    My name is Kiki, Im a 37 yr old mom of 2 and wife. I used to be almost 70 pounds heavier than I am today and full of health problems. After trying every diet out there and failing to maintain anything long term, I found my way to a whole food low fat plant based diet, and everything changed. Weight started melting off my body and my health problems like high cholesterol and blood pressure, along with being pre-diabetic, all quickly disappeared. Now I spend my time helping others see how simple and sustainable a whole food low fat plant based can be.

    Recipe:
    Ingredients:
    ● rice paper sheets
    ● lettuce
    ● cucumber julienned
    ● carrot julienned
    ● mango sliced
    ● sprouts
    ● Red cabbage
    ● Low Fat Thai peanut sauce:
    ○ 4tbsp powdered peanut butter
    ○ 1 tbsp low sodium soy sauce (optional, I leave out because it’s too salty)
    ○ 2 tbsp water
    ○ 1 tbsp lime juice
    ○ pinch of ginger, fresh or powdered
    ○ Maple syrup or stevia to taste (optional)
    ● Nut Free soy ginger sauce:
    ○ 2 tbsp low sodium soy sauce or coconut aminos
    ○ 2 tbsp water
    ○ 2 tbsp rice vinegar or seasoned rice vinegar
    ○ 1 tbsp maple syrup (or to taste)
    ○ Pinch of fresh or ground ginger
    ○ Pinch of chili flakes (optional)
    Instructions:
    Prepare the dressing by mixing the low fat peanut dressing ingredients together or make the ginger soy dipping sauce by mixing those ingredients together.
    Fill a wide bowl with warm water, place a rice paper sheet in warm water to soften. Once softened, pull out and lay flat on your work surface. Lay down lettuce leaf first then add the rest of the ingredients. Fold right and left sides in first then roll like a burrito. Enjoy with Thai peanut sauce drizzled over the rolls or dip them in the soy ginger sauce.

      Yes! It was watching kiki's YT channel that made me go I can do this. Kiki's meals/recipes are so simple I wasn't overwhelmed. I knew I could easily prepare and cook these meals, plus they are tasty.
      Particularly when I am the only plant based person in my family. Slowly introducing more plant based only meals to my family, but slow process so I don't have a mutiny on my hands.

    Chef AJ- I am a recent subscriber and I ordered 3 medium bottles of the balsamic (teriyaki, habernero, and ginger) and they sent 2 samples (fig and pear).     In case anybody who listened is curious, you definitely do not have to wear goose down items, used or new, in a cold climate such as Colorado. There are many lightweight and warm alternatives these days. I live in Montana which is much colder than Colorado and am outside most every morning throughout the winter without wearing goose down.

    Omg I watch Kiki all the time I have been doing wfpb I haven’t lost too much weight and this is so eye opening with the peanut butter and avocado ... I’ve been so hesitant on letting those go thinking for sure I could still lose weight.

      I have been WFPB for several years, and was not losing weight....until I cut out the nuts, olives, oil and avocado. Even now, eating low calorie density the weight coming off very slowly...like 1-2 pounds a month...but at least I am off the plateau. Don't compare yourself to others who have more dramatic losses, everyone has a different journey. Enjoy yours.

    I just found Kiki on Sunday or Monday and her explanation of how to eat ny your plate is SO GREAT! 50/50.     I appreciate you ladies so much! Chef AJ really helped me to understand that eating more veggies was HUGE in helping with weight loss. Previously I had tried mainly fruit and was not having much success. I love how simple Kikis approach is also and that really helped me in realizing that I could keep things BASIC. In a single working mom so that has made all the difference!

    Chef AJ, can you do a video on how to balance hormones too especially during menopause? I'm adding flax seeds on my porridge for hormone health but I guess this ritual during weight loss wont help.

    Cut the organic tofu like French. fries put it in the airfreight and crisp them so delicious you got to try it. I put hot sauce on it its almost like eating chicken wings 😘 very good.

But because I’ve adopted this way of eating as a true lifestyle change, and I truly LOVE eating this way, I know I’ll keep it off this time. You can do this! Keep your environment clean (don’t have junk foods around the house); always keep in mind WHY you want to make this change; and find support.

    Oh please I need some help. I have a big problem with histamin, so there are soooo many cool things I can´t eat (Beans, lentils, soy, a lot of frutis, cacao, tomatoe, etc.) AND a lot of good things to spice the veggies up (no citron, no mustard, no curry, nothing hot, no soy sauce, no garlic, no onion-powder, etc.).Anyone else here and anyone any tips how to get a flavour to the things? I just can use salt, a liiiitle bit of non hot paprica powder an some fresh herbs. An so everything tastes the same and boring and my salt intake rises again....

    Plentiful Kiki read Starch solution, copied recipes from Mary McDougall and Chef AJ and now launched a program with High Carb Hannah and both are making money of every body else’s efforts. High Carb Hannah’s recipes are 80% copies from Chef AJ. This is insane. Additionally, I have seen her recipes and she adds salt, uses products with oil etc. I am not sure if she is really preaching what she practices.

      I think all of the plant based doctors, influencers, etc. have a lot of the same things to say. They say it in different ways and relate to each of us differently. I follow her videos and I always hear her giving credit to the person or place she learned from or was inspired by. Also, a lot of the plant based people start groups and charge a fee for access to them. Social support is huge and if people think that it's worth it, they should have the option to join those and pay if they value the experience. I, for one, certainly do.
      I have the program you are speaking of and it definitely took work to put it together, create the videos, and keep it going. It has a community with a great vibe. Same as any other program to purchase.

      I would not have transitioned to wfpb if it wasn't for plantiful kiki videos. Plantiful Kiki always gave credit to Dr Mcdougal and recommended his books in her videos. She never once said she is salt free as Dr Mcdougal allows salt in his program. Plantiful Kiki is oil free though.
      While I love and respect chef aj and what she does not everyone can be sos free. I am beginning with no oil and no flour products, that's enough to cope with for now.
      I think everyone is grateful for all the people who are a part of this movement and inspiring people just like me that thought it would be too difficult.
      Also Plantiful Kiki is just such a kind, joyous person - such a great vibe.

    I love Kiki. Her home is so pretty, her mountain lifestyle is fun, and I was surprised to learn she is in her late 30’s and has two kids and has been married for 17 years. This was a great interview....seeing a more candid side of Kiki.

    Love her so much! It was a God send when I found her. She got me back on track after letting family influence my eating. I knew better and was feeling sooo bad about myself, un healthy , overweight!! Never again!!! Watched all her videos and chef AJs. High carb Hannah. Keeps me motivated. Love you all and thank you for all you do!! I owe you my health ❤️❤️❤️❤️❤️❤️
