- Today I decided to make some sourdough bread and some bagels. It's been almost a year since I made sourdough and at least 15 years since I made bagels. Sourdough is one of those things I have never quite gotten the hang of doing regularly, but I sure do love it. We also decided to take advantage of the sunshine and warm weather and go for a beautiful walk.

I was so intimidated when I started to learn how to make sourdough. I have grown to love it so much (naturally leavened bread is magical!) And now it is my full time job. I am a vendor at the farmers’ market in my city. I made over 3,500 loaves this past market season! 🤪

Can I ask you a question? I make 2-4 loaves each week and every single loaf sticks. I’ve used glass, cast iron, and stoneware pans. I put avocado oil in the bottom of the pan and they still stick. Is my dough too wet? I’m using Einkorn wheat.

Sourdough pancakes. Yummy. 1 cup starter, 1 cup flour, 1 cup water. Mix, cover, set on counter overnight. Next morning add 1 egg and 1 tsp salt. Adjust water to consistency you like. 1/2 cup on griddle and cook.

I don't remember ever having the energy you have, it's amazing really. I havw been down 2 years with a broken knee and phnomia. I am binge watching you and enjoying every moment. Good job on taking such good care of your lungs during the fires. We live in the SIERRA MOUNTAINS just outside of Yosemite National Park, so we are no stranger to forest fires. I actually love the larger logo! And I started a sourdough starter this week, so this was a fun video to watch!
When you wear your apron, if you crisscross your strings in the back. Then tie in the front. That way, you can hang a dish towel in the strings in the front. This helps me so much for wipping my hands.

I absolutely love the green sweatshirt exactly the way it is. I love the color and the logo. Hopefully, they are able to do plus sizes because I definitely want to buy one. I also love the idea of the “plant flowers everywhere shirt. It would be really pretty in a mauve, and I would buy at-shirt for summer with that design. I love your channel. My cousin lives in Alaska and she's actually from florida. The weather is soooo opposite, and thats where we are, in Florida. Strange, but yes i know before i say, i live with my Dad here in FLORIDA and i can only imagine. The whole car story and that book is just anazing. We actually can tomatoes a quite abit. The larger logo for several reasons, IMO it looks better plus, it makes a better ad for your channel bc it’s easier to read when worn in public!!

OMGosh! I love watching your channel (newbie)! I miss Canada so much! My father was from Montreal and I spent most of my childhood living in Quebec and Ontario. I still have family in both Provence's but I rarely get to visit anymore. Last time I was there was in 2007 for my Grandmother's funeral (she was almost 101). I have lived in southeast Texas for over 30 years now and I still can't stand it! I so miss the 4 seasons... we only have 1 down here... HOT! I also love to listen to your accents which remind me so much of my childhood and family members that I miss so much. I'm so glad I found your channel!

Hi Chelsea: I love your videos. Like you, I rarely wear an apron, even though I have them. One suggestion. Double the length of the tie so that it can be wrapped around and tied in the front. That way, you can loop a towel through it if you need it to dry your hands or lift something hot.
Much prefer the larger logo! it looks great! I am graphic designer btw, i would do larger one which is much more legible from far away, other size gets lost in hoodie.

You can freeze dry blueberries, strawberries, et cetera, et cetera, grind them to powder, mix with cream cheese, and have a fancy spread for your bagels.
You can also chop nuts to mix with the cream cheese, but how small or large you chop them is personal choice.
