I've used coffee on beef ribs but hadn't thought about using it on pork ribs. Great idea! I'm also going to give the white wine a try as a mop. Thanks!

Ive made a variant of these and my gosh the earthy deep flavour just knocks the ribs out of the water. With an espresso bbq sauce ..mwah chefs kiss! Yours looks legendary. Guess what Im smoking up for the New Year! ❤ Great stuff man!
Can you make a video showing all of your different smokers? I have just started smoking food for about 3 years now and I have an offset an egg a barrel smoker and a Webber kettle It has been fun learning about all the different ways to smoke meat using different types of smokers.
So do pork ribs have a membrane to remove or is that only on beef ribs. You have popped up on my algorithms,I've enjoyed the last to video's, I enjoy your cooking,thanks from the Hoosier State.
I did a rack or St Louis cut on my smoker Saturday, Super Bowl sale so I picked up two more, one the same and a Baby Back rack. Doing the St Louis cut tomorrow. I half size racks for more even cooking on my smaller Coleman/WSM style cooker I use at home. Gonna do half the rack with something based on this recipe, i think I will add some crushed Morita pepper, sea salt and use whatever white wine I have in the fridge as the baste/mop. Let you know how it comes out.
I messed up my rub but its still delicious. Kepper concept I will adjust the rub I made and stick closer to your basic recipe next time. The Morita pepper is great though. I added some OJ, Morita pepper and a dash of rub to the wine. Then mixed the leftover with some honey as the glaze.
@@bbqsouthernstyle I am doing version 2.0 today. A little sea salt on the ribs to dry brine in the fridge. Ground coffee, cloves and black and Morita pepper. White wine baste, honey glaze.

Looks good. I don't believe there was any salt in this recipe. Where does the savory come from and is there any sign of coffee grains on the ribs.
Thank you, it was the coffee, honey and brown sugar that made the sweet and savory and the coffee is fine ground like espresso grade.
I sharpen the edge of my spoon for a gutting spoon.
