Thank you, sir. The problem with a cooker like yours and all cookers of that size, metal thickness and quality is you will be chasing the fire constantly throughout the entire cook to keep it steady. These cookers are thin and that explains the manufacturers bargain pricing. The fireboxes are not only thin but also small which compounds the problem. If you want good quality results, then you need thick metal. And It doesn't mean you have to spend a lot. There are tons of beautiful cookers on the used market. They might be homemade and not going to win any beaty pageants, but they cook and hold temp and that's what you are looking for. This time it's not the cook but the cooker. I commend you wanting to learn, but my hope for you would be that you give yourself a fair chance with a heavy duty and thick metal, well-built cooker. Look around for a good used smoker lots of people are almost giving them away. I hope this helps and thanks for watching.
