    I have been smoking for about 3 years now. And I love what you said about not chopping the he11 out of the finished product. My first time watching your videos. I will watch the rest in a bit.       Thanks for the welcome, it is going well. About an other hour just put the loaded mac & cheese in, and my corn bread also about to go in. I try to smoke everything when I am doing a smoked meal. Except the green salads lol.

      Lol thank you yes, the music had to go! And I needed a camera man to help move forward. Food prep and time need to be in my favor. I am a systems guy, so everything needs a system to run smoothly, efficiently and effectively, although still a work in progress.     That’s a nifty technique with the glad wrap. So basically creates a vacuum that seals the heat and flavours in. When I get my smoker I’m going to give this a shot. Love your content bro, very informative and always watch it while I’m eating something to quell the hunger pangs😂😂 God bless from Fiji 🇫🇯😎👍🤙👊🙏

    Good morning my brother that is an excellent piece of meat The only thing that's missing is two slices of bread so I can make me a pork sandwich😅 I wake up early a lot of mornings and the first thing I do is watch your videos that meat looks so good The only thing I want to do is go downstairs and make me a good old breakfast with some eggs and grits and that pork Yes I do stuff like that😅 another excellent video simple technique to making a beautiful piece of meat for the picnic I enjoyed this one okay I think I'm going back to bed You have a good picnic even though this is a older video I'm sure it was excellent meal thank you for giving me another heads up on how to make it better.......     I 100% agree that if I don't need to spend 12+ hours to get the same result I'm not doing it either.
    I have a Pit Barrel and the fact I din't need to pay close attention to it is big.
    I habe an idea of temperature but don't really care.
    I've commented to you before, I use your brisket technique on my PBC and it's MONEY.

    The smoked pork shoulder meat looks delicious. I was hoping you'd crisp up the sking too but saving it to crisp later (for snacking of course lol) is a great idea. It's also wonderful you feed the cats. The fat will make their fur look healthy and shiny.

    The reason BBQ chop up in North Carolina because if they are cooking whole hog. It’s blend whole hog because of white meat and dark meat. Like your hams your shoulders. So you get a uniform taste!! Because they do mostly sandwiches and plates pig Pickens are different and most people go up to the hog and pull what they want and then afterwards it gets chopped and blended

    Great Channel you stated you like hot and fast would this have turned out much different low & slow. You had beautiful Color. I was wondering about plastic wrap, It's the first time I have seen this done, did great job. Would you do that if you were wrapping ribs. Looking forward to more content.

      Thank you, John and low and slow come out fine if you have 5 more hours of your day to give it lol. It also comes down to developing your personal style of cooking after years of doing it. The plastic wrap is a common trick used in the restaurant industry I am a professional chef. Thanks for watching I hope this helps.

      The guy that fabricated this grill is no longer around. You may want to try a few local welding shops in your area and find a custom builder for they are very heavy and expensive to ship and have to be shipped freight. I hope this helps and thank you for watching sir.

      Yes its a bad problem keeping up lots of grills but I love it lol, just did a grill count the other day. 58 cookers smh and having a custom off set being done now makes 59.
