FAMILY RECIPE | South African Bobotie

  • Bobotie is a traditional South African dish. It has a warm and fruity flavour. Beautifully delicious.
    Ingredients:
    6 tbsp/60g Butter
    3 medium Onions, diced
    2 tbsp/20g Ground Ginger
    2 tbsp/20g Crushed Garlic
    3 tbsp/43g Brown Sugar
    3.5 tbsp/30g Curry Powder
    1 tbsp/10g Tumeric
    1 tbsp/ 10g Salt
    3 Cinnamon Sticks
    1 tsp/5g Clove Powder
    1 tbsp Black Pepper
    2 tbsp Lemon Juice
    1/2 cup/150ml Water
    1kg/2.2lbs Ground Beef/Beef Mince (lean)
    2 slices of Bread
    About 1/2 cup Milk
    1 tbsp/10g Vegetable Oil
    1/4 cup/45ml White Vinegar
    1/4 cup/45ml Worcestershire Sauce
    6 tbsp/60g Fruit Chutney
    2 tbsp/20g Tomato Paste
    1/2 cup Raisins/Sultanas (seedless)
    2 Eggs
    Custard/Topping
    1.5 cups/270ml Milk
    3 Eggs
    +- 6 Bay Leaves
    Method:
    Over a medium heat, melt the butter, then add the onions and saute, stirring occasionally. When the onions are soft/translucent, add the ground ginger, crushed garlic, brown sugar, curry powder, tumeric, salt, cinnamon sticks, clove powder and pepper and stir well. Turn the stove down to medium to low heat. Add the lemon juice, water and ground beef/mince and stir well. Close the pot and cook for 10 minutes.
    Set your oven to 180C/356F.

    Remove the crust from the bread and soak in milk, then strain. Add the bread, oil, vinegar, worcestershire sauce, fruit chutney, tomato paste and raisins/sultanas to the mince mixture and stir well, combining all the ingredients. Still on a medium to low heat, close the pot and cook for 10 minutes, stirring occasionally. Then turn off the heat, and place the bobotie into an oven-proof dish, omitting the cinnamon sticks and as much of the liquid as possible. Whisk 2 eggs and pour over the bobotie, and mix a little, as this will solidify the bobotie. Cover with foil and bake in the oven for half an hour.
    To prepare the custard/topping, whisk the milk and eggs together. Remove the bobotie from the oven, and pour the custard over, then spread the bay leaves on top of the custard. Then bake uncovered for 25 minutes, until the custard has set or is lightly browned.
    Remove from the oven. You can serve with yellow rice, mash, roasted vegetables, potato or green salad.

    Oh Mel I didn’t know that kitchen. But this is the best looking city I’ve ever seen. My mouth is salivating and I’ve only eaten Curry from Japan, India, & the kind I make at home. I’ve never seen the type of curry you make. It looks so good. I just figured out this is from two years again.

    I'm going to try this mel. I don't have any chutney. The keto version calls for berries. Might try that in your recipe along with some chicken flour bread.

    I made bobotie last night. It was delicious! May I suggest putting down ingredients list for spices, sugar, salt and liquids in teaspoons, tablespoons and cups. Much easier to measure.

      It turned out fabulously! Although I couldn't find chutney in time (I've ordered some via Amazon for next time), I dropped in some apricot jam as a 'quick fix' and the meal was so good I'm now homesick :)

    What an exotic blend of flavors 👩‍🍳, looks so rich & savory. Over 40yrs ago, I had the sweetest friend from Johannesburg, South Africa (you remind me so very much of her). Anyway, her family, who still lived there, used to send her baggies of the most delectable curry powder I've ever tasted. I've never found any, that was anywhere near as fragrant & delicious. 🤔 Oh, to know what spices were blended in that African curry powder. Thank you for sharing such a beautiful dish 🫶
    PS: I've always thought you were a food sorceress...the magic ingredients appearing at the snap of your fingers, just verifies it😂

      Oh the Curry powder is absolutely amazing. I have to make my own but I made so much last Tim it's lasted me 5 years them I lost the recipe moving countries. Pfft. One of the main reasons I got back to South Africa is for the food but I haven't been back since Keto. When I find the recipe I will surely send it to you 🩷🩷🩷🩷🩷

      ​@@CookwithMel1oh my gosh, thank you...hope you find that spice recipe for both of us😂...yours is bound to run out, eventually😢😅 I guess most blends, that are readily available, are more of a base from India. Yeppers, as for this recipe itself, I started off going 🤔ok, I could swap this for this & that for that...😮then I said OH FORGET IT, I could feel my blood sugar rising just watching 😂😅...guess starting w/3 whole onions should have given me a clue! (& then your drool worthy sides: carrots, mashed potatoes, & rice- Oh the Good Old Days🙅🏻‍♀️)
      😂😅 But it was a beautiful casserole💜

    Question. If I cook the meat portion of the recipe the night before, can I use that the next day to cook the remaining portion of the recipe?

    BTW, this recipe came out great! How would I cook this with lentils instead of minced beef.

      That's awesome, my family love it too. You would need to use soft lentils either from the can or boil until soft.
      The cooking time to brown the meat would be reduced.

      @@CookwithMel1 I won't be using any meat, just the lentils. Can I cook with only lentils? If so, would I still cook the lentils for 10 minutes as per the instructions with the meat?

    Try your carrots with about 2 T. brown sugar and the juice of half a lemon... salt to taste..

    The mash was a bit odd….dried herbs
    ?? Surely that will be chewy? I have made this dish many times before…introduced to it by my SA friend many years ago…..I have never seen it made like this before, unfortunately this recipe isn’t for me or my SA friends. Oh dear….thing is you can’t please all of the people all of the time, in my opinion this recipe really needs some help.
