That’s a nifty technique with the glad wrap. So basically creates a vacuum that seals the heat and flavours in. When I get my smoker I’m going to give this a shot. I 100% agree that if I don't need to spend 12+ hours to get the same result I'm not doing it either. I have a Pit Barrel and the fact I din't need to pay close attention to it is big. I habe an idea of temperature but don't really care. I've commented to you before, I use your brisket technique on my PBC and it's MONEY. Plus, if I din't need to
The smoked pork shoulder meat looks delicious. I was hoping you'd crisp up the sking too but saving it to crisp later (for snacking of course lol) is a great idea. It's also wonderful you feed the cats. The fat will make their fur look healthy and shiny.
The reason BBQ chop up in North Carolina because if they are cooking whole hog. It’s blend whole hog because of white meat and dark meat. Like your hams your shoulders. So you get a uniform taste!! Because they do mostly sandwiches and plates pig Pickens are different and most people go up to the hog and pull what they want and then afterwards it gets chopped and blended

Great Channel you stated you like hot and fast would this have turned out much different low & slow. You had beautiful Color. I was wondering about plastic wrap, It's the first time I have seen this done, did great job. Would you do that if you were wrapping ribs. Looking forward to more content.

The guy that fabricated this grill is no longer around. You may want to try a few local welding shops in your area and find a custom builder for they are very heavy and expensive to ship and have to be shipped freight. I hope this helps and thank you for watching sir.
Yes its a bad problem keeping up lots of grills but I love it lol, just did a grill count the other day. 58 cookers smh and having a custom off set being done now makes 59.
