If you are fearful of your dried peppers adding too much heat to this new batch of enchilada sauce, simply cut them open and remove the seeds and the membranes (as that is where the heat lives). That will greatly reduce the heat level in any recipes that call for any peppers known to have a high Scoville rating 🌶️🌶️. I lived in the desert Southwest in Nevada and learning to refine the fine point of Mexican recipes was quite the learning curve for me. You are the Queen of multitasking….I remain in awe with every single video 🥰👍
Just a thought - if you make three times as much of the “mild spicy” enchilada sauce as the spicy and you use 3 jars every time you make enchiladas, you could just use 2 “mild spicy” jars and 1 “spicy” jar and even it out so you could all eat it!
@LittleMountainRanch I cannot tell you how much of a pleasure it is to watch a channel like yours. Your channel is educational, you have such a great attitude, you use proper English with no cursing, and show truly delightful scenery everytime. Thank you for your time and efforts, it is not unseen or overlooked at all! I also recently watched a video of yours from 3 months or so ago; and truly wanted to extend my condolences to your family; and especially to your sisters' family. I'm holding you in my prayers. God bless you and yours from South Africa.
Chelsea, I have become addicted to to your program. I can’t stop watching, I want to move close to you the life seems hard but very rewarding. You seem like such a lovely person that gets so much joy out of your animals and plants.
The Chili's name is Guajillo .. pronounced wah-heel-lee-oh. They are a sweeter chili, to keep the heat down, remove the stems and seeds before you use. I cook with them a lot when I make my husband Tamales.
Your life is nonstop and has a thousand moving parts but you still take time to stop, observe, appreciate and love every aspect. It’s a lesson we could all benefit from.
That ram is really beautiful, I love his color! With your summer squash, when you fry it with garlic and butter, try sprinkling it with steak seasoning. It really kicks it up a notch.
I love those sunflowers they are such a cool color. I think planting the flowers with the plants make such a beautiful garden and brings joy. Along the fence clemetis are beautiful so is bee 🐝 balm.
We make Enchilada pizza using the pizza dough in place of tortillas. I just put sauce on the bottom and add chicken, peppers and Mexican cheese or any cheese you like on the dough. Bake like you would a pizza and it’s wonderful. I make any kind of pizza that you can make using Mexican ingredients, it’s wonderful.
💚 That Russian Tarragon is Amazing, I've never seen any Tarragon get so big and bushy! Such a busy time for you..your energy is remarkable. Smokey the Ram is beautiful! 💚
Sorry about the ducklings..I know your son was lookin forward to them. I'm glad you talked about the sunflowers in your other video, because I had read the same thing about them taking nutrients and I wanted to plant some this year and didn't because of that. Even tho I've had them before and never noticed anything like that. So, I'm planting some next year. I think they are beautiful and great to draw bees to the garden. I'm allergic to bees so I cant keep bees, but, there is someone in my neighborhood that keeps bees and I had so much activity this year because of them! I was so happy. So, I want to add some more flowers to my garden to help them and me! I already companion plant. But, the more the merrier! 😊
You have the best videos. Seriously! Chelsea, your garden looks so good for this time of year!! You can never mention the sunflowers 🌻 too much. They are glorious! I wish I could show you the mammoth sunflower I grew this year, literally 18 feet tall. I should have sent you seeds! ❤
I alway love your videos. I’m going to miss your flowers over the winder. I’m glad you got sheep to raise. I can’t wait to you spin and show us your colors for yarns and knitted items. See you soon.
Be careful with the straw flowers.. i worked so hard last year to start seedlings, then saved seeds. I never had to plant this year... they are everywhere!!! Even in the wood chips in between my beds. I love them!
I do my zucchini in the oven slice down the center take a fork and losen the fleash add salt, pepper, garlic powder bake in 350 oven till they are soft then i add some mozzarella OMG
Thanks for bringing us along & sharing the tidbits of your very busy life! I love all your content & especially the food! Your garden was amazing & I love all your flowers! Birds plant the black oil sunflower seeds from my bird feeders & I also get types of other grains coming up from their seed! It’s fun! My barley straw mulch has yielded barley growing throughout my central Alberta gardens. Blessings to everyone 🤗💕🇨🇦
My daughter loves apple pie a lot and loves this apple pie jam on toast. 4 cups tart apples washed and chopped...like Granny Smith...2 tablespoons lemon juice...1 1/4 teas cinnamon...1/4 teas nutmeg...1/4teas ginger...4cups white sugar...1cup brown sugar. I box sure jel. 6to 7 pints...water bath 10 minutes.
