has enough of a stew-like consistency.
    - Add the thyme, bouillon powder, and curry. Taste for salt before adding any.
    - Cover and let simmer for 10 minutes on medium-low heat.

      Yes you can eat it with fufu. It’s usually mixed with spinach or okra.

    Can I ask, why not just cook the beef directly in the tomatoes instead of boiling it separately and adding them all together?

      The beef takes a long time to boil. Cooking it directly in the tomatoes will cause the tomatoes to burn before the beef is ready.

    How long are you letting it boil without the lid and worth the lid on?

      I cook it covered with the lid on. I left the lid open for part of the video for the visuals.

    Is it okay to make it without bell peppers?

      The red bell pepper helps to neutralize the acidity of the tomatoes. The stew will taste different without it.

      I use stew beef but you can use any beef part.

      You don’t have to use that much oil. And you can also drain the excess.
