Bengal gram dal 2 tsp
Jeera 1tsp
Coriander & Fenugreek Seeds 1 tsp
Curry leaves 1 String
Garlic 7 Cloves
Pepper 1 tsp
Red Chillies 4 nos
Turmeric Powder 2 pinches
Asafoetida Powder 2 pinches
Coriander Seeds 50 gms
Desiccated Coconut 100 gms
Udupi Sambar
Oil 2tsp
Mustard & Urad Dal 2 tsp
Red chillies 4 nos

Tomato medium 2
Curry leaves 2 strings
Small onion 20 nos
Pumpkin 1 cup
Drumstick ½ no
Tamarind Powder 1 Cup

Hello. I am from Bangalore. As far as I know, udupi sambar will be red in colour because of the byadagi chillies. No gundu milagai is used. Secondly they don't add garlic.

What's the big deal about garlic no garlic. Sambar is sambar. Who cares about udipi now. This chef had made a twist to this sambar. No body noticed it. He used 2 types of prepared spices that gives a unique taste. I made this sambar and I call it Singapore sambar. Everyone loved it. One person licked his fingers😋😋. The kotta Malli and koparai was a hit. I added the pumpkin no need tomatoes la. Already so nice. Thank you chef. BTW people pls have respect for the all the chefs in RUclips. Don't critisise them. They hv come a long way to be where they are now. If you don't like just buzz off.
NB: I saw another chef using garlic onion generously in another video for udupi. Maybe in the state where this udipi came from has no garlic or onion so people just make do with whatever they had then.

In Udupi sambar they never add garlic,they will use less thurdal add more coconut,tamarinad,jaggery and dhaniaseeds,seasoning will be in coconut oil etc,it is not authentic Udupi sambar

There is some steps missing.. The vegetables are cooked in some spices but not showed
One more thing. Some people add somph (sombu) which gives a different flavour altogether
But soaf changes the taste to some mughalai dish sir

The chilli u used is not byadagi chilli it's regular guntur chilli .

my friend never add garlic to udipi sambhar ,,, she is from udipi region.. i dont think this is authentic udipi sambhar .. they add less tuar dhal .. and little watery consistency with bright red colour is the basic look of udipi sambhar

What garlic in UDUPI sambar? No way garlic is used for either sambar or rasam in UDUPI dishes.
Ennaththai sonnalum , seithu kaattinalum, ethaippoddu saambaar podi seiya vaendum enpathaik kooratha padchathil, ivarathu saambaarai seiyamal andraadam veetil seikira saambaarai saappiduvathey male. Ivarum ivarathu saambaarum , .

Udupi Sambar do not contain Garlic.