If you get the chance to get egypt walking onions I think you would like them. winter hardy and the first green thing poping through snow to greet spring with fresh onion greens. I love the taste so much better in my opinion to regular onions. I read somewhere the genetic makup of them is welsh bunching onion and garlic, size of shallots but potent little buggers in cooking. there is no onion easyer to grow.
greetings from Edmonton 🥰 LOVE your videos 😎 took my first sheep shearing class this summer, absolutely loved it and had my butt kicked BUT will persevere! Looking forward to meeting you Cheers!!!
I'm on the line of zone 2 a/b and sunflowers are one of the hardier flowers I grow here. They will usually go right into October. I absolutely love having big bouquets all over the house. Adds a little bit of cheer as the weather gets cooler and the sadness over the end of summer sets in.
You are amazing, I’m exhausted just watching the amount of chores you get done in a day. How do you come up with different recipes everyday? I am not very creative and it makes me crazy.
I cook all our meals and we just had to buy a new microwave, fix the oven of a practically 🥹new oven and our Frig bit the dust too… so two new appliances and fixing an oven‼️🥹💁🏻Have you tried mashing cooked celeriac to mashed potatoes? I love the combination🥰
I forgot, you can hang dried flowers, Goggle drying dried flowers and there is a lot of information. I hang them early then make wreaths out of them. They are so pretty and last forever. I use them for table decorations at Thanksgiving. And my table looks so pretty.
I’ve used the same ball recipe for enchilada sauce too. I love your idea of using roasted sweet peppers. To keep the heat down in my sauce I used guarillo, ancho and passilla dried peppers.
I love watching your videos ,I think we live close to the same town so I'm always watching ur videos when u harvest something I check on mine and harvest mine as well lol and I love those straw flowers I've never seen them before they are so beautiful
Hi! From Alberta! Just found your channel, so glad you have no smoke on this day, this summer has been rough! Love the sheep and love the canning. Curious where you found your peppers for your enchilada sauce, I haven't had luck here finding them here in the Edmonton area. Born and raised in California and love anything withexican flavors.
Hi there Chelsea! What a beautiful day up there! I was thinking about all of those tomatoes and thought of a video you might enjoy. The chefs name if Jean Pierre and he does a video on tomato pie. It might be fun for you to try since you have the perfect ingredients for it right in your back yard! Highly recommend and hope you try it! 👍. Hugs from Campbell River!
I’ve just received your cookbook here in Australia and can’t wait to start making some of the recipes 🎉😁💜 I absolutely love the font size! Thanks for sharing all these wonderful videos on RUclips, I love watching them 🥰🦋
I’ve done it! I’ve joined your community. I was thinking I just couldn’t afford a monthly payment and then realize I WAIT!! It’s like I’m waiting by the mailbox for delivery of a birthday card from gramma when I go to RUclips looking for a post from you. 14:18 I’m so excited!
Love your videos. ‘autumn”. Not in the Deep South! We have 214 frost free in our part of Ga. I just planted 40 day squash on Labor Day so hoping for some squash before our first frost
That Russian Tarragon is really good if you take some of the sprigs and a bite of water cook it in with chicken... The cooking books is it only in America or Amazon and is it 1 book or the 3 books as I think U had 3 cook books from memory... I hope recipes good for I person aswell... Could U come back to me if us none U.S. people can buy your cooking book or books...❤❤❤...love the colour of your sheep aswell...
Just started watching channel, so not sure current status on freeze drier, but I heard they preserve sauces very well. Also if building houses for kids, may want to look into hemp block. Goes up two weeks with big 1400 sqft walls, insulation value of R70. Fire and quake proof. $40000 usd includes estimated cost of $12000 for paid labor. Roof and all else, subfloor, radiant floor heating ~ extra. But could do apt or cabin duplex.
Since you are concerned about the spicier enchilada sauce you might use part regular enchilada sauce and part spicy sauce when making your chicken enchiladas. Also try wrapping the enchiladas individually in waxed paper and freezing in gallon bags. That way you can take out as many as you want depending on the number of people eating. Just started watching your channel and have really enjoyed your many canning tips.
