    I grew up with my mom making a topping for meatloaf using Ketchup, Mustard and Brown Sugar. Spread over the top and let it bake in. So good!

    My Mother, a survivor of the Dirty Thirties, used to simmer the apple peelings and cores with some sugar and water to make a thin syrup. We ate it with a spoon with bran muffins but if it were simmered down to half volume, it might be satisfactory for pancakes or waffles. It was a special treat because we didn't have too many apples in our prairie home due to the expense (we did not have a tree).

    Once you get the apple on the spindle, instead turning the handle to get the apple to the slicer, you can release the lever that is used to pull the empty spindle back and gently push the apple on the spindle to the slicer, then crank away to peel and slice the apple.
    Hope that makes sense.

    In case no one has already suggested it; use a big bowl for all your peelings, seeds, egg shells, etc. makes cleanup easier.

    For your family members that aren't keen on too many onions - especially the red ones, might I suggest either freeze dried or soaking the onion pieces in cold water for 5-10 min before putting them in your meal will help cut the bitterness (and help your eyes recover faster)

      Also, try frying and caramelizing the onions before adding to meatloaf or meatballs. They’ll tell you it tastes great but they won’t be sble to put their finger on why.

    Chelsea, I don't know how you can work for such long periods of time in your stocking feet. I have to wear a pair of house crocs or my back, feet and neck start to hurt. I also highly recommend using anti- fatigue mats. Have you ever used them? I have one in front of the sink, stove, and work top. They are so nice because they come in many patterns and colors and you can easily wipe them off with a soapy rag. After canning season, I just hose them down outside and scrub them off more vigorously. They are much more effective than kitchen rugs and so comfy!

    I thank you every time I chop onions now, like you I only chop once and my eyes are absolutely burning 🔥. I started to use swimming goggles now and man.....what a life changer ❤

    My meat loaf is similar but I also add shredded potato, minced celery and instead of oats I add finely chopped french bread or sourdough bread. I also add basil and oregano , salt and pepper. I only add the ketchup to the top of the meat loaf. The cheese in the center I will have to try. 😊 I've never tried a meatloaf as good as mine. 🌻

    I pulled a Chelsea today. I was up early and prepped and canned 10 pounds of burger while that was canning I prepped meatloaf for dinner and popped in the fridge until it was time to put into the oven. Cleaned the kitchen and took a rest for 15 minuted then started dinner with mashed potatoes and beef gravy. Doing laundry in between. I'm exhausted. 🤣🤣

    My meatloaf is for diabetes and has almost the same ingredients plus shredded zucchini. Of course, it calls for ground turkey, but I use half turkey and half beef.
    Yours sounds yummy.

    I pulled out all my tomato plants today. I used to leave them in till spring for the birds to have shelter. But, i read recently that is bad for the soil. It was much easier to oull them out now. Im in Illinois zone 6b( ish) we have frost coming soon. Tomorrow I'll bring in all my house plants and out them in my basement untill I'm sure they don't have any bug friends tagging along. I have a grow area in the basement so they will have artificial light untill i can check them and pot up things that have grown over the summer. I also potted up a tobasco pepper that i planted late and never had a chance to bloom just to see what happens.. it would have neen a loss if I'd left it out. So why not right? Already planning next years garden! 😂

    When making meatloaf for my kids, I would put a row of hard boiled eggs down the middle of the meatloaf where you have cheese. It made a larger loaf, used up my excess eggs, and increased the protein. And it looks pretty on the plate, hot or cold 😊

    I love the colour you have on your cabinets right now. It doesn't give a dark vibe or look when watching your videos. And ofc do and go and change for your likings but you don't have to change the colour for your filming. It is your home and we are gratefull to sort of getting invited (don't take this the cheesyway) and see what you are up to. All up to you even if you decide to go for all bright pink haha

    This old dog learned a new trick with the apple slicer I have been using for a couple of decades, I just tested it out yesterday. Instead of pulling the core off the prongs with your hand, just release the handle and pull it back as you do when starting a new apple. The slicer is made to boot that core off for you, and you don't get so sticky. Happy canning!

    My meatloaf recipe is similar to yours, but I add a (small) box of crimini mushrooms, ground in the food processor. It adds additional flavor and moisture to the meatloaf.
    I also find that I freeze dry ingredients more so than meals.. if I have leftovers that we are tired of, then I will freeze dry them, but usually it is the fruit or vegetables, and herbs themselves, that go into my freeze dryer..

    A tip to consider: if you mix all of the add-ins together in a separate bowl and then pour that over the meat, it incorporates more easily and thoroughly.

    I always use a sweet & Spicy BBQ sauce in my meatloaf. It’s MY favorite- if someone else is making it, they can use whatever they want. Lol
    I love my homemade freeze dried mashed potatoes. Even for just the two of us.

