Vegan Chili Ramen Recipe | Spicy Red Broth Noodle Soup!

  • LEARN HOW TO MAKE A BEAUTIFUL RED VEGAN CHILI RAMEN BROTH RECIPE AT HOME
    LAY HO MA!! Winter is tough but a delicious hot bowl of ramen is tougher. What's not to love about ramen? There's a hot comforting soup, different textures, spicy, salty, visually beautiful, and absolutely delicious. Join me in this episode and learn how to make an easy vegan chili ramen recipe right at home. Let's begin
    Ingredients:
    2 pieces garlic
    1 tsp ginger (chopped)
    1/4 cup onion (diced)
    2 large cremini mushrooms
    1/2 cup extra firm tofu cubes
    drizzle toasted sesame oil
    1/2 bok choy
    1/2 cup sake
    1 tbsp gochugaru (Korean pepper powder)
    1 generous tbsp doubanjiang
    2 cups veggie stock
    5g kombu
    140g ramen noodles
    2 tbsp chili oil ( • Most addictive Red Chi... )
    1 tsp black rice vinegar
    1 1/2 tbsp soy sauce
    2 tbsp green onion (chopped)
    1 tbsp roasted peanuts
    1 tbsp chili threads
    1/2 white sesame seeds
    Directions:
    1. Bring a pot of water to boil for the noodles
    2. Finely chop the garlic and ginger. Dice the onion
    3. Thinly slice the mushrooms and cube the tofu
    4. Heat up a sauté pan to medium heat. Add in the sesame oil
    5. Quarter the half bok choy and sauté for a few minutes and then set them aside
    6. Sauté the onions, garlic, and ginger for about 1min
    7. Add in and sauté the mushrooms for another minute. Then, deglaze the pan with the sake (or use veggie stock)
    8. Add in the gochugaru and doubanjiang. Sauté for about 1min
    9. Add in the veggie stock, kombu, and tofu. Cook on medium for about 10min
    10. Cook the ramen noodles to package instructions (in this case 4min). Stir them occasionally to keep them from sticking
    11. Add 1 tbsp chili oil, the soy sauce and rice vinegar into the serving bowl
    12. Drain out the noodles and set aside
    13. When the soup is ready, remove the kombu and save for another recipe
    14. Pour the soup into the serving bowl followed by the noodles and toppings
    15. Garnish with the chopped green onion, crushed peanuts, sesame seeds, chili threads, and another drizzle of chili oil

    I made the curry with udon last week and was really impressed. I decided to make the vegan chili ramen tonight. The chili oil was really fun to make. The ramen was so delicious and easy to make. I never though I could make ramen that tasted this amazing. I am so happy I have found Yeung Man Cooking. Looking forward to purchasing the cookbook.

    I love everything about the feel and ease of these videos. The only thing I need to adapt for is sodium. Asian cooking uses a lot ( not more than American commercial food but I home cook)

    I have never been the kind of person who posts before I make a recipe, saying something looks good...but these recipes are making me break that! My mouth is watering. Definitely in my future for by the weekend. It’s difficult to get Vegan ramen in restaurants, I don’t want to eat in restaurants, and it wouldn’t travel well, so this will be perfection.

    I made this today, with all the ingredients that you mentioned, studied the recipe for two weeks, gathered everything. I did not get the broadbean sauce, I used to Chilli bean sauce instead. I wish I could share the image here.
    My husband had told me if he likes the Ramen he will gift me an authentic Ramen bowl, guess what he gave me 99/100 for this recipe!
    I am going to try all of your Ramen recipes. They look so appetizing, I can't resist myself from making them.

    I was looking for this recipe! Fantastic :) I love this spiciness, not boring but not killer either. Heartwarming is what you can call this ramen, I've adapted it a bit after all these years of your recipes:
    All the toppings are sautéed in the pot beforehand and taken out, then everything continues according to the instructions and at the end the toppings go on top of the ramen in the bowl. It looks even nicer and with shiitake there is also a stronger flavor than with cremini mushrooms :)

    I made this dish this evening. I made some slight alterations, but overall the same ingredients went into it. My wife is very particular with her food but she said this was the best ramen she has ever had! I had been looking forward to making this for a while, so so pleased with how it turned out!     Your cutting techniques are actually correct compared to so many people I see in cooking videos online. Also one of the fewer people I see actually respecting their knives by using the dull side of the knife to scrape the ingredients off of the cutting board.

    I could eat this everyday for a month straight. I just got some black rice vinegar and a huge bag of Szechuan peppercorns from a friend who has a restaurant. Now I know how I can use some black rice vinegar. I have some research to do on how to use all these peppercorns. Thanks Wil!

    I miss the old japanese bowl u used on chili oil ramen that looked really beautiful
    The best thing about wil is he is completely unchanged from less than 10k till now

    I tried this recipe for dinner tonight and it was very delicious. The broth on its own was lip smacking good. Definitely the vegan homemade broth and red chili oil make the dish very delicious. Thanks for sharing another awesome recipe.

    Lovely recipe as usual, Will! However I have one thing to note about the kombu, I saw this too in some other recipes you did. When you boil the kombu you're destroying a large part of the umami that's actually in there, it should not go above 70 C or so. The side effect of boiling is that the flavor of the soup becomes slightly more bitter. A more gentle way to extract the umami from the kombu would be to make a separate dashi by soaking the kombu in cold water overnight, heating it up slowly the next day and kill the heat when the water becomes too hot. Not trying to criticise your methods, just trying to help everyone to get more flavor out of their kombu. ;)

    Thank you! I made this ramen two days ago and I’ll be making it again this weekend. Delicious 💕. I used a Chili oil made by my friend’s mother instead of my own...it’s got a few more aromatics in it (like lemon grass).

    The recipe kills it. I literally went instant in the next Asia shop to buy the ingredients. The dish is vegan, easy and quick to make, delicious, hearty and perfect for winter, full of protein, cheap, you can adjust the variety and amount of vegetables, once you bought the key ingredients you can make it also spontaneous

    Just recently discovered your channel. And just can’t stop watching. Got other family members hooked too lol.
    Tried making stock the way you showed. And it turned out delicious. We finished all of it without saving it for soups or noodles.
    Could you make a vlog in rice. Like which short grain rice to buy, where to buy it from, how to cook it etc etc anything and everything about rice.
    We have tons of Asian stores where we live . And each store carries so many varieties that it is difficult to select.
    I am looking for an everyday rice which most Asians use.
    We have H Mart, 99 ranch , mitsuwa, Zion and many more.
    So once you tell us it will be easy to shop.

      So lovely to hear that ☺️ I will keep that in mind. Personally in my pantry I have sushi, jasmine, brown, ancient black, and basmati rice but yeah there are a lot of brands out there and can get overwhelming that’s for sure

      Thanks wil for the reply . I guess premium short grain rice or sushi rice would be perfect to eat with all those Asian side dishes. A little bit sticky, sweet and dense.

    Made it! It was wonderful. I just had to sub Waianae since I was out of kombucha and didn’t have enough ramen, so had to add some Korean sweet potato noodles. Heavenly! And I did not have to risk exposure to the virus by going to the one restaurant here that even has vegan ramen...and wouldn’t have half th3 taste!

    I made this a couple of days ago, and it was absolutely delicious! I used store bought chili oil that I am still working my way through before I make the I'm sure superior chili oil recipe you linked. The ramen broth was still delicious regardless. Thank you for sharing such a delicious recipe!
