- Опубликовано: 17 май 2024
- Welcome to Open Fire, where we explore the various ways different cultures cook over live fire, as our host Cara Nicoletti, a fourth-generation butcher, learns the craft, practice, and philosophy of each dish.
In this episode, Cara meets with chef Junior Felix from Glady’s in Brooklyn to learn how to cook his famous jerk chicken. This chicken is marinated for 24 hours before it’s grilled over oak and pimento wood and finished off in a smoker, resulting in a dish that’s truly the flavor of fire.

That chef seemed so genuine and interested in perfecting his craft for the people! Enjoyed it!
An extremely proud and hard-working dude! Clearly loves and respects his food. Bless up!
Jerk is one of the greatest preparations ever period.
also a great movie!
You can tell this man loves what he does. Ain't no way that food won't taste amazing. He could probably season the meat with water alone and it would still taste delicious!
As a Jamaican, you had me when I saw it was cooked over a wood fire 🔥
As a Jamaican I wonder where this chef is from. He's not Jamaican. That being said, he's cooks like a Jamaican.
@@grimori Yeah, I had that thought as well....I think I'm hearing a Trini accent...?
@@janiceandthomas you've got a good ear. He might be a Trini who is suppressing the accent.
The only jerk i recognize. Pan chicken is trash
Plus jerk sauce in the eye
this guy didn't even break a sweat standing next to the fire

it was 55 Fahrenheit when they cooked outside

The pimento tree is believed by some to be the tree of Life as the bark that naturally peels has health benefits, the berries to make liquor and pimento spice (allspice), leaves are full of health benefits, and oils produced When burning as wood is used on cuts and other things.
Glady's is AMAZING. My gf works across the street and we've been there a bunch. The chicken is obviously incredible, but don't sleep on the pork or the curry goat either. Extra spicy slaw, rice and peas. A painkiller to wash it down. Excellence. I'm gonna try the pepper shrimp next go round.
Nathan Simpson Where is this located?
It’s alright
Too much hype imo
@@fazlya.9488 why is hype a factor of their final product for you? genuine question. Can't understand why some people see hype (impressions really) as a negative factor in a product that isn't designed, created, or dependent on the amount of "hype" it gets.
@@hellaBayAr3a That's not really what people mean most of the time though. He isn't lowering his opinion because it has too much hype, he's saying that it's over-hyped because his opinion is low.

I love how he cooks . He is constantly tending the fire or checking the temp of the flames . He is cooking with love . So much care is put into his jerk chicken .
Jamaican food is something else, so much flavour and love put into their food. Much love to Jamaica 🇯🇲
I am Jamaican and I can attest that all the islands in the Caribbean got great food. The food in the Caribbean can go toe to toe or even best other regions when it comes to food. Absolutely amazing. Cuba, Jamaica, Trinidad, Puerto Rico, DR, Barbados, Antigua, Haiti etc. The Caribbean is the bomb.
Stewy 1156 I believe it. Been to Jamaica and trinidad and their food were both a-ma-zing!
MMM...you had me until cuba lmao the rest of them can gwan....lol
Check out the Moroccan cuisine..its is super rich with many dishes!

I love the open fire series of munchies. Upload more videos.
If I'll ever get married, I want a wife who's as crazy over food as Cara. She is so cool and down-to-earth and just a marvelous human being. The open fire series is awesome!

Cara is a natural at this......easy to watch, and a great host
I really enjoy the passion
Wood fire is where it's at! I always remember having the Jerk chicken and pork in Negril. The best I've tasted.
Great video.
The flavors here are WONDERFUL...
The best jerk chicken and pork that I’ve ever had was in Montego Bay, Jamacia at a place called Scotchies. They use pimento and sweet woods and is seasoned to perfection!
Tonio Yendis omg I went there too! Got their rice and beans then went next door to get some beef patties! Soo good!
The jerk and the streamed fish was to die for at scotchies!!
Scotchies is amazing. I was so lucky to eat there. The chili sauce screwed me up so bad, but it's so incredibly good.
Tonio Yendis love them
Detroit Aggie if you died how would you eat it?
Have you ever gotten jerk sauce in your eye. Lmao! Buddy probably wanted to laugh or say something. I bet after she asked the question she realized how it sounded.
If he was really Jamaican he woulda said Fiyyyyahhh ffffiiii datttt!!!!
yeah she laughed later and mentioning his eye
Awesome Segment!! Give this man his own cooking show!!!
Liking the new series, can't wait for more.
Cara is a dope host. Hope to see more from her
are you being sarcastic?
@@etf42 How does that even remotely appear sarcastic? I genuinely like her.
She rlly is tho
IMO Im not a fan of her, she doesn't seem to know how to cook which translates to lack luster commentary
ludame well clearly you haven't seen her in other videos because she is an amazing chef
Love the host! Looking forward to more
I didn't realize how much I would enjoy 2 chefs working together

Did you try it?
My 1st time to Jamaica Negril on the road away from all the 5 star hotels ,they setup bbqs for lunch. For 5 U.S. you got a red stripe beer, jerk chicken and some sauce with coco bread. I have been hooked ever since. Like he said U never get tired of it. Make your own jerk sauce (control the sugar and salt) Enjoy.
I have heard a lot about it. Would definitely like to try one day.
My only experience in Gladys was terrible. Half the menu they were out of. And the wings were undercooked. I went in January around 2pm.. But after watching this, I'll give it another try. Good vibes in this video.
Corey Singleton That sucks. Hope you have a better experience.
Am I the only one who thought that the chicken was still raw in the middle when he cut it?
Coming from a Jamaican this was very well done
Chef Junior Felix is a joy to see in action and a listen.
These two had great chemistry!
If the cooks name is Junior, Winston, or Trevor the jerk is guaranteed to be the bomb 😎
TMac out here killin that jerk chicken!
This place looks amazing!!
Absolute perfection.
I've never seen a immersion blender this big before xD
It's like half fire grilled and half hot smoked and it must be delicious

Absolutely perfection as a uk Chef I can now show my Boss why we need a burner not a oven thanks guys 😀
Vincy girl here! Love jerk chicken but since i came to Ohio and visited some restaurants that serve it there version is to bake the chicken then add a jerk seasoning. Lol i keep telling my friends Jerk is a process.
Bless their hearts.

Describing food as “sexy” is so legit. Sometimes you have something that is so good you just gotta bust one.
When the meat is cooked to perfection, you just gotta pay a visit to lotion city.
I bust when people mention food.
uuuuuUUUUGGHHhhh
God mode! Actively creating the smoke flavor. I've been trying to master this for awhile. Watching thai street vendors grill meats etc... they all fan their grills.. I think that action plays a large part in moving smoke onto the meats.
YEA BOY!
"Someone get that girl a shirt" - Black Panther
I was waiting for the Ainsley “spicy” meme. You can’t have jerk chicken without smiling seductively, flicking your tongue and say “spicy”
And you also have to make sure to give that meat a good ol' rubb.
