That's just how I like them, similar to the bite on a Chinese spare rib, but with American style flavors (although I do like asian style too). Great job on the kettle. Knowing what your pit is doing and having that insight makes the job and results so much easier. Seeing people rely on gadgets for me only takes away from a cook as this, using your eyes and knowing the pit and what it's capable of brings it all together. I enjoyed watching, no fanfare, bravado just straight down the road give it to me BBQ. The only thing I pulled exception to was the comment saying this is southern Q and that's how we do it. Not much different here in my northern backyard, I do my ribs the same but on a Santa Maria. Well, I really enjoyed the presentation, could almost taste the cook, it pulled on my BBQ happiness, it was a good ride. I subscribed, how could I not

I’m from Mississippi, I enjoyed watching this so subscribing now. I got the Weber right below the size you have but I don’t have to cook that much food with only 3 of us in the household. I wanna try the way you did your fire and the food looked great.

Hey sir...thank the BBQ Lord's for allowing me to stumble upon your channel. I've just crossed into the rib/chicken level of grilling. Been a sausage/burger/hotdog level guy cause I unconfidenet. Your video has helped me regain confidence that i too grill ribs/chicken. Gonna follow your advice. Much appreciation
