Every day is a school day! ‘We don’t use salt with roast potatoes’ he says. Then he uses Baking Soda! Which is used in the kitchen to soften meat! Where have I been?
I went on holiday to York Jan to the Queens Hotel on the river Ouse, fell in love with York and the people, didn't want to go home but I'm going back end of July and end Nov, best people ever!!! Roasties looked gorgeous, just bought an air fryer today so will try tomorow
Having watched 2 separate chefs from the UK cook roast potatoes now, I finally know why mine never turned out really crispy...it's that roughing up of the edges...I can't wait to try it!
Thanks for the post - I hadn't ever seen the Baking Soda idea before. I normally boil mine in Chicken Stock, then while hot coat in herbs and butter/oil/duck fat mix. I re-use the Chicken Stock to make the gravy from the roast meat. I wonder if the Baking Soda would affect the taste of the stock?

I don’t have an air fryer . So with oil in oven will have to be the way to roast. Can someone please give instructions of how much oil and what oven temperature . Thank You so much. 🙏🏻
A few years ago, I heard an interview between an interviewer and a vegetable farmer in Lincolnshire, UK. The interviewer asked the farmer if it was safe to eat the vegetables with the skins on, or if they should be peeled; The farmer said, ADAMANTLY , that if the Vegetables were British, they MUST be peeled. He didn’t elaborate on why they must be peeled, but he was definite that they must be !
