I make the vegetable stock cubes myself. They last a long time and can be taken from the freezer at any time. I take carrots, leeks, onions, paprika, garlic, celery, parsley, dill etc. I simmer the vegetables in a pan with a little oil until soft (they will release a little water, no need to add water). At the very end, I add the greens and a little salt and turmeric. Then I puree it with a hand blender and put it in the freezer for a couple of hours in some form. Then I cut the cubes I like and store in the freezer.

Another you made me hungry again video! I have some chicken broth I just made and dehydrated for the first time. It turned out great! I still need to grind it and put it into a jar that I’ll vacuum seal and use as bouillon after I mix with garlic powder and other spices. I’ve been saving onion peels, carrot peels, celery trimmings, etc. in the freezer to make veggie broth. I’ll cook that low and slow and eventually make veggie bouillon from it. Not sure if I’ll make beef yet because we don’t eat much beef anymore. Now you’ve given me more ideas with the cranberries and soups! I think I’ll be busier than I thought! LOL. Thank you Elizabeth! Beets would be ok in the soup too. My mom makes a yummy red soup with the red beets, potatoes some carrots. And at the end we add some sour cream to it. It’s like a Russian borsch - but from Romania. 😃

I love making butternut squash soup! I make it a little different every time. I stopped adding in milk or coconut milk to keep it healthier. Just slowly add in broth until it is the desirable consistency.

Did you know that you can use the green tops of the carrots to make pesto out of it. Just substitute the tops for the basil if you do not have any…or can combine a mixture of tops, basil and fresh spinach. Also, you can make hummus out of any nut butters, even peanut butter. I bet those beautiful beets would be good with some hummus, topped with roasted pepper, feta cheese( saw Jacques Pepin make this). My father and I use to just peel raw turnips, slice them and sprinkle them with S&P. Eat them just like that. Can beets be eaten raw? I love them pickled or just sliced with fresh orange sections and pecans in a salad. Add in a few pomegranate seeds and add your favorite dressing. Oh so good.

Hey there! Thanks so much! There’s not a lot of ways to repurpose them because once they’ve simmered they lose their flavor and nutrients because it all goes into the broth if that makes sense. Maybe we could compost them 🤔

Actually the broth is the solution to food waste if that makes sense! Instead of throwing out soggy celery, carrots, etc. you use them to make broth. I did throw the soft veggies to my chickens…other than that I’m not too sure. Do you have any ideas?!

That's wonderful!! Broth should be good for 4-5 days. It also freezes really well in large silicone trays!
I like to cook potatoes in my Instpot for making mashed potatoes.

Yes, that’s what I do too! If you use them frozen it’s has the wrong texture so just thaw them in the fridge first then you’re good 😊

For the cranberry orange relish can you use brown sugar? Coconut sugar is hard for us to find.
Absolutely! White sugar also works just as well. Use what you have on hand 😊
