    I love her! She is so young and so mature. I too have found that cooking potatoes at 375 degrees work better for me to avoid the burnt bottom of the potatoes. Very helpful video. I so appreciate these interviews. that you are doing Chef AJ. Thank you 🙏

    Thank you, Potatoes are the best and you ladies are too! I never thought about freezing the cooked potatoes as an option (not sure why, hello oil free hash browns in the freezer section!) but think it’s a great idea for anyone who has freezer space. I also don’t generally care for the orange sweet potatoes but recently discovered I can mash them then mix them with rolled oats and cinnamon throw in my silicone loaf pan to bake into a quick “sweet”bread great for on the go satiety, also recently learned they make a pretty yummy pudding with minimal additional whole food ingredients. So they have redeemed themselves for me after years of buying any potato but them if I had the option.

      Jenny, for your sweet bread do you use only rolled oats or do you pulverize them first into a flour? What temp and how long do you bake the loaf? Also, I have classic baking pans and haven’t yet baked anything since going vegan so wondering if they’ll still work maybe if I line them with parchment paper, or would you recommend I just get silicone pans? Thanks for the feedback.💕

    1. Preheat oven to 375F
    2. Poke potatoes all over with a fork, or cut off tips.
    3. Bake potatoes directly on the oven rack.
    4. Allow potatoes to cool, then refrigerate overnight.
    5. Reheat and enjoy!

    I don't want to turn my oven on on the regular. I just wash them, put in crock pot on high for 1 1/2 to 2 hours with a very little water in the bottom. No holes to poke, no exploding and none of the flesh sticks to the skin.

    This was SO informative and you answered so many potato questions that I’ve had! Also, I LOVE that Kurt Cobain quote and wrote it down, I find it so relatable being vegan and a strong, independent woman who enjoys being single and who doesn’t want children💛 Also love changing the conversation when someone comments on appearance, you’re so damn right that the way we look is the LEAST interesting thing about us. 💛💛💛

    I discovered an easy & quick way to make "baked" potatoes, or "oven" potatoes, without an oven. Simply microwave them until tender, [about 3-4 minutes]. Then put them in a skillet to brown, but don't forget to cover the skillet. This will trap any moisture, & make the centers moist.
    Don't forget to turn the potatoes several times, to brown up all sides. Browning takes about another 5-10 minutes. So this method, takes only around 8-15 minutes, vs 30-40 minutes in a hot oven. Also with this method, one doesn't need to heat up the kitchen with a hot oven on.
    One stabs potatoes, to make vents for the water in the potato, that turns to steam when it's heated, to get out. If the steam can't get out, it will build up, until the pressure causes the potato to explode.

      I do 2 minutes, flip them and another 2 minutes. They should feel soft and parts of the skin looks loose. Do a few more minutes if they need it.
      I was doing the smashed potato style, but now I like cutting them in half, then skin side down on a pie pan and with a fork, I'll press into them(like making those crisscrosses on peanut butter cookies). Brown up in a toaster oven, air fryer, etc. Top with your favorite seasoning.

    I cook my potatoes and sweet potatoes in a covered skillet on the stove top on low.
    One gets steaming, baking and conduction cooking in that order with excellent results.
    I quarter them beforehand and start rotating cooking surfaces when they've dried.
    Cooking time is 15-20 minutes depending on temp and surface turn rate.

    What a wonderful interview with such a great, like-minded person! I love Emmie's passion and dedication to eating such a healthy WFPB diet from the young age of 19!!     Also another tip for cooking all potato varieties that makes them absolutely amazing is an Insta pot. I’ll never go back to an oven again for potatoes. Cooks the potatoes in half the time and they come out perfect every time.

    Dried Mint on the Hawaiians. Murasakis as well. Nam Hai is my local Korean drop. They have Hawaiians, Murasakis, Purple Sweets all day. Nabbed up $300 worth of these three potatoes the other day. Good for a month 👊🏼
    I’m in possession of Purple Sweets literally the size of small tree trunks. Some are 8lbs. Serious.

    I went to a local Asian market to look for japanese sweet potatoes. The package does not say they are the japanese variety but they look like them. Fingers crossed!

    I steam all my potatoes and sweet potatoes whole in the instant pot and keep in fridge. They are so much quicker in the air fryer after cooking the first time.

    When I was eating 600 calories of steamed mixed vegetables (heavy broccoli, purple cabbage, parsnip, rainbow carrot) for breakfast, I was pulling my tanker over and running for an hour, with my mouth closed, just GETTIN it. After an hour I thought, “How much TIME do I have for this?”
    Not producing any sweat. The greens are literally insane. I’ve dialed my diet back to 70% potato (Murasaki, Okinawan/Hawaiian), 30% veg. No fruit for now but I’ll be bringing a watermelon into this party for dinners soon.
    I just got the damn bananas out of my life and brought in heavy sweet potatoes.

