You're right about it being an old way of doing ribs, you're the first person on RUclips that I seen do ribs the way you're doing them the same way my grandmother did. The only difference she used a gas oven and that was in the early 70s maybe 1973. But I would almost make a wager that if she had a grill she would have done it on the grill lol. My goodness I love that grill that you are cooking on, we grill every weekend rain, sleet, snow or sunshine. I've never seen a grill like that one that you're using but I wish I had one.

…Thank-You for taking the time to take your time when making these videos, nothin seems rushed
I do have a question on the spares, I don’t think I have the experience to tell if they are done through the foil.!If a guy hadda temp them what temp with a therma pen between the bones would be in the ball park?
I think I can handle smoke em till ya got good color then wrap. But when they are done I dunno. I seem to be one of them guys that overcooks everything.
Thanks again for all your help😊

I noticed at the beginning of the video that you did not cut off that thin piece of fat on the back of the rib. A lot of people do cut the thing layer of fat off, however, I noticed at the end of the video when you did the cut, that the cut was very tender, even without cutting off that thin tough layer of fat on the back. Very nice videos by the way. I just subscribed to your channel.
