Thank you, Charlie, for showing us your version of roast potatoes. I love roast potatoes. I make them regularly. I like a Yukon potatoes rather than a Russet potatoes, but our local farm grows their own, I will make a point to try theirs. I have never boiled them first, but I used to love our local Greek restaurant's roast potatoes, and they told me they boil them first. I was always afraid I would over boil and they would be too mushy, so now I know, 5 to 8 minutes. Thank you again. I was so pleased to see your video show up in my RUclips feed. (I still make Josie's Mac and Cheese recipe. I love that). But I recently tried a "Southern" (American South) Mac and cheese with eggs and sour cream and heavy cream and cream cheese and thought, it wasn't worth the effort. Simple was better.

I’m making roasted potatoes for Christmas..I use Olive oil with garlic and rosemary but I use small red potatoes (cut in half)and leave the skin on..I just use my hands and coat the potatoes..Rosemary is wonderful to use on potatoes..I agree …don’t make them the day before

I do a similar one but they are really just Jamie Oliver’s Smashed potatoes….par boil potatoes till soft then place on a baking tray and partially flatten with a potato masher, given them all lashings of good olive oil, Maldon sea salt and pepper and roast them on high till really crunchy - they are gold! ❤

I do a similar one but they are really just Jamie Oliver’s Smashed potatoes….par boil potatoes till soft then place on a baking tray and partially flatten with a potato masher, given them all lashings of good olive oil, Maldon sea salt and pepper and roast them on high till really crunchy - they are gold! ❤