    My son was having a laugh at my old grater, it looks just like yours and it was in my "glory box" when I was married 51 years ago. The handle broke off it years ago. I have had a new one (at least 20 years old) but it sits in the cupboard and I don't use it as it never seems to grate as well as the old one. I was only thinking this week when I was using it to grate some cheese about it's age and how it is still a useful gadget. I don't know if you guys know that here in Australia when I was younger every young girl had a "glory box" which consisted of towels, sheets, tablecloths, etc and other household necessities, ready to start a home when you get married. Not so usual nowadays as a lot of kids move in together and then sometimes get married. I will try your meatloaf, not something I make very often, hopefully it will be a hit. Love to see your adventures every day.

    Hi Chelsea, just a suggestion if you are renovating the kitchen. A stove fan vented outside is great when peeling and chopping onions. Chop the onions on top of the stove on a cutting board and the fan on high takes all the onion irritation outside. This was a suggestion from my husband and it works every time. Can't wait to see your changes. Good Luck!

      Mine, too, back in 1964, as a newlywed. But as each batch got cooked & canned I was adding a bit more cloves as it didn't taste 'spicy' enough. I didn't realize that the cloves were deadening my taste buds, much like a visit to the dentist.... Needless to say, the last batches had to be diluted out with plain applesauce, in a ratio of about 8 or 10 to one as the amount of cloves tasted poisonous!!

    Ha ha three meatloafs not enough if tasty.
    Might use a mini food processor to dice onions fast. Good to have on hand as best to puree meat.
    (Patty the calf has a beautiful tone of deep brown coat, reddish richness. Also love Freya the pony...her light blonde mane is so cute with chesnut body.)

    You made a meatloaf from a old cookbook that called for rice. Wanted to tell you that rice was added to ground beef to stretch it during the depression era.

    My grandmother use to hang her apple rings on the clothes line in her open front garage to dry tgen would freeze them, so good to eat especially in summer

    I use a 1 cup measuring scoop to portion out "mini" meatloaves. I used to use a muffin pan, but didn't like them sitting in the grease. Using the measuring cup, I get portion control (GREAT for leftovers!) and they still get browned all the way around 😁 I prefer to make about 10 lbs worth at once, then when they are cooked and cooled, I package 6-8 in a vacuum sealed bag & freeze. Then, next time we want meatloaf, I don't have to get my hands in the goop, lol

    Love to watch your videos, very inspiring. Am looking at getting a dehydrator to have things in my pantry even though I am a single senior. I don't always get through my fresh stuff in time so this would reduce the waste and be more cost effective. I used to can apple butter and fruits. Nice to see the old fashioned apple peeler.

    I use my apple peeler/corer from my kitchen aid mixer. Works very well. The meat loaf looks yummy. I have to cook my onions for most recipes to take the bite out of them. The little room that your building…is it just big enough for only a bed? I know you said you will be having a bathhouse. What about meals for people?

    Thank you for explaining why pumpkin butter cannot be canned. Sometimes the canning "rules" seem very arbitrary. Things like chili can be pressure canned without acid but tomatoes still need it.

    I chew minty gum...spearmint, peppermint or winter fresh when chopping onions. Normally its Wrigley's gum. Its definently helpful for your eyes not to burn or water. I'm sure you could use any brand I assume. But, if you're able to get some Wrigley's gum, definitely minty flavored. Than try it. Anyways, every thing looked delicious. I've never put shredded carrots in our meat loaf. But,I love carrots! So, I'm definitely trying out this. Even the oats! Lol. Them Cows though❤ Fern, Patty, Oreo and so on are all just so precious. Beautiful horse and 25 years old. Such a beautiful living you guys have...I know it's hard work. But, it's so sweet. I can't wait to see the new colors of your cabinets and I'm dying to see the the bunkie all finished. And the little cabin of course.😊

    You can home can pumpkin. The pumpkin we home can is not thick like commercial pumpkin so it's not difficult for the heat to penetrate to the middle of the jar. I home canned pumpkin this year. Many Canadians home can pumpkin. It's safe!

      It could be just as thick, it’s hard to say what someone’s pumpkin would be. It depends on how they process it.

      My best friend always freezes it in proportioned packages so they go straight in the recipe.

