We had a hard frost, and I forgot to close my high tunnel door the day before. The risk of losing all my tomatoes was really high, but thankfully, they were spared, and we were able to harvest them all. We also harvested our Dills Atlantic Giant pumpkins; one came in at 88lbs! Once we came inside, I made Piccalilli relish with some green tomatoes. I hope you enjoy coming along with me.

I'm headed back to Cyprus soon (from the US) and inspired by you, I'm bringing about 50 packs of seeds of veggies and flowers for my landlord who has a massive garden and who maintains our garden at our house that's the MOST stunning ever with so many kinds of flowers, a koi pond, etc. I hope he likes all his new seeds :)

I'm watching from Bavaria, South Germany, near the Alpes. What fascinates me is that we have nearly the same wheather conditions here. And the vegetion looks similar. I so can feel with you, when you are looking after the destructions the frost has done and the sadness because the wonderful flowers will dead. And the relieve to discover that the main harvest is not destroyed. Here we have been lucky till now, only 3° C at night so far and during the day we go swimming.

When I was growing up we had a big garden. One year an early unexpected frost came in and killed the tomato plants. So my Mom looked up a recipe to use them. She found a wonderful recipe for dilled green tomato pickles which quickly became my all time favorite pickle, and she canned so many wonderful jars of them . I figured out how to make refrigerator pickles with them that taste exactly the same (aka Quickles). Such a wonderful memory, and I am thrilled that I can recreate them. Btw I live in the desert of the USA and its still over 100F here

Great 'end harvest' Chelsea! Here in New Hampshire, we are always getting ready for winter. I enjoy green tomato mincemeat, also in the Ball canning book. You need an automatic door closer for the high tunnel '-) That tunnel is the best for your growing zone. We are zone 4B and I would like one. Growing so much for your large family means you also get some help and that is a blessing. We are still haying today. So late with all the rain.

That huge caggage put me in the mind of my husband's cabbage casserole.

    CABBAGE CASSEROLE
1 HEAD OF CABBAGE COURSELY CHOPPED
    1 ½ LB. GROUND BEEF
    1 ONION, CHOPPED
    1 GREEN PEPPER, CHOPPED
    1 CAN TOMATO SOUP
    1 CAN WATER
    BLACK PEPPER TO TASTE
GRATED PARMESEAN CHEESE TO COVER (GRATED WORKS BEST)
PLACE CABBAGE IN BAKING DISH. BROWN BEEF WITH ONION AND GREEN PEPPER, DRAIN. PLACE BEEF OVER THE CABBAGE. MIX TOMATO SOUP WITH WATER AND BLACK PEPPER AND POUR OVER BEEF AND CABBAGE. COVER WITH FOIL AND BAKE ON 350° FOR 45 MINUTES. REMOVE FOIL AND SPRINKLE PARMESEAN , RETURN TO OVEN BAKE UNCOVERED FOR 15 MINUTES.

If you've never made fried green tomatoes, consider watching Cooking with Brenda Gantt. She does hers differently than I do. I do the traditional sliced ones. She doesn't. I tried her version and like it better than the way I made them in the past. The crunchy part stayed on the tomatoes better. If I'm going to air fry or bake mine, I'll do the traditional way. I hope you like them.

That was the year when we learned to never, EVER grow anything at that age that you are incapable of picking up!😂😅. It was hilarious… here’s these 2 old folks with 3 gorgeous pumpkins that were holding us hostage as we were totally unable to move them anywhere 🎃🎃🎃. We had to find 3 big strapping teenage boys to get them out of the garden…had them put one on our front lawn & gave the other 2 away. Whew! A gardening experience to remember …

Those pumpkins with the frost are still usable and edible, tho. Since they didn't get too damaged. Same this the tomatoes, if they got frosted. You can put them in things like salsa, spaghetti sauce, pizza sauce, meals in a jar, then you don't need to worry about the acid levels especially if you pressure can them for a minimum of 10 minutes.

I used green tomatoes to make that relish this year. Last year I canned sliced green tomatoes to fry during winter, but found I didn't use them.

What a great harvest to end the garden season! It's such a game of chance this time of year guessing how hard the frost will be. For the last three years we planted San Marzano tomatoes and also found they took a long time to ripen on the vine and always succumbed to late blight. This year I decided to try Amish Paste tomatoes and I can't say enough good things about them. We got a huge harvest (still harvesting daily), they're generally much larger than the San Marzanos, ripen beautifully on the vine and despite an inordinate amount of rain this summer, there has been no sign of disease. That was our experience here in north coastal Nova Scotia, zone 6a. You must sleep well at the end of the day, Chelsea, you do so much! Love watching your videos!