I think your ram is very handsome. I don’t know how to cook or garden but I’m feeling ready to try cooking. 69 isn’t too old to learn is it? I planted a baby, baby garden in 5 gallon breathable containers. Um, 5 of them. And everything is growing except my organic squash. I got so excited to see my plants growing and producing!! I found myself getting up every morning thinking I’ve got to go check the crops!! I’m already thinking about next year. You’re a wonderful inspiration to me. Thanks for sharing your enthusiasm! It’s catchy 😂
Guijillo peppers are flavor. The heat came from jalapeno and cayenne or whatever the other pepper was. I don't remember. If you want mild, take out seeds and ribs.
I don't comment a lot, but I watch all your videos and love them all. I purchased your cookbook and have been enjoying looking at it. The photography is really great, recipes interesting and large print so relaxing.
Love your vlogs, if you like snap dragons you would love nemesia they look like tiny snap dragons they are not very tall so in front of a border or in a pot. Xx
Do you harvest your sunflowers for snacks or butter, ect? You have so many, I'd have flowers all over my house if I had beautiful ones like that.. I love them..
I had a glass top stove and loved how easy it was to clean! However, I've heard that canning on them (especially pressure canning) can be problematic. Was that something you took into consideration when you chose this stove? I think I saw where there ARE models that can be safely canned on & am wondering if you got one of those?
Good night hello 👋🏾 how you doing your still working with different things onions, green onions and tomatoes for the tomatoes sauces jars good healthy food awesome 👍🏾😮💪🏾🫴🏾☝🏾🆗 homestead grateful day 😊😉😏
With the amount of cooking you do, I am sure there is a reason you don't have a 5 burner double oven range/stove. My neighbor has an electric one and just loves it.
I get so excited when I see a new video from you. You have no idea! They bring me so much joy.
Right? ❤❤❤
Me too

me as well, she can get so much done, in a days time.❤
Great advice! I live in Phoenix Arizona and i was going to give similar advice
Just a thought - if you make three times as much of the “mild spicy” enchilada sauce as the spicy and you use 3 jars every time you make enchiladas, you could just use 2 “mild spicy” jars and 1 “spicy” jar and even it out so you could all eat it!
I'm a knitter and a spinner, like your neighbor. I'd love to see videos of you learning to spin your own yarn, once that happens!

Do you save seeds.? Do you fix fried green tomatoes. Do you have okra. 😊😊😊

Do you ever harvest squash blossoms past the end of actual squash harvest, for stuffing/frying, or is that too late?
I love your program I watch it all the time I was just wondering how to go about getting a cookbook.
Pre-order is available on the website now.
Chelsea, how do you tell the difference between your honey bees and bumble bees? And btw, I smile through each of your videos!
Mexene chili powder. You’ll be glad you tried it
Do you harvest your sunflowers for snacks or butter, ect? You have so many, I'd have flowers all over my house if I had beautiful ones like that.. I love them..

So much going on and the to do list is 'heavy' LOL.But is seems exciting to get so much put up for the year. You sure did good!
Good night hello 👋🏾 how you doing your still working with different things onions, green onions and tomatoes for the tomatoes sauces jars good healthy food awesome 👍🏾😮💪🏾🫴🏾☝🏾🆗 homestead grateful day 😊😉😏
I would love to make this sauce but no pressure canner 😢
I have so much zucchini, what all do you do with zucchini to preserve for winter?
What site do you use for the times for pressure cooking? Thanks
What a great video I so enjoyed watching it but you’ve forgotten to show the garlic cloves in honey. I’m dying to see what it looks like
With the amount of cooking you do, I am sure there is a reason you don't have a 5 burner double oven range/stove. My neighbor has an electric one and just loves it.
Fried squash is the best. I just ordered 5 28 oz cans of diced tomatoes on Amazon for $1.35 a can! I am going to make your enchilada sauce.
Can you steam can or water bath this enchilada sauce?
How can I get your book, you are out of stock!!! I have this only Christmas list!! Any suggestions!! I really need your book😢❤
What is a proven ram? I don’t have a farm just garden and I knit and crochet
One that has successfully bred ewes.
I would like to buy a book 👨🌾🌼💖
They are available for pre-order on the website, thanks for the support!
I LOVE these videos- Thank you! Am I the only person who starts to sound like Chelsea after a video? Unique speech cadence... :)
❤❤❤