    I absolutely hate sweet (orange) potatoes. I have been trying to figure out how to move to this lifestyle and survive w/o eating sweet potatoes. It's good to hear there are other options and that, apparently, those other options are even better than the sweet (orange) potato. If I can find these other potatoes, I am going to try them and see how I like them. Of course I like the white potato and those are easy to find, but all I hear about in this WFPB way of eating is "sweet potato, sweet potato, sweet potato". So good to know there are other options. :)

      Am 73 and have been eating WFPB SOF free for 6 healthy years. I really didn't like sweet potatoes either. Don't eat anything you don't like if everything else you eat is healthy. I LOVE white potatoes. But we did buy an air fryer and I do like mashed sweet potatoes browned a little. I usually put blueberries on top.

      Haha, same! The orange ones just doesn't do it for me. And just know, even if you can't find any other type of sweet potato, there is really no "need" to eat them - no one food is "magical" and something you have to eat, just find the things you like and eat those :) regular white potatoes are a fabulous food, so if you like those, eat them to your heart's content :)

    I'lltry the purple sweet potatoes again. I think I have been getting duds, dry and cardboard tasting in my opinion. I even steamed them and still not good.
    My mother in law is from Peru and we almost exclusively eat orange sweet potatoes. I have found that if you air-fry them at 400 whole with the skins on for about 50 min for medium potatoes and let them get a bit chard on the outside they have the most delicious maple sugar flavor. if you do put them in the fridge they are very mushy but I still think they taste great. Overnight in the fridge, they develop a liquid burnt sugar flavor that you get from flan. Truth be told they almost never get to the fridge. We eat them as dessert.

    The Potato absorbs the chemicals in the ground as well. Organic is always best whenever you can.
    I have the Instant Vortex Pro air fryer by Insta pot and it’s a lot cheaper and I love it. I have the 9 in 1.

    Good interview gals :) Ill have to try some different sweet potatoes. Ive only had the regular bulk style sweet potatoes. The purple ones are so pretty!
    QUESTION- how do you get them to taste good to people who just dont like sweet potatoes?? - my husband hates them with Passion!!! I dont mind them but need to get my tastebuds reset apparently. #workinprogress

      Best way is to bake them all on Sunday and keep them in the fridge and freezer and then microwave them ;)

    In the dried-foods section. That’s where the dates have been. Sucks. Have to go w raisins and PRUNES because they’re just not as good as dates. I mean, who the hell eats prunes. Whatever.
    What a tragedy - the date. There’s basically no point.
    Maybe I can work myself into a situation where I actually have the NEED to consume 10,000 calories.
    What would that be? Am I going to overthrow the government this weekend? Oh, I’m NOT? Guess I don’t need dates in my shopping cart this time.

    The reason a potato explodes is because the liquid in the potato heat up and becomes steam. The steam expands and needs a way to vent or it will explode.

      Potatoes must be stored in the dark, with no sunlight getting to them. It is sunlight that will make them turn green.

    When you refrigerate your starches for at least 24 hours, the starch becomes a resistant starch, which bypasses your small intestine and is digested straight through your large intestine. This process reduces your starch consumption by about 80 percent according to the studies I've read.

    (Abby who hacked husband's youtube ) Just looked up info on cooling and reheating potatoes. Healthline article stated that the starch is broken down and then rebuilt when cooled. When you eat them again you the resistant starch has tripled! Wow. Batch cooking is even cooler than I thought.

    A really fantastic interview thank you Chef AJ...at my age of 57 I am thrilled to continue to learn something new every day. It's so refreshing that Emmie who is 25 can be that teacher and goes to show we should not be judging age or stage of anyone's journey. But like you do so eloquently in your way of sharing people who are unique. As regards this episode I have learned several things but I am really happy to now understand why my potatoes keep sprouting so quickly. Thank you Emmie...I am guilty to putting potatoes and onions together in a drawer. I guess its because we tend to find them together in the stores. But now I can change this and hopefully extend their life. Much appreciation to you and so much respect Chef AJ..

    I’m in New Zealand and grew potatoes for the first time last year. I followed 2 methods Ruth stout who is American
    . Mowed the grass, put the potatoes on top of the mown grass, through the mown grass ontop of the seedling potatoes ( about 6 “). You can put hay on top as well. Then left nature to work it’s magic. Came back 3 months later with no attention and no watering and pushed aside the dried grass and underneath were the most beautiful potatoes. Many you tube videos on no dig potato growing. After watching this video my crop will be muchin creased

    You can’t recycle dirty aluminum foil. Not sure if she washed hers or what, but I can’t imagine getting all the sweet potato juice off of them.

