- How to make cookies you can't stop eating! You'd better make a whole bunch of them!
Ingredients:
1. 1 pound-Butter.
2. 1 cup-Sugar.
3. 1 teaspoon-Vanilla Extract.
4. 3 1/2 cups-All-Purpose Flour.
5. 2 cups-Crushed Potato Chips.
6. 1/2 cup-Chopped Pecans.

I love potato chip cookies and definitely prefer kettle chips for extra crunch. I love shortbread so I will be trying this recipe. These cookies look beautiful.

I've loved these cookies since I was a little kid. One of my friend's moms made these while I was over at their house playing. I loved them the moment I tasted them. They're slightly sweet and salty and the recipe I have uses 2 cups of butter so they're like a wonderful soft Scottish shortbread with a salty kick! They bring back wonderful childhood memories of a simpler time. One of my favorites next to "Hello Dollies" or what some people call Seven Layer Bars. I've introduced these wonderful cookies to my nephews and nieces and their children and now they request them whenever we get together for the holidays or a special occasion.

They certainly do not last long! It's so true about how food brings back childhood memories and of simpler times. One of my childhood memories is the excitement of walking up the sidewalk to one of my great aunt's homes. The anticipation of that delicious aroma of potato bread always baking in her oven.....I could hardly wait to sit down at her kitchen table and have a warm slice of her bread with butter on it! We love Hello Dollies too!! I need to do a video of them as well. They are always a hit! Thank you again!!
There is a Polish buffet in Illinois that's been around for decades, and they have homemade potato chop cookies. They are amazing! They didn't have butterscotch chips, or chocolate chips or nuts like in many of the videos I've watched. They were just like a sweet and salty sugar cookie. I cant seem to find a video that does it that way. I assumed these were a Polish thing...???
Could very well be from Poland. They use potato in many dishes. I agree these cookies are delicious 😋. Next time I make them, I am going to make some without the nuts. Thank you for sharing about those cookies at the Polish restaurant. I am sure they go very fast on their buffet. When ever I take them somewhere they disappear very quickly. From my research into the origins of the recipe, they are supposed to be from the 1970's. But the first time I had them was in the late 1960's.
I think they are a Polish cookie...
After checking many recipes these look right to me. I prefer to use kettle fried chips and I hand mix the chips in also. I like the idea of butterscotch chips. Love the salty crunch of the potato chips. Beautiful cookies.

I recall that awful day too very vividly! The cookies were alittle crisper. We shared the cookies and everyone loved them. I am making more this weekend by request for other coworkers and friends. 😊❤
