Korean Seaweed soup (Miyeok guk) by Chef Jia Choi

    I would like to share my favorite Korean recipes with you.
    I've been running Korean cooking class and food tour company in Seoul, Korea for the last 10 years.
    I wanted to share my secret recipes which are both easy to make and delicious.

    Korean Seaweed soup / Miyeok guk
    Ingredients
    Dried seaweed (miyeok)----------------------------------------------------------- 15g
    Beef brisket------------------------------------------------------------------------------ 400g
    Water---------------------------------------------------------------------------------------- 1.5 L
    Sesame oil-------------------------------------------------------------------------------- 2 tbsp
    Light soy sauce------------------------------------------------------------------------- 3 tbsp
    Garlic (minced)-------------------------------------------------------------------------- 2 cloves
    Salt, optional (adjust to taste)--------------------------------------------------- 1 tsp
    Instructions
    1. Soak dried seaweed in cold water over 10 minutes
    2. Cut the beef into small bite sizes
    3. Drain the seaweed. Rinse in cold water and drain. Cut them into small bite sizes if needed
    4. Heat the pot over medium heat. Add sesame oil along with beef. Stir fry until brown
    5. Put the seaweed into the pot and stir fry for 3 minutes
    6. Pour water to the pot. Higher the heat and bring it to a boil. Skim off and add garlic. Reduce the heat, cover the pot with a lid and simmer for 15 minutes
    7. Give it a taste and add salt or fish sauce if needed

    I’m Mexican but have heard great things about seaweed soup for postpartum so I want to make this for when I have my baby in October.
    Warm, comforting, hearty & healthy foods sound amazing for that time period & for fall.

    Very classy presentation. I like the background music. Its calming. The soup looks very healthy and appetizing. High in iodine and fiber content and low in salt. Well done, Jia!

    Love your video and your style! I cook Miyeok Guk often. The only different step is that I fry minced garlic before the beef as I don't like the raw garlic taste. :) Will check out more videos on your channel.

    I wonder what the name of the seaweed is? I am ignorant about eating seaweed. I have learned that seaweed is highly nutritional.
    I like how she sets other dishes that are usually eaten with seaweed soup. That is something that lacks in other cooking channels I noticed.

      It's called miyeok in Korean and wakame in Japanese. Dried seaweed is typically used to make this dish. Thanks for the comment!

      Yes. Wakame is a japanese word for the dried seaweed. It's a same thing!

    Can this soup be vegetarian style ? What ingredients should I use ?

      Yes this soup can be made in a few different versions. Use vegetable broth(kelp+shiitake mushrooms broth is good) and other ingredients are the same.

      Sushi seaweed is not for soups. You may use Japanese wakame which is other type of seaweed same as miyeok, the one that I used . : )

    How long to cook

      Simmer it for about 40 minutes in a medium-low heat! : )

    How does the beef cook so fast? Whenever I cook beef, I spent at least 2 hours boiling the meat otherwise it is not tender.

      Cut the beef smaller before cooking, than it'll take less time to make a broth and will taste tender. : )

    What type of seaweed should I use?

      I use the dried seaweed called "miyeok" in Korean. You may use "wakame" which is the same thing in Japanese : )

    Fish sauce? Or soy sauce?

      I added light or soup soy sauce and salt, but you can also mix light soy sauce with fish sauce. Just add a small amount of fish sauce for a subtle flavor boost, as too much can overpower the taste of the soup. :)

      If it’s not too salty add a bit of salt. No more dark soy sauce🙂

    This beef looks like wagyu japanese beef

      I used Korean beef, Hanu. It makes a nice broth. I recommend to use any high quality beef for this soup!
