My grandma made these every single year for Christmas. I'm 54 so they have been around a long time. 😂 We love them!!! So folks try these you want regret it at all. If I didn't have grandchildren I would make them and hide in the closet and eat them all!!! 😂 Use ruffles brand chips though. They hold up much much much better. I've tried both.

A lady in our town who rode her horse around town sold baked goods that were delicious. She was also a nurse. Everyone knew her as Miss Catherine. She was in her seventies and baked potato chip cookies that were delicious. I don't remember any flavor morsels being in them. These look so good. Thank you for sharing the recipe

I used to make potato chip cookies all the time...I added chocolate chips and walnuts to mine...sometimes used butterscotch chips instead.

I made potato chip cookies years ago, the kiddies loved them. So different, so good! Just used the plain chips with chocolate mini chips.

I've never heard of these cookies before. We all have kitchen spills - no worries. I've had some real record breaking spills before. I'm thinking caramel would go good because of the salt in the chips. That made a lot of cookies! Yummy and economical! And these days economical is more important than ever with food shortages and crazy high inflation.

My mom would crunch up the chips before measuring them so you could really taste the chips. She did not butterscotch or any other flavor melting chips in them. We loved them. They really tasted like salted potato chips in sweet cookie dough.

I've always wanted to try these. I would use semi-sweet or dark chocolate morsels with the "kettle-cooked" style of potato chips. I like a less sweet chocolate chip cookie and the salty crunch would make them even better!
Have made potato chip cookies for a long time but never used butterscotch chips. The ones I make are basically a butter cookie with potato chips crushed in. They have been around for years.

I used to make Potato Chips Cookies. Everyone loved them. I can't find my recipe, but I do remember using 3 different flavorings. Also , it would set overnight in the refrigerator then bake the next day. It would get up to 4 dozen cookies.
I remember using Butterscotch Chips in mine also. Hope to find my recipe and compare it to yours

My recipe is very similar except: No morsels of any kind! The chips are s the star-only potato chips & pecans. I stop using the machine I love these cookies, along with pecan sandies & oatmeal-rice krispies cookies! I like crispy cookies, like sugar cookies.

I have heard of these, but most recipes call for chocolate chips. Butterscotch sounds interesting. I'd likely do either dark or semi-sweet chocolate chips for a nice contrast.

Yes, you can use baking powder instead of baking soda, but you will need to use about 3 times as much of the baking powder.
