- A symbol of Sichuan cuisine, this famous dish produces a strong, spicy, umami flavor along with a touch of numbness in the taste. A ruthless rice killer. 🌶
The stir-fried soy meat provides more texture and is replaceable with shiitake mushroom. The dish is fully flavored even if tofu goes solo.
【RECIPE】
400g tender tofu
10g dried soy meat (or 30g mushrooms)
3g ginger
1 scallion
2 tbsp chili bean sauce
1 tsp LAOGANMA chili black bean sauce
1 tsp Sichuan pepper (optional)
½ tsp dark soy sauce ½ tsp sugar
1 tbsp starch with 3 tbsp water (to make starch water)
1 cup of water and 3 tbsp of oil

Prepare more rice if you are cooking Mapo Tofu:)

I worked at a 1st gen Cantonese restaurant up until the start of the pandemic, and I miss the mapo tofu that uncle used to make for me so much, definitely going to have to give this a go!
I can imagine how good it is to go with rice 🍚

Absolutely, just different textures. Personally I prefer silk tofu for Mapo Tofu coz it can get really hot and when you eat it, the temperature and spiciness gives your tongue a big punch 🥊🤣
I have make mapo tofu with firm tofu as I can not find silk tofu and it is delicious!
Can I use normal black pepper instead of sichuan pepper corn, or is it better to skip to skip it if I don't have it?

Yes you can skip it if don’t have. Just lack a layer of numbness sensation, which is the main difference between black pepper and Sichuan pepper:)
It’s better just skip, coz black pepper taste very different from sichuan pepper

Where do you get dried soy meat?
It’s from a small grocery downstairs my apartment. But you don’t really need it for this dish. 🦦 I just realized the concept is like “ Oyakodon” - soy meat and tofu 😃
