    It's called peas because in Jamaica we call kidney beans red peas. So if u show a Jamaican some kidney beans and asked them to tell you what it is, they would say Red Peas. Hope this helped :)

      It's very similar to how in America, we call fried potatoes "fries" versus the English that call them "chips." Just different words for the same things.

    In the Caribbean, there is a bean that they call "pigeon peas". It is often just shortened to peas in recipes.

      As well, depending on where you are, rice and peas is made with the pigeon peas, or the red beans and it's referred to as the same thing. Some places with call it red beans and rice. Caribbean language is very relaxed.

    What you should have done is poke it before you rubbed the seasoning over it. This will have allowed more of the seasoning to penetrate deeper into the chicken. You should also have rubbed some seasoning under the skin

      But he was poking the seasoning into the chicken, i dont think (haven't tried, it's just my thought process) much of the seasoning is gonna go down those holes without getting poked there.

    I know that in Jamaica, we dont call Kidney beans by their real name, we call them 'Red Peas' and as such, call the dish 'Rice and Peas'. There is also a soup called 'Red Peas Soup' made with kidney beans. Rice and Peas can also be made with Gungo Peas (Pidgeon Peas).

    Don't know how I lived without this for so long! I make dog food for 2 of our dogs ruclips.net/user/postUgkxG-7WiT7ocumjytOpHDFt632PL0pxXRAg (we have 5!) and it is so much quicker in this. Love having the inner pot stainless so I can use my immersion blender right in it without worrying about scratching. It makes potatoes great and fast! Still working on the vegetables, first time came out great, second time I did different ones and they were a little too mushy. Just need to adjust the time. I highly recommend this pot!!!

    PLEASE make more recipes where you cook every part of the meal at one time! I love being able to lessen the total prep/cook time, and having everything ready together (instead of rushing to prepare multiple dishes).

    The way chicken was placed on top of rice while cooking in the oven is the best part , all the steam, the flavours from chicken to rice and then from rice to chicken makes an amazing delicious taste, loved this method .

      Kidney beans has just found its way into Jamaican cuisine. I too don't understand exactly why but it tastes good with rice.
      Lol next time pre-season the meat overnight and let it marinade.

    I purchased Nando's perri perri sauce online to make at home here in the US. I watched this video and both of the Nando's videos from sorted multiple times each. I had my butcher spatchcock the chicken for me and cut slices in the chicken rather than poke holes before marinating overnight. Otherwise I used this method. Dear God what Amazing rice! So creamy and delicious the flavors of the chicken married with the rice and peas so perfectly. I love it all so much. Thank you Sorted.

    Made this for the tea tonight and turned out so good! Rice is amazing and chicken looks scarily burnt when you take it out but tastes amazingggg. Will definitely make again soon and highly recommend!

    Easiest crispy baked chicken wings:
    Marinade in yogurt and hot sauce (harissa, sriracha) for 2 hours-1 day
    Rinse off marinade, place wings on wire rack and pat dry.
    Season wings with black pepper and paprika, and place rack in a baking pan lined with foil for easier cleanup.
    Bake at 425 F for 45 minutes, serve with your favorite sauce.
    This technique gets you perfect results every time: crispy skin and juicy, tender meat that easily pulls off the bone. Thanks!

    My favourite way to cook chicken is mediterranean inspired. It is oven roasted chicken thighs (you can also use the whole leg if you want), seasoned with salt, pepper and olive oil and then mixed with chopped olives, chopped rosemary and finely diced whole lemons, with the peel and all. Then simply roast it in the oven at about 180-200 C, until the chicken is cooked through. It gets a lovely earthy flavour from the olives and the rosemary, which is perfect in combination with the zingy taste of the lemon peel and the juice from the roasted lemons.
    I would love you guys to make this one day for the community, so easy, simple and delicious. It's perfect with a creamy mushroom risotto.

    Do not know how I missed this one. I’m a good Irish Canadian with Jamaican roots who grew up with rice and peas as a main staple of Sunday roasts. On my long dead grandma’s grave I’d give the rice and peas a go. Jerk chicken was never a think in my child hood but I do like the idea of letting the drippings of the chicken drop into the rice. Curried goat, ox tail, stew fish or good old roast pork with Carl’s to sop up the dregs is the way to go.

    Wow, you guys have amazed me once again! Great job! I'd love to see you try West Indian/Trinidadian curried chicken. I often make it with channa (chick peas), potato, pumkin talkari, amchar mango talkari & basmati rice. You can omit the the mango and pumkin if you want to. It's delicious all the same!

      One main feature of traditional food is the personalisation, you do what you want. The ingredients are seasonal, whimsical, "there was this vegetable in the market to day so I chucked it in".

    The way they cut the chicken is called "butterflied" here in the US. I love cooking a whole chicken that way. I save the backbone, giblets, and since no one eats them in my house, wings, for both. I put it all in a bag and into the freezer, and once I have about the parts from three chickens, put it all in a crock-pot and cook for about 24 hours on low.

    I go with a really simple seasoning combo when I roast a bird. I use salt, pepper, herb blend, then I smash some garlic cloves and put them under the skin, quarter a white onion and put that in the cavity. I then roast it on a rack over a bit of water in the pan so the bird is also steamed. It produces a really moist chicken.

