This is phenomenal! You simply cannot beat the old roast spuds and you give us 3 versions? Thanks mate. I make roast spuds plus parsnips peeld, cut lengthways, boiled 5 minutes and tossed in half flour, half Parmesan s&p, and laid next to spuds in pan. Check them after 25 minutes or so for doneness. Have fun.
i do this with some lime leaves, curry leaves, dried chilies, coriander seeds, garlic, butter. tastes awesome when the garlic kind of roasts dark and sweet

Nah, do all this (par boiling etc), but leave the skins on (Maris Piper or those red skinned Rooster things) ruffle them up with some sea salt and scrape the skins with a fork. Roast potato crackling. I never peel spuds for roasties any more.

When we watch him with much passion of whatever he's cooking...this is why he's my favourite. Some complains they don't agree if he keeps on using his hands while cooking. I was like....goodness....then you're really missing a lot here.
Just made these, mine didn't crisp up at all like in the video. Assuming the issue is that there was a turkey in a bain marie in the oven as well, and the moisture stopped them from turning crispy :( Very sad
I'll try a different baking pan the next time around. And my potatoes were well 'chuffed', sister got a little over excited and had to make her stop before i ended up with mash.
+Shannon H hey, i used the same directions he gave and mine didnt turn out crispy, just turned very hot. what I did was turn the oven up to 500 degrees Fahrenheit and cooked the potatoes for 15-20 mins then giving them a toss and cooked the other side for another 15-20 mins. turned out perfectly crispy and delicious! I also used instead quartered russet potatoes as well, so adjust how long you cook it for depending on the size of the potato!!

Hey Jamie! I've tried doing this five times, even using all the ingredients in their own portions with mine, but they never come out the same! I don't know where I've gone wrong. After double checking and slashing all other possibilities of using the right ingredients and proper temperature, I'm assuming the type of potatoes I've been using has something to do with it. Where I am they don't list the type of potatoes, neither do the grocers know what I'm looking for when I mention Maris Piper potatoes. How do I know what kind of potato is suitable to use assuming not every bag of potatoes I see bear a resemblance to Maris Pipers? On a side note, all past attempts ended up as tasty memories, however for once I'd like to know how the crunch and the browning on the potatoes taste like!

the trick and what makes it the best recipe is squashing the potatoes half way through. My god does it make it a huge difference
