  • Hey there, today we're starting on a huge new project we're hoping to finish by the time the snow falls in a few weeks. I'm also making some delicious chocolate, hazelnut spread bread and hot chocolate to snack on. And, because we have such a busy day, I chose a super simple supper to make.     I just love your channel!! You are so down to earth, and non-political. So many homesteaders are now political, giving us week old news that every other homesteader has already given.     My gravy tip… make a roux equal parts fat and flour. Melt fat in a skillet and add flour. Cook until the raw smell of the flour is gone and it smells nutty. Gravy tastes richer when you get the raw flour taste out before adding to liquid

    Maybe a little hint for making gravy: try to mix the flour equal with butter (not water) and do THIS into the broth. :)

    If you make onion jam ,you can use it to make a savory bread using a jar of the jam in place of your chocolate spread...The sweet savory thing is out of this world.

    As a child we lived in a tiny house in with a tiny yard in the city of Minneapolis, Minnesota. Every winter my Dad would build us girls a small skating rink in our back yard. We loved it and would spend hours teaching ourselves to skate. Learning how to spin, jump, complete a flying camel, etc. As you know when winters last for ≈6 months you find fun activities outdoors!
    I’m definitely going to try the hazelnut bread. Thanks for uploading so much content lately. I adore your channel❣️

    I used to have a heard time with gravy too. For every tablespoon of flour you add butter and make a roux, let it cook for a bit to get flour taste out and then add your liquid. I usually add a little kitchen bouquet to it to add what color you want light or dark gravy. Always works! Saw it on "the pioneer woman show" looks like a yummy dinner. Nancy from nebraska

    To make the best gravy, take equal parts of hot melted fat, (lard, tallow, butter, or duck fat), and stir in you measure of flour, (arrowroot, almond flour, or cornstarch) and mix well continuously over medium heat for 1 to 2 minutes. Slowly incorporate your broth and cook until thick. Salt and pepper to taste. Best of luck!

    if you make a roux instead of a slurry your gravy will improve significantly. Cooking the flour is key

    Love the pumpkin heads costumes!! Oh my gosh meeting your Mom will be so amazing looking so forward to it :) That is so so amazing having whipping cream on hand like that from the fresh milk. Wow I loved that! I want some it looked delicious. Yum on the bread and it looks very pretty to me. And I have to tell you this because every time I see the Rooster mugs, well I saved two quite a few years ago from a thrift store the exact same ones. They eventually got broken and I have missed them and well now I get to enjoy them again :) The rink is so fantastic. The kids will get So much joy out of it for years to come as you both know. Loving parents you both are to spend that hard initial work but you truly love your family and it totally shows always. The Poutine with a twist looks amazing too. xo

    I’ve been making up a 1/2 gallon jar of cocoa mix a week. Putting 1/4 cup in coffee for my morning treat. Since I buy in bulk, it’s much cheaper & doesn’t have any preservatives in it. I’m obsessed. I use 2 cups powdered sugar (sifted if need be), 1 cup Hershey’s (or good quality-non gmo 100% cacao) 2 cups of dried milk. 1 & 1/2 recipe fills 1/2 gallon jar. Handy, so when my son has friends over for a campfire, I put a kettle on the stove of water & add milk or cream to the cup.

    I can't wait to see the rink done and you skating! When I was little I always dreamed of growing up to be Peggy Fleming but, of course, down here in Florida that would be roller skating instead. I moved from Wisconsin when in my teens. My grandaughter just came home from a golf match and she and my SIL both saw a mama bear and her baby on the side of the road. We aren't all tourists down here but I would certainly have liked to see it. I forget how agricultural and wild it is until we get a glimpse of nature like that. In fact the second source of income in Florida after tourism - is agriculture. When we first moved up here to 10 acres near the Suwannee River, we saw a panther waiting for his supper along an animal path in the woods. He sitting on one side of the dirt road we were on. Once he saw us it was just one leap and he cleared the whole road with that long tail flying behind. I loved seeing that. Just didn't want to come across him while riding our horses or working in the garden. Yikes! That was fifty years ago and they no longer roam this area but the bears do! So cool. Do you all have wild predators like that on your place? Wolves, coyotes and such? We have alligators and anacondas, too. Hope you don't have them!

    I’ve enjoyed watching you doing so many things that I do not have any idea how to do but am learning. I just wanted to share how to make gravy when you said you were not good at it. You need to melt the fat in a sauce pan and then equal amount of flour and stir for a few minutes to cook the flour. Then add your stock, while whisking, until the desired consistency. You know everything else!!!

    Greetings from Iowa! I have made them same sweet bread dough and added hazelnut spread and peanut butter swirled together to make peanut butter cup dessert bread. It is amazing! Not ideal to try in your toaster, unless you are trying to find a reason to buy a new toaster. It does, however make amazing French toast or bread pudding. As for you scrumptious homemade cocoa, a few sprinkles of instant coffee in the cup for mom and dad is coffee shop worthy!☕️

      @@LittleMountainRanch Mind-like can be life-like. I cook using whole foods and follow the seasons for the bounty they drop on my recipe card. I focus on nutrition and limiting the waste of what I can humbly grow in town or buy from local farmers to support their efforts and family. My food dehydrator is my test lab. Can I dry it? Can I make it into a powder concentrate or seasoning? An ingredient doesn’t have to be a one note song. With creativity you can make your remnants and leftovers into a sonata. I appreciate wholeheartedly you and your humble and joyful family working as a team, encouraging, challenging, supporting and learning from each other. You are lovingly bringing your pastures and buildings back to a life they have not lived in many seasons. It will be an amazing journey to watch unfold for all of your clan!🏠

    If you'll use a little butter, oil or other fat heated up then put your flour in it and brown off the raw flour taste.Then add your liquid of choice it might come out tasting better to you.

    Looks like a delicious meal and one of my dads favourite s although we would have the ground beef made with a ton of chopped onions, bite for bite you’d end up with more onions then ground beef but they were well cooked and sautéed with the beef so they took on that flavour and it’s a great money saving way to feed a large family with a small amount of ground beef as they used to say it “stretches” the meal. Plus it would be served over a large mound of mashed potatoes and either peas, carrots or corn because it was pretty much a comfort food type winter meal and we wouldn’t have the availability of fresh lettuce or as Dad calls it “rabbit food” in the winter. If we did get lettuce in the winter from the grocery it would be a small head of lettuce that was so ridiculously small and it would be used by peeling off pieces for sandwiches the entire head was so small it wouldn’t make a salad anyway. Lol! Although our winter supply has improved in terms of large trucks bringing us fresher veggies from Florida or California I’ve begun growing our own lettuce on our sunny windowsill inside our place using a mason jar and a hydroponic style technique and you know it seriously works and I can grow a lot of lettuce and tat soi this way!

    I will definitely make that bread! I grew up in Michigan and skating was always the winter play. However, my ankles failed me every time but fun being with all the kids. For Celcius conversion, I just double the Celcius then add 30. It's only approximate but close enough so folks get the idea. (over 20C change to add 25).

    Your hot chocolate recipe has become a regular in our family. It's soooo good! And so easy! The rink is going to be amazing! And what a great way to repurpose it as a riding ring. I'm going to have to start planning snacks when watching your vlogs to keep my mouth from watering too much. lol (So much talent in that bracelet. What focus and artistry!)