      In order for you to puree the pumpkin you have to put water in it to get a smooth texture, Otherwise the pulp does not get chopped up if you don't. Prior to using the pumpkin you can line a strainer and strain out the water and the result woud be a thicker texture

    If do air bnb, might be nice to offer menu, you can send up like room service.
    Watched q&a last yr...
    and so heard about Dan's family having done restaurants...his dad may have ideas about doing simple catering on site.
    Also might like to look into a large oven later on, find a brand restaurants know... reliable.
    Noticed a convection oven I'd like to use to make many meals to freeze. Cooking Performance Group FEC-100-E Single Deck. Pricey but people may have other brands to suggest.
    I thought nice investment, like freeze drier...have to know if will use it to capacity...save cooking everyday...just reheat servings if use for individual...easy & quick if warm up later in smaller appliance. Like its 11kw power and cheaper than $10,000 for fancy multichamber ones.
    If fewer meals coming up in few years, still good idea in my opinion...as large cooking can still be frozen or dehydrated ahead for smaller meals.
    ...🏡You all could swap out recently bought stove to kids cabins or somewhere else useful if decide to get easier oven...or set up an insulated and ventilated shed for canning in protected area with open air. Might be good for picnic days on farm...or serving outdoor events.❤

    Chelsea, we've used a White Mountain Apple Peeler/Corer/Slicer since 1964. It's a true work-horse of a kitchen tool. The only difference is that it has a thumbscrew to tighten it in place instead of the current suction fastenings.

    Really interesting content on freeze-dryers. I’m old. Am a life-long cook. Running a stand-up freezer, 24/7 costs more than running a freeze-dryer, I’d suspect. Plus: my stand-up died a few months ago with a crap-load of premium proteins inside. A few days?went by and my floor had water all over. Went immediately to TARGET and bought two, 23 qt. pressure canners. Saved a lot, but now, after getting the preserving “bug”, I’m thinking freeze-drying. Being in the restaurant biz since
    the early ‘70’s, I’ve seen “cryovac”, freezing in water-filled containers (fish especially) ect. Wanting to preserve and not cook, I’ve reverse-engineered some innovative (?) methods of COOKING and, personally think, that freeze-drying, overall, makes the best since. I do think that more liquid in the original product makes for better flavor when rehydrated

    i figure it wouldn't go over so well with some of your kids, but i really like the onion, garlic, basil, and a liiitle bit of crumbled blue cheese in a meatloaf, topped with a bit of tomato paste. finely chopped oil-packed sun-dried tomato is a tasty addition! i'm not much for blue cheese myself, but i like it in this dish.
    also, do you dry apple peels? you can bake or fry them for a tasty crispy snack, or make apple tea!

    You have a busy couple of days as you and your family finishing preparing for the upcoming winter. I was using the same type peeler on Thursday for my boss, she had never made and froze apple pies (we got 8 pies done) and I was to help two others learn how to prepare.

    Over the years I've tricked many, many younguns into eating onions by grating them, they'll never know they're in there until you point it out.
    For younguns that are dealing with a texture issue, you just have to keep grating them until they grow out of it.
    Many, many parents have thanked me for this little trick, but it's actually one that I came up with when I was a youngun and couldn't stand the texture of onions, so I'm glad to pass it on to others.
    We've always used oats in meatloaf, not a fan of breadcrumbs in a meatloaf.
    But using 85% lean beef is a great idea, it doesn't taste near as greasy.
    Making meatballs with your mixture will allow them to cook faster and make portioning a breeze.
    There are so many flavor combinations for meatloaf/meatballs that it would be impossible to list them all.
    One of the favorites around here is a variation on a hamburger steak with bell peppers and onions, add a little shire sauce (worcestershire sauce), a splash of soy sauce, eggs, parsley, dijon mustard and oats, and no doubt they will be requested again and again.
    I make a shire gravy with butter, flour, beef broth, shire sauce (worcestershire sauce), black pepper, a little bit of heavy cream or half and half, and they are good enough for regular family meals or entertaining guests.
    Actually made a pineapple sauce that everybody likes on them meatballs or ladled over the meatloaf with butter, grated onions, flour, pineapple juice, soy sauce, shire sauce, crushed pineapple, salt and pepper - it's killer!!!
    The pineapple version is better oner rice, but the shire gravy version will go well with rice or garlic mashed taters.

    It was really good to hear you talk about alternatives to a freeze drier. I’m doing most other types of preserving but I could never have a freeze drier. I live in a house which couldn’t accommodate one and energy in the UK is very expensive, I have enough produce for other methods of preserving, from an allotment and teeny tiny garden but It wouldn’t justify using a freeze drier. Of course in my dreams I would have a homestead and large garden and be at least 30 years younger and then I could have a freeze drier! I love your channel and appreciate all the work you do.

    I love meatloaf, but I use beef and pork in mine. You really should splurge on an apple peeler/corer/slicer attachment on your kitchenaid mixer. It's less than $100 and you could do those apples in 10 minutes, and they're very nicely done.

    Fern is so beautiful!!!❤ she would make beautiful calf’s. Can’t wait to see what you do to the kitchen. I need to do mine also. My mom would do a ketchup and honey mustard in her meatloaf. Your freeze dried mashed potatoes is made like the U.S instant potatoes.

    I have the same apple peeler, I ought it at the Stokes kitchen store when we had one here. That was about 10 years ago. Sadly we no longer have that store here.
