    RECIPE:
    "Healthy Vegan Ranch Dip"
    Servings: 4
    Ingredients:
    1 1/2 cups of raw unsalted cashews
    1/2 cup water
    1 Tablespoon of apple cider vinegar
    1/2 Tablespoon of lemon juice
    1 teaspoon onion powder
    1 teaspoon garlic powder
    2 teaspoons of dried dill
    1/2 teaspoon salt
    Steps:
    1. Soak your cashews in water for 6 hours, or if you're like me and remember you want to make this dip and it's a few hours from dinner, just soak them for 2 hours...minimum 1 hour.
    2. Drain the soaked cashews and rinse them with water.
    3. Now add them to the blender with the rest of the ingredients.
    4. Blend for a minute or so until smooth.
    5. Add additional water if needed, 1 Tablespoon at a time, until the desired consistency is found with the dip. Sometimes you have to add a little to the blender to get it going. This is also a good time to stop and check the flavor. See how it tastes to you, does it need a tiny bit more salt or dill or garlic powder? Adjust to fit your taste buds.
    6. Transfer the dip to a bowl and dip away!
    7. Store leftovers in the fridge in a covered container for up to 5 days.

    I substituted cashews with a can of cannellini beans and substituted half of the onion powder with dried chives and it was amazing!! Thanks :)

    Oh my God! I'm on a candida diet. So my recipes have been soooo boring. I made this moments ago. And oooomg its soooo yummy. I love you, Ashley. You're amazing. Btw, I skipped the vinegar because of the diet. But it's so good!

    I'm definitely trying this! Perfect for summer. I love making a vegan queso dip from cashews to go over any type of mexican food. It's a weekly staple for me.

    I just went vegan this past June 2016 and I found a vegan ranch that I LOVEE!!
    it's the follow your heart brand and it's so yummy to me. me and my sisters are ranch-aholoics and my non vegan sister tried it (without me telling her what it was) and her 2 small sons couldn't tell the difference😁

    Excited to try this! I've worked my way to mostly vegan, but ranch is one thing I haven't found an adequate replacement yet! I like ranch on a lot of things and use the Bolthouse low fat right now.

    Not so much a dip, but more of a sauce. A "cheese" sauce that freezes well and can be used on a vegan version of mac/"cheese", or served over steamed broccoli, etc. It's SO tasty and our kids love it (can leave out cayenne with little ones.)
    Vegan Cheese Sauce*****
    2 tablespoons green onion, chopped
    1 cup red or yellow potatoes, peeled and chopped (I use 1 large yellow potato)
    1/4 cup carrots, peeled and sliced
    1/3 cup onion, peeled and chopped
    1 cup water
    1/4 cup raw cashews
    2 teaspoons sea salt
    1/4 teaspoon garlic, minced
    1/4 teaspoon Dijon mustard
    1 tablespoon lemon juice, freshly squeezed (I have used bottled juice)
    1/4 teaspoon black pepper
    1/8 teaspoon cayenne
    1/4 teaspoon paprika
    *In a saucepan, add shallots, potatoes, carrots, onion, and the 1 cup of water. Bring to a boil, then cover pan and simmer for 15 minutes, or until vegetables are very soft.
    *In a blender, process the cashews, salt, garlic, 1/3 cup margarine, mustard, lemon juice, black pepper, and cayenne, adding softened vegetables and cooking water to the blender and processing all until perfectly smooth.
    *At this point, can be poured over/mixed with cooked vegan noodles and baked for 30 minutes at 350º until bubbling, or poured into a freezer container, cooled, and then frozen for later use.

    I've been struggling on & off with being vegetarian, wanting to be vegan, blah ! I am addicted to ranch dip with real sour cream & hidden valley packets ! I will try this & let you know what I think. I'm just happy I found something to try as an alternative, thanks !!!

    We have a ranch style dip recipe that we use, but it vegan sour cream which is more processed than we would like to eat on a regular basis. I will definitely have to give this one a try! I recently started trying my hand at making our own cashew milk so we always have cashews on hand now! :-)
    We also have fresh dill in our garden right now, so I am going to try it with the fresh herb and see how it turns out as well!

    thanks for this recipe. I'm alkaline so I just won the do the garlic. I will be trying this tomorrow. I'll have it with green banana fried in grape seed oil. green bananas taste just like potatoes.

      DimmyandSebi garlic becomes alkaline once inside the body as it does not sit and ferment in the gut. The same for other acidic foods like citrus fruits. They have a fast transit time; meaning once eaten they move out of the bowels very quick.

    Yummy! :-) I make a "cheezy" sauce out of cashews and add in some nutritional yeast, salt, sweet pepper, lemon, etc. and use it to dress my kale chips before dehydrating them. I am going to make this ranch recipe tomorrow to try and dress another batch of kale chips. That way I will have some nacho "cheesy" kale chips and some ranch kale chips. My kids eat the nacho ones as fast as I can make them! I have been trying to get ahead a bit so that I will have a back stock on them, but not yet! Kale chips are definitely a labor of love, but it's so worth it. I mean I can't think of many snacks that beat out raw kale! I call my nacho "cheesy" ones KaleRitos...lol! However, I think they taste much better than Doritos ever did!

      itskena I'm wondering if you just increase the water amount? Maybe a tablespoon at a time until it reaches a thinner consistency? Post back if you find a way to modify it that works for you!

      itskena Maybe try adding a non-dairy milk to it to make the consistency thinner but keep it creamy. I would be interested in seeing how this would work as well!

    Believe or not, you should use organic canola oil for cooking. Clinical studies have shown that canola oil and salmon oil don't negatively effect blood flow and blood lipids like other oils do. Even extra virgin olive oil doesn't have the low impact canola oil has.

      ***** Red Palm oil is loaded with saturated fat and Sunflower oil is high in Omega-6 fatty acids, which makes it more difficult to obtain a proper ratio of Omega-3 to Omega-6 daily.
