I love the idea of always pickling something when the meat goes on, and then whipping up a quick side while the meat rests. I tend to just tunnel vision on the meat and neglect the sides, so this order of operation will help me immensely!

That roast and onion bread is to die for. I like my meats well done. Your guests are in for a real treat. A bowl of pinto beans with the onion bread and sugar all mixed together and I would be eating good. Excellently done my brother. I opted to square up my roast before the smoke and got the nice slice you plated with bark on all sides. Better to trim off that thin flap before the cook than after. I did follow your method for trimming the silver skin and used a similar rub. Thanks for the vid, never done one of these until today. It was delightful.

Nice - that’s very similar to my direct heat cooker - so it looks like you ran it with no deflector - that’s how I like to run mine as well - bet it smelled great with all those juices dripping on the coals - great cook chef

Great way to buy ribeye, but man that's literally raw lol I'd just cook mine to about 155
Understandable but some would say its spot on or over cooked. A good steak house would disagree, but I do get it lol 132 was the temperature for medium rare. Very simple fix is to get it back over the fire for well-done fans. Hope this helps and thank you for watching.