    My household's favorite chicken recipe is taking bone-in skin-on thighs and rubbing a mix of grated garlic, oil, salt, and smoked paprika (LOTS. Like 3 tbs) onto the chicken and then placing them on a rack over sliced potatoes and onions. Its a tweeked version of Alton Browns favorite dinner. :3

    I like to make my jerk marinade from scratch. It enables me to tailor the level of spice for certain people in my family. Though I have never cooked a chicken the same way as you guys have done in this video, I still believe in using fresh lemon juice to wash the chicken with first. Not only does add flavour, which you made up for using the lime zest, it also kills any bad bacteria which could make it through the cooking process. I say could, and the chances of it happening are minuscule, but you read about food poisoning from incorrectly prepared chicken and this extra step can minimise that.
    Washing a chicken in lemon juice is a practice that most Jamaican people, and people with Jamaican heritage, I know do. I think it is partly based on fact, for the reasons on why to do it, but also culturally ingrained from parent to child. I know it was for me.

    My favorite chicken dish is "Poulet a l'ail" from Guadeloupe. Rub chicken parts with garlic and cayenne, put in pan, squeeze lime juice over, add water until until the chicken is about half covered in liquid. Cook on medium high, turning occasionally until the pan is almost dry. Add a cup or so more water and scrape up the pan drippings to make sauce. I swear it is transformative.

    Every different chicken type has a different best recipe to me. A full chicken done with a jerk rotisseries is delish. Chicken Breast flattened out and in a sammy is great. Chicken Thighs is a butter chicken. Wings and Legs as a Korean fried chicken, oh my!

    I've found the best way to cook a spatchcock chicken is on the barbecue! Get a kettle grill and cook it for about an hour to an hour 30, ideally around 200/180 degrees. This leaves the chicken super moist! Tandoori chicken is a must!

    In the Caribbean they use pigeon peas with their rice. They're not actually green/garden peas, but a type of bean (like a smaller version of a kidney or pinto bean).

    Hey guys! This looked amazing, so I tried it out for dinner tonight and the chicken was amazing, but I had some trouble with the rice! I'm not sure if I used the wrong rice, but when I took the chicken out after 40 minutes the rice was still crunchy... I ended up having to cook it kind of like risotto by cranking up the temp in the oven until the liquid was bubbling and adding more and more chicken broth until it was absorbed and the rice was soft (like 25-30 minutes later). I used long grain white rice, is that wrong? I would love to know because it tasted incredible!

      it might be your oven or some other factor (not enough liquid, didnt pre-wash rice, etc). in my case, my oven is temperamental (read: psycho), so my chicken was done in 40 minutes, my rice (just regular long grain Thai rice) was still firm and almost out of liquid. i took out the chicken, added another cup of hot water to the rice and covered it with foil (my pyrex has no lid). i didn't change the temp. keep the oven closed and check after 15-20 mins. if you keep opening and closing the oven door to check or stir, it will take for-freaking-ever to cook rice.
      if you have a rice cooker, you can just bake your chicken in the oven with a tray under to catch drippings.

    Ex nandos employee here. You need to crack/ pop the joints and the back for easier eating! It helps cook more evenly too since it's flatter!

    To add to songlyrics explanation about why it's called rice and peas is also because in the older days rice and peas was made with pigeon peas or a small type of peas that looks a lot like kidney beans but they are not. Now though most Jamaican's use kidney beans to make their rice and peas. Interesting way to make your rice and peas by the way but not very Jamaican, we traditionally don't put chicken stock in our rice and peas, just coconut milk, thyme, onion, garlic, salt and pepper, a nice unbroken scotch bonnet pepper, and a piece of salt pork, last one is optional. Kind of reminds me of how they make it in Trinidad minus the beef.

    Simple chicken thighs/wings with a rub of your choice (I use a small amount of liquid soy sauce+lemon juice with a paste of chilli, fresh garlic, lemon zest and lots of pepper+[optional]paprika) oven-roasted/pan-fried with a bit of peanut oil for a while... I don't look at the time, I just poke at it when I feel like it's about done.
    I prefer the roasted wings, simply cuz the charred marinade mingles well with the wings and they make great party food, LOL.

    In Jamaica, we call kidney beans red peas. So if you show a Jamaican some kidney beans and asked them to tell you what it was, they'd call it Red Peas.

    Pea is considered as vegetable (as they are green) as it has higher fiber contain than starch or sugar. In bean or nut, are considered as grain cause of their high starch and sugar content

    That jerk chicken is absolutely marvelous. It's got an amazing result. I'm gonna make it. Promised! As soon as temperatures go down in Madrid, I'll make it.
    As for the word "jerk" there's something else about the word, isn't there? But since the meaning can be rude, I'll stop here and say nothing else about it.
    Regarding what's my favorite part of the chicken and how I cook it, I particularly like thighs and I cook them with a lot of different types of peppers (red, green and yellow) as well as onion. Delish!

    I like to make chicken teppanyaki(?) and add different vegetables every time. But basically chicken filet sliced really thin with garlic and union cooked with wok oil and soja sauce

    Instead of using long-grain, use parboil for the rice. It works better. And to make your rice BANGING, use black eyes peas and pigeon peas.

    My top chicken recipe is pretty much what you just did but no jerk and potatoe slices instead of rice. Plain roast chicken and lovely potatoes flavoured by the chicken drippings. Mmmm

    My favoriteway to cook chicken is on the BBQ. I marinate the legs on soy sauce, rice vinegar, korean cili flakes fir 2-6 hours or overnight, I dry them the next day - salt pepper and brown sugar and grill! I serve with tempura mushrooms and roasted asparagus

    I love having crispy, fried chicken that my dad makes with roast chicken leftovers (roast chicken made delicious simply with a lemon).
