    Ingredients: (Makes 13 idlis)
    Moong dal 1 cup
    Thick yogurt 1/4 cup (for non vegan recipe, makes softer idlis)
    Grated Carrot 4 tbsp/ 1/4 cup (optional)
    Grated beetroot 4 tbsp/ 1/4 cup (optional)
    1/2 inch Ginger
    Green chilli (2)
    Oil 2 tsp + for greasing idli plates
    Mustard seeds 1 tsp
    A pinch of asafoetida (hing)
    Cashew 3-4 pieces (optional)
    Salt 1 tsp or to taste
    Eno/fruit salt 1 tsp
    Water as required
    Tips for making idli
    1. You may soak moong dal fin lukewarm water for 1-2 hours
    or in room temperature water for 3-4 hours
    2. Idlis are rich in protein.They tend to become dry when they get cold.
    Enjoy them while they are still hot.
    Microwave for a few seconds if they are cold, and they will get soft and moist again.
    3. Blending dal with yogurt will make softer idlis.
