quick and easy chicken Peanut Butter Soup recipe

Groundnut soup is the same as soup made with peanut butter. A delicacy reigning from my home country, Ghana. Its typically made by braising a choice of meat with aromatics, and vegetables, while the peanut mixture of water, and a blend of vegetables are cooked separately, and then both meat and peanut mixture are combined, and cooked again over an extended period! This soup preparation can be arduous, and time consuming. However, this recipe has made the preparation quite precise, while not skimping on flavor!
Peanut butter soup is often paired with fufu, mashed rice, boiled African yams, or even without a pairing, just on its own. Enjoy this recipe!
INGREDIENTS:
hand full of grape tomatoes (or 2 roma tomatoes)
3 miniature sweet peppers, or 1 small bell pepper
1/4 of medium size onion
small piece of Ginger
2 garlic cloves peeled
1 small scotch bonnet chili (remove seeds to minimize/curb heat level)
** BOIL ABOVE INGREDIENTS TILL TENDER AND BLEND WITH 1/2 cup peanut butter **
1&1/2 lbs broiler chicken piece, or any meat or fish of choice
** marinade ingredients are a blend of : 1/2 a medium oinon, 2 cloves garlic, 1 habanero chili, pinch of aniseed, pinch of white pepper, pinch of rosemary, salt to taste, chicken. bouillon cube, 1 heaping tbsp tomato paste**