    I just tried buying a big bag of sweet potatoes at costco yesterday. Had a feeling they wouldn't be good, and I am sorry to say they are horrid, virtually no flavor, which I thought would be impossible for sweet potatoes. I'm gonna throw them out in the woods, maybe the deer will want them....but probably not, lol.

    I still have problems with rebound hunger and rebound sugar cravings when I eat potatoes. I don't have it when I eat beans or lentils. I am thinking it is a blood sugar issue. I did a stew with potatoes, purple-flesh sweet potatoes, butternut squash, carrots, black beans, tomatoes, onions, celery, garlic, and other spices. and it tasted amazing all week, but no matter how much I ate, I got rebound hunger. By the end, I took the biggest size Corningware casserole dish that I owned and filled it up and ate it, and at 3 in the morning I was wide-awake wanting dessert. It doesn't happen with burritos or chili. I guess I could double or triple the beans and see if it blunts the sugar spike enough to prevent it. I gained weight by the end of the week and never felt satisfied and I read that potatoes are the most satisfying but it just doesn't seem to be true for me.

      I find sweet potatoes more satisfying and filling. Lentils are really filling also. Make sure you have enough non starchy vegetables along with any starch though to help fill you up also.

    My family from the time I was a kid always store the whole potatoes in the fridge. Also, you can slice or dice gold, red, or russets and store them in a container of water before cooking. Loved the broadcast! Love learning about new people. My favorite potato is the russet.

      Yes, my potatoes drip a bit, so would never put on a rack. The drip can make a mess of your oven.

    Great video. Question. How would you reheat the potatoes if you don’t want to use the microwave and don’t have an air fryer ? I have a toaster oven. Would that work ? Would you need to cut them open to reheat ?

    This is some podcast catch up on a long drive home. That was so interesting. I do have a bit of a problem that I'm not a big fan of the sweet in the various sweet potatoes. I really prefer my potatoes to be savoury. But the point in this life is to experiment and improve on the way you do things, so I'll try some of Emmie's top potatoes and see if any change my previous experience. It's actually really good to have very practical suggestions for our everyday needs. An enjoyable presentation, thanks AJ and thanks Emmie 🙏🏻

    Our Asian friends love the purple potato. They are extremely dry. They have a good taste - but you've got to have water nearby.

    Check your oven settings. I have a quick cook option with a fan that turns my oven into a big air fryer. May be on your oven as convection.

    It is definitely a game changer knowing that I can freeze the cooked potatoes after baking them. I will no longer have to throw out the last few at the bottom of the bag.

    I tried cutting the ends off the potatoes leaving an opening about the size of a quarter before baking them. At first it worked great until it didn't. I had one explode at 57 minutes that was baking for 60 minutes at 375. Be careful.

    “Baking a potato and refrigerating it before reheating and eating”… Sounded like something I needed to try!
    Didn’t have a potato, so I decided to experiment on a sweet potato.
    Didn’t have enough time to bake it before bedtime, so I cooked it in the microwave!
    Let it cool for an hour, then put in a covered storage container.
    20 hours later, I reheated it in the microwave.
    Cut it in half to share with my wife.
    We ate it dry (No topping)
    We both agreed it was the best sweet potato we had eaten in recent memory.!
    Can’t wait to try this with a potato, and use the oven (as recommended)!

    Chef AJ and Healthy Emmie: I am a Canadian fan and subscriber of BOTH of your WFPB shows and an avid believer in this approach to healthy living. I used to prep my sweet potatoes the same way in the oven but recently put several different concepts together and came up with the following approach that is stunningly amazing.
    While the oven tends to remove plant moisture when cooking, I have been experimenting with steam to hydrate the food while cooking. I also wanted to cut down on the extensive time and energy waste of the full oven whenever possible. I wanted the process to be efficient and yet safe. The addressing of Emmie's near miss of getting in the "line-of-fire" of the hot potato has also been addressed with my approach. Best of ALL, the taste and texture was as good and I would prejudicially suggest, even better than the oven approach.
    Here's what I did to achieve ALL of these goals.
    Scrub the sweet potato under the tap with a good scowering brush, clip the ends for steam to be allowed to vent, double wrap the potato in a paper towel and fold the excess towel underneath each end, place on a microwave safe plate in the Microwave Oven, choose the potato preset or 4 1/2 minutes. At the completion of the cycle, flip the sweet potato over and give it one move complete cycle. Let it rest for 30 seconds to 1 minute after cooking is complete. Remove the potato with tongs, unwrap it, and cut it in half lengthwise. If You want just the "meat" of the potato, gently finesse and massage the skin and it will literally slide right off. If you want it with the skin on, this last step can be eliminated. Of ALL of the ways that I have had sweet potatoes, this is by far the easiest, safest and best tasting method that I have ever experienced ... BY FAR !!! Please try this and let me know your thoughts.
