Great recepie. Spinach pesto tastes great. Eggplant dip too is awesome. I made small variation. Replaced chickpeas with canned sweet corn and came out great. Both spinach pesto and eggplant dip add great variety and taste to the platter.
we grill eggplant on fire then peel it (the peel comes off really easy when well grilled you can help the process by putting it in plastic and let it cool down there) then put it the blender with some tomatoes chilly pepper garlic salt and pepper.. it tastes amaaaazing has the smokey grilled taste ❤ add olive oil for serving or to conserve

Hehe! I did the recipe from memory and didn't realise you roasted the beets before! I did not roast them, made it in a vitamix, so could easily break the beets, and it was amazing! I shall try it now with roasted one! :) thanks so much for sharing all these amazingness! This is one of my favourites!
Aubergine Dip: 1x Aubergine 1/2x Can of Chickpeas 2x Onions 3x Garlic 1/2x Lemon (juiced) - Oil - Salt, Pepper, (other spices) -2 tbsp balsamic vinegar -1 tbsp brown sugar -2 tbsp Olive Oil How: - Slice up the aubergine in 0,75cm slices - put them on a backing sheet with the garlic and cover them in some oil and salt & pepper (other spices optional) - roast for about 20min on 220 Celsius (or until cooked) - Slice up the onions and sautee them in some oil until transparent - add balsamico & sugar - cook for another 6-7 min - put everything in a blender (with some oil, lemon juice and the chickpeas) - blend until smooth ENJOY AND THANK YOU FOR THE GREAT RECIPE EVERYONE LOVED IT
Hi! Can't wait to try all of them! Also, you must try Beetroot pesto!! I love adding it to pasta. You just cook Beetroots on water, then add them to the blender with garlic, olive oil, lemon juice, salt and pepper and some basil leafs and blend it all! Delicious!!

Thank you! I am working on ways to incorporate beets into my diet and this looks great! I'm still not fond of the precooked, packaged beets but I find that using raw beets and cooking them myself makes them taste great!
Eggplant is so versatile! I need healthy snack recipes because I am more of a grazer then a large meal eater. This is why my chronometer has me at between 730 and 1000 calories a day and I'm diabetic so I do need to eat several times per day. This was always hard for me so these sorts of snacks do me really well for my health. :-) Thanks for Sharing!
I loved your eggplant dip 👌🏻👌🏻👌🏻. I will love it! I have a thing for dips too. If you wish to add a fragrant secret ingredient in a dip add about a couple tablespoons of blossom water. I do that for my Tapenade spread. 😘👌🏻
Hi, I'm french and garlic is very used in France, so I suggest you to take off the center of garlic, which is given this bitter taste that make a lot of people dislike garlic. About beet, try it raw, it's delicious too and it taste more like cooked. Thanks for recipes.

It all looks completely delicious. She is so young and slim, but for us oldies I plan to make the dips but omitting the oil as much as possible - who needs the extra calories? I fry onions in a small amount of oil. I plan to start with the egg plant and onion as I have them both in the fridge.

It's about having an unhealthy relationship with food. for the beetroot dip, make sure to roast the beetroot with the cumin too! Cumin should always be cooked off to get a deep smokey flavor rather than a raw flavor

Btw about your vegan pesto question: As far as I know pesto has to consist out of certain ingridients such as conifer nuts, basil, olive oil, garlic, salt and pepper and - you guessed it - parmesan. So unless it is classified as cashew pesto or pesto rosso (and whatever there is on the market) it isn't allowed to be selled as pesto ;)
Q: Are all of these spreads ones you can freeze? I'd like to make all of these, but freeze some for later consumption. Is that doable without compromising quality or flavor later? Great video! Thanks!

Ok! Made it! Delicious this way too! :)
Aubergine Dip:
