I thought i was good. Ive learned so much from this dude. Im strictly a hot n fast direct heat guy now. I had always preferred low n slow. All that is is a waste of time and flavor. If u think about it whats the best smell when bbqing? When the grease hits the fire right..and it mskes since that would taste the best (if cooked right,) now i can use my wsm smokers because that is the perfect setup for hot n fast direct because you have that space between the fire and meat..flavor is wayyyyy more intense because of the drip. No water pan no heat deflector. Just straight direct heat. Hell i cooked a babyback on a little smokey joe and it was perfect a little lower heat directly over the coals

Wow. This looks incredible. You did great. If you want to take the edge off the garlic, you can boil it for 3 minutes first. Or, you can remove "the anima" as we say in Italian or "the soul' of the garlic, which is the center portion of the garlic which tends to make it strong and difficult to digest. I prefer to boil.
